VINEGAR COOKIES
Vinegar and cookies... who knew it was such a delicious combination?! These cookies are lightly sweet and crispy.

Steps:
- 1. Preheat oven to 325 degrees. Cream together, butter and sugar. Add vinegar,soda,flour and nuts. Drop by teaspoon on lightly greased cookie sheet. Bake 18-20 minutes depending on your oven. Don't over bake, remove when light golden color. Cool on wire rack.
- 2. Makes about 2 dozen cookies.

- In a bowl, beat butter and sugar until crumbly, about 2 minutes. Beat in the molasses, egg and vinegar. Combine the flour, ginger, baking soda, cinnamon, cloves and salt; gradually add to the creamed mixture. Cover and refrigerate for 4 hours or until easy to handle (dough will be sticky)., On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with 4 in. cookie cutters dipped in flour. Using a floured spatula, place cookies 1 in. apart on baking sheets coated with cooking spray. Bake at 375° for 5-6 minutes or until set. Remove to wire racks to cool., For icing, combine confectioners' sugar and milk in bowl. Spread over cooled cookies; let dry completely. If desired, combine paste food coloring and a few drops of water; using a fine brush or the blunt end of a wooden skewer, decorate cookies.

OLD FASHIONED MOLASSES COOKIES
A real old fashioned molasses cookie for you to sink your teeth into. These cookies are cut out into circles and each one has a decorative raisin in the middle. To make sour milk, just add 1 teaspoon of vinegar to a cup of milk and let it stand for 5 minutes.

- In a large bowl, cream together the sugar and shortening until smooth. Stir in the molasses and vanilla. Combine the flour, cinnamon, baking soda and salt; stir into the mixture alternately with the sour milk. Cover the dough and chill for at least one hour.
- Preheat the oven to 375 degrees F (190 degrees C).Grease cookie sheets. On a lightly floured surface, roll out about 1/3 of the dough to 1/4 inch in thickness. Cut into circles about 3 inches in diameter using a cookie cutter or drinking glass. Place cookies 2 inches apart onto the prepared cookies sheets. Place a raisin onto the center of each cookie.
- Bake for 8 to 10 minutes in the preheated oven, or until lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

- Using a hand or stand mixer fitted with the paddle attachment, cream together the butter, oil, granulated, and powdered sugar until the mixture is light and fluffy. Add eggs and vanilla; blend well.
- Sprinkle flour, cream of tartar, baking soda, and salt over the dough. Mix on low speed just until combined. Chill dough in the refrigerator for 1-2 hours.
- When ready to bake, preheat oven to 350 degrees F and line baking sheets with parchment or silicone mats. Scoop dough into balls and arrange on the baking sheets. If you prefer a tall, puffy cookie, bake as-is. If you prefer a thinner, more crisp cookie, flatten each slightly with the bottom of a drinking glass.
