Steps:

  • I picked up this tip some time ago, and found it to be a good one. Store your whole, unpeeled onions in a nylon stocking., or cut an old pair of panty hose legs. Put twist ties in between or tie them in a knot, before adding the next onion. I found twist ties a little better, because when I first began doing this, taking an onion out from unknotting it was a pain. When they hang, the knot gets tighter. Twist ties, you can reuse the stocking again..because you might get tempted to cut the stockings inbetween to get them out, if they are knotted...but that's just a suggestion.
  • You can get lots of onion in just one leg of a stocking, because it stretches. Hang them in a basement or somewhere cool and dark.
  • The trick is that the onions are not touching one another. That is the key. If you purchase onions and don't tend to use them up quickly, this is a good way to prolong their life. Take them out of the bag you purchase them in and put in stockings.
  • MORE TIPS FOR PRESERVING FOODS LONGER: read this in an article. Freeze green onions in a plastic bottle. Make sure the green onions are completely dry before storing or they'll get freezer burn. Use a vinegar solution to make your berries last longer. Spray leftover guacamole with cooking spray before putting it back in the fridge. Store potatoes with apples to keep them from sprouting. Add a dab of butter to the cut side of cheese to keep it from drying out. Wrap the crown of a bunch of bananas with plastic wrap. Wrap celery, broccoli, and lettuce in tin foil before storing in the fridge. Keep ginger in the freezer. Keep mushrooms in a paper bag, not a plastic bag

  • Refrigeration. Store sliced onions in the refrigerator inside of a container, or a Ziploc bag. Never store whole or unpeeled onions of any type in the fridge because they will absorb far too much moisture.
  • Cellar. Storing whole unpeeled onions in a cellar or cellar type cool and dark environment will also help preserve them. As long as the cellar type area (including a basement and unheated garages) is cool, dark, dry, and well-ventilated the onions should keep for approximately 8 months.
  • Refrigerated Scallions. Wrap cleaned scallions in a paper towel that is slightly damp and help together with a rubber band or piece of twine. Put them in the crisper inside of the refrigerator, and they will keep for about two weeks.
  • Freezer. Scallions and all other varieties of onion can be chopped into chunks and frozen in an airtight bag or container. When washed and frozen onions should keep for approximately one year in the freezer.
  • Cooked and Refrigerated. Pre-cooking onions so they are ready to use for a meal later in the week can be done without sacrificing quality or much longevity.
  • Pickled. This traditional method of preserving a host of garden vegetables works quite well for onions, as well. The pickling solution will thwart the growth of bacteria that causes food to go rancid.
  • Canning. Onions and other low acid foods must be pressure canned and not water bath canned to deter harmful bacteria and microorganisms that will turn them rancid.
  • Dehydrating. Dehydrating onions and storing them in vacuum sealed bags or Mason jars will keep them shelf stable for years – when stored in a cool, dry, and dark place.
  • Curing. Spread the fresh from the garden onions onto drying racks out of direct sunlight or even the floor of the garage on a day when it is a consistent 75 to 80 degrees F (23 C to ) and is not damp or humid.
  • Caramelize. You can caramelize any varieties of onion, but yellow and red ones tend to turn out the best. Red caramelized onions are often used as both a pizza and salad topping.
