ORANGE BUTTERMILK GELATIN SALAD MOLD
A dear friend shared this recipe with me years ago. Now it's my favorite dish to take to a church meeting, shower or any potluck event-it's always a hit. - In a saucepan, combine pineapple and sugar; bring to a boil, stirring occasionally. When mixture boils, immediately add gelatin and stir until dissolved. Cool slightly. Stir in buttermilk. Chill until partially set. Fold in whipped topping and nuts. If necessary, chill until mixture mounds slightly. Pour into a lightly oiled 8-1/2-cup mold. Chill overnight.

- In a saucepan, bring pineapple to a boil. Remove from the heat; add gelatin and stir to dissolve. Add buttermilk and mix well. Cool to room temperature. Fold in whipped topping. Pour into an 11x7-in. dish. Refrigerate several hours or overnight. Cut into squares.

ORANGE JELLO SALAD
Steps:
- Mix together 4 cups of water, orange jello mix, and vanilla pudding mix in a sauce pan. Bring to a boil, stirring the whole time to keep clumps from forming. Once it starts to boil, remove from heat. Pour into a heat-resistant container (I usually use a glass baking dish), cover with plastic wrap and place in the fridge for about four hours. Remove from fridge and break up the jello into chunks. Place in a large bowl. Add in the pineapple, mandarin oranges, and whipped cream and mix around until everything is combined. Keep refrigerated until you are ready to serve.

I like to make this salad when I have a heavy meal planned. This is light and creamy. Not too sweet. It's a vintage recipe from another Amish friend of mine. Where else? - 1. In saucepan, bring pineapple with juice to a boil. Stir in gelatin until dissolved. Remove from heat; Stir in buttermilk. Cool to room temp. Fold in cool whip. Pour into a 2 qt. (I use 9x9)baking or serving dish. Refrigerate for 4 hours. Cut in squares. serves 9-12.
- 2. NOTE:To make sugar free, use sugar free orange jello and sugar free coolwhip. EASY!

- Mix pineapple and sugar together in a medium saucepan, and bring to a low boil, stirring occasionally. Stir in gelatin until completely dissolved, remove from heat, and cool to room temperature. Add buttermilk, and refrigerate 1 hour, or until partially set.

- Mix the Jello powder with the crushed pineapple and it's juice in a small saucepan.
- Drain the juice from the oranges, and add to the saucepan.
- Bring to a boil and remove from the heat to cool.
- Once cooled, put in a large mixing bowl.
- Add the buttermilk and mix well.
- Fold in the cool whip and pecans.
- Pour into a Jello mold, or bowl.
- Chill in the refrigerator at least 3 hours, or until set.

ORANGE BUTTERMILK JELLO SALAD
This is a favorite from my childhood. I always use orange jello, cause it's the way mom made it. But you could easily substitute other flavors. Very low fat if you use fat free coolwhip. Keeps well for days, and is great to bring for potlucks. Can be made in a pretty jello mold or just in a bowl and scooped with a spoon.

- In a saucepan, mix the jello powder with the pineapple and the pineapple juice from the can the juice, add the drained oranges.Heat over medium high heat. When it just comes to a boil remove from the heat and allow to cool 30 minutes.
- In a large bowl, mix the jello mixture with the buttermilk until well incorporated. Fold in the cool whip and pecans. Pour into a jello mold or just a regular glass or tupperware bowl. Chill at least 2 hours or overnight.
- When ready to serve, unmold onto a plate, or just scoop from the bowl.

- In a bowl, dissolve gelatin in water. Drain pineapple, reserving juice; set pineapple aside. Add enough water to juice to make 1 cup; stir into gelatin. Chill until partially set. Fold in oranges, carrots and pineapple. Pour into a 5-cup serving bowl. Chill until firm.

- Place pineapple with it's juice in the microwave and cook until it boils...about 2 to 2 1/2 minutes in most microwaves. Pour orange gelatin in and mix. Let this cool to room temperature. Whisk in the buttermilk Fold in the whipped topping, mandarin orange segments and the nuts. You can pour this into an 8 cup mold or in a pretty glass serving bowl. Cover and chill for at least 4 hours or overnight is best. This basic recipe can be easily altered by to make different flavors. For example by using cherry gelatin and a cup of chopped maraschino cherries, you can change this to a Cherry Buttermilk Salad.
