ORANGE DREAMSICLE LUSH
Everyone's favorite childhood ice cream treat becomes a sophisticated potluck dessert in this refreshing and creamy lush. Betty Crocker™ sugar cookie mix makes a perfect cookie crust, which gets topped with layers of creamy vanilla pudding, orange Jell-O® gelatin and Cool Whip whipped topping, then garnished with mandarin oranges for added flair. It's guaranteed to be the favorite dessert at any potluck, and we recommend making it in a glass baking dish so everyone can see the pretty layers in its presentation.

- Heat oven to 375°F. Make and bake drop cookies as directed on pouch. Cool completely, about 30 minutes.
- In food processor, process half of the cookies to coarse crumbs. Remove to medium bowl. Continue to process remaining cookies to coarse crumbs; add to bowl. Stir in melted butter until well blended. In ungreased 13x9-inch (3-quart) glass baking dish, press cookie crumb mixture firmly in bottom. Set aside.
- In small bowl, place gelatin, and add boiling water; beat with whisk until blended. Stir occasionally about 2 minutes or until mostly dissolved. In medium bowl, beat dry pudding mixes and milk with whisk about 2 minutes or until thick. Stir in dissolved gelatin. Let stand 5 minutes, stirring occasionally.
- In large bowl, beat cream cheese and powdered sugar with electric mixer on medium speed until smooth, scraping down side of bowl frequently. Beat in 2 cups of the whipped topping. Spread over cookie crust.
- Pour pudding mixture over cream cheese layer; spread evenly over top. Drop remaining whipped topping by spoonfuls over pudding layer; carefully spread until even. Refrigerate 5 hours.
- When ready to serve, sprinkle orange segments on top. Cut into 6 rows by 3 rows. Cover and refrigerate any remaining pieces.

- Heat oven to 350°F. In a small bowl, whisk egg, food coloring, vanilla and orange extract. In large bowl, mix butter and sugar cookie mix until well blended. Then, mix in egg and food coloring mixture. Once soft dough has formed, stir in baking chips.
- On ungreased cookie sheets, drop dough with 1 1/2 tablespoon-size cookie scoop or by rounded tablespoonfuls about 2 inches apart.
- Bake 9 to 10 minutes or just until dough is set (do not overbake). Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely.

- With a sharp knife, score each orange into quarters; remove peel. Use knife to remove white pith from peel and fruit; discard. Quarter oranges and place in a blender. Add peel; cover and process until smooth (mixture should measure 3/4 cup)., In a large bowl, cream shortening and sugar until light and fluffy. Beat in milk and 6 tablespoons orange mixture. Combine the flour, baking powder, baking soda and salt; gradually add to creamed mixture until blended. , Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 10-13 minutes or until set and edges are lightly browned. Remove to wire racks to cool., For frosting, in a small bowl, combine confectioners' sugar, butter and enough of the remaining orange mixture to achieve spreading consistency. Frost cookies.

- 1. Preheat oven to 350 degrees.
- 2. Mix all ingredients until well combined. This will be thick.
- 3. When well mixed drop by teaspoon full on cookie sheet two inches apart.
- 4. Bake at 350 degrees for 10 to 12 minutes or until center comes clean with a toothpick.
- 5. Drizzle with glaze. To make glaze you need: 1/2 stick butter, melted 2 cups powder sugar 1 1/2 teaspoon vanilla extract 3-4 Tablespoons evaporated milk Mix the butter, powder sugar and vanilla, add milk a little at a time until glaze consistancy. Pour into a zip lock baggie. Snip small hole in bottom corner of bag and drizzle over cooled cookies.
