Steps:
- Preheat oven to 400°. In a small bowl, mix the butter, honey and cinnamon. Pour into a greased 13x9-in. baking pan; spread to coat bottom of pan. , In a shallow bowl, whisk the eggs, orange juice and, if desired, salt. Dip both sides of bread in egg mixture. - For the toast: In a medium bowl, whisk the eggs, milk, orange zest, and cinnamon together until smooth. Pour the mixture into a 9-by-13-inch casserole. Add the bread slices in a single layer. Let the bread soak for 10 minutes, turning once.
- For the syrup: Peel the orange and remove the white pith. Using a paring knife, cut along the membrane on both sides of each segment. Free the segments and place in a small saucepan. Add the sugar, water, orange liqueur or orange juice, if using, star anise, and cinnamon stick. Bring the mixture to a boil over medium-high heat, stirring constantly, until the sugar has dissolved. Simmer for 5 minutes. Remove the pan from the heat and allow the syrup to cool, about 20 minutes. Remove the star anise pods and cinnamon stick and discard.
- Preheat a griddle or large nonstick skillet over medium-low heat and add the butter. Using a spatula, remove the bread slices from the egg mixture, allowing any excess liquid to drain. Cook until golden, about 3 minutes each side. Place on 4 serving plates and drizzle with the orange syrup and orange segments. In a small bowl, toss the blueberries and mint together and spoon on top of the French toast. Dust with powdered sugar and serve.
PAIN PERDU
Steps:
- Combine the sliced strawberries, 1 tablespoon of the sugar, and 1 tablespoon of the orange liqueur in a small bowl and set aside.
- Preheat the oven to 250 degrees F.
- In a large bowl, whisk together the eggs, milk, honey, 1 tablespoon of sugar, 2 tablespoons orange liqueur, the vanilla, orange zest, and salt. Slice the bread in 3/4-inch slices. Pour the egg mixture into a large shallow plate and soak a few slices of bread for 4 minutes, turning once.
- Heat 1 tablespoon each of butter and oil in a very large saute pan over medium heat. Take each slice of bread from the egg mixture, dip one side in the toasted almonds, and place in the saute pan, almond side down. (While you're cooking each batch, add more bread to the egg mixture to soak.) Cook for 2 to 3 minutes on each side, until nicely browned. Place the cooked bread on a baking sheet and keep it warm in the oven. Wipe out the pan with a dry paper towel, add more butter and oil, and continue to fry the remaining soaked bread until they're all cooked. Sprinkle with confectioners' sugar and serve hot with the strawberries.

- Break the eggs in a small bowl. Pour in equal parts milk and orange juice, until you reach a desired consistency. Whip these three ingredients together, taking care to break up the whites of the eggs (because they tend to want to stay together). If stale bread is not available, place sliced bread in the toaster (toast allows bread to stay stiff, so it won't fall apart when placed in the liquid egg mixture). Place one piece of the bread into the small bowl and let it soak for a little bit, then flip so that both sides are equally soggy. Place the bread on a heated non-stick skillet. As one piece of bread is cooking on the skillet, soak the next piece in the egg-milk-orange juice mixture. Repeat! It is up to the cook if s/he wants to provide maple syrup or other garnishes. Personally, I like to eat these plain. With the nice and subtle orange flavor, they really don't need anything else!

This is a wonderful treat with easy advance preparation. An elegant breakfast to serve over- night guests. Prep time includes 2 hours chill time. This is a Texas recipe - oranges from the valley, not to mention all the Texas pecan trees. Southwestern U.S.

- Toast: Beat together eggs, juice, milk, sugar, vanilla and nutmeg.
- Arrange bread in a single layer, top with egg mixture.
- Refrigerate 2 hours.
- Melt butter in 10 X 15 X 2 pan, and arrange bread on top.
- Bake at 350 for 20 minutes.
- Sprinkle with pecans, and bake 10 minutes more.
- Orange syrup: Combine syrup ingredients and cook over low heat.
- Do not boil.
- Cool for 10 minutes, and serve warm over hot toast.
ORANGE PECAN FRENCH TOAST
My husband and I were vacationing recently and had this lovely French toast at a bed and breakfast. When we came back home, I kept missing it so I called them up and requested it. They actually gave me the recipe over the phone! I generally halve the recipe for my husband and I, and bake it in an 8 inch square pan. Reheats well in the toaster oven. I served it to my in-laws recently and they loved it. Serve with a little sweetened whipped cream and berries!

- In a small bowl, stir together the brown sugar, melted butter, and corn syrup. Pour into a greased 9x13 inch baking dish, and spread evenly. Sprinkle pecans over the sugar mixture. Arrange the bread slices in the bottom of the dish so they are in a snug single layer.
- In a medium bowl, whisk together the orange zest, orange juice, milk, sugar, cinnamon, vanilla, egg whites, and eggs. Pour this mixture over the bread, pressing on the bread slices to help absorb the liquid. Cover and refrigerate for at least one hour, or overnight.

- Bake for 35 minutes in the preheated oven, until golden brown. Dust with confectioners' sugar before serving.
