Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • Mix together flour, baking powder, baking soda and salt. Stir 1/2 cup orange juice and 1 teaspoon rind into the flour mixture.
  • Cream shortening and white sugar together. Mix egg into the sugar mixture thoroughly. Slowly blend flour mixture into the egg and sugar mixture. Drop by teaspoonful onto greased cookie sheet.
  • Bake for 8 to 10 minutes.
  • Make the icing: Mix confectioner's sugar and 2 tablespoons butter together until smooth. Pour 2 tablespoons orange juice and 1 teaspoon orange rind into the sugar and butter mixture, mix well. When the cookies have cooled spread the icing generously over the tops of the cookies.

On Christmas Day so very long ago, I watched quietly from the living room window for Santa to disappear in his sleigh as the morning dawned clear and brisk. I knew he had come, and even though my parents always laughed off the idea, I *KNEW* he existed. I could peek and see there are a large, brand new spanking "Easy Bake Oven" and I almost passed out from the excitement I could hardly conceal. I ran in my room, and promptly jumped up and down on my bed until the springs creaked with enough noise to wake all the sleeping cats in the house. "He had come! and.....Santa had brought a perfectly sized oven for just me." To be truthful, I shouldn't of even peeked, but I did. The first wonderful treat I made with my oven was the tiniest little cake. My mother and I had worked together to get the ingredients right, and I learned how to put this delightful frosting together, which; to this day I still prepare with the fresh oranges that come at Christmastime. I don't have the "Easy Bake Oven" but I do have the memories.

Creamy Orange Cake image

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with baking spray with flour. In small bowl, mix boiling water and gelatin until gelatin is completely dissolved. Cool slightly, about 5 minutes.
  • In large bowl, beat cake mix, 1/4 cup of the gelatin mixture, 1/4 cup of the orange juice concentrate, the oil, water and egg whites with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan. Reserve remaining gelatin mixture and orange juice concentrate.
  • Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Poke warm cake every inch with fork. Place 1 tablespoon of the reserved gelatin mixture in small microwavable bowl; set aside. Into remaining gelatin mixture, stir remaining 1/2 cup orange juice concentrate; pour slowly over cake. Cool cake completely, about 1 hour.
  • In medium bowl, gently stir together frosting and whipped topping; frost cake. Microwave 1 tablespoon gelatin mixture uncovered on High 10 seconds to liquefy. Using 1/4 teaspoon measuring spoon, place small drops of gelatin mixture over frosting. With spoon or toothpick, swirl gelatin into frosting. Garnish each cake piece with orange peel strips. Store covered in refrigerator.
