BAKED ORANGE-GLAZED CHICKEN

One of my favorite recipes! The combination of paprika and mustard powder really offsets the sweetness of the orange juice. I tend to eyeball when cooking, so if you cook more breasts or use a large pan, make extra sauce to baste with. I'll frequently use extra glaze when baking just so there's plenty to pour over rice once it's done!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk orange juice, vegetable oil, orange zest, paprika, mustard, and salt in a bowl. Arrange chicken breast halves in a baking dish; pour orange juice mixture over chicken.
  • Bake chicken breasts until no longer pink in the center and juices run clear, 30 to 45 minutes, basting with orange glaze every 10 to 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Steps:

  • In a medium bowl, combine thawed orange juice, marjoram, garlic powder and nutmeg.
  • Place frozen chicken in crock pot.
  • Pour orange juice mixture over the chicken.
  • Cook on Low for 6-8 hours, or on High for about 4 hours.
  • When chicken is done, remove to serving platter and cover with aluminum foil.
  • Place covered chicken in a 200 degree oven to keep warm.
  • Mix the cornstarch and water together and stir into the juice crock pot.
  • Turn crock pot to High and cook for 10 to 15 minutes or until sauce thickens.
  • Serve the sauce over the chicken; delicious with brown or white rice.

Steps:

  • Combine thawed orange juice concentrate (not regular orange juice) in bowl with the marjoram, garlic powder and nutmeg.
  • Cut each chicken breast in half to make 6 serving sizes.
  • Dip each piece into the orange juice to coat completely.
  • Place in crock pot. Pour the remaining mixture over the chicken.
  • Cover and cook on low for 7-9 hours, or cook on high for 4 hours.
  • When chicken is done, remove to serving platter. Pour the sauce that remains in crock pot into a saucepan. Mix the cornstarch and water and stir into the juice in pan. Cook over medium heat, stirring constantly until it thickens. Serve the sauce over the chicken.
  • * Garlic is optional.

Steps:

  • Place frozen thighs in the crock pot.
  • Whisk remaining ingredients except broccoli, cornstarch, water and rice together and pour over chicken.
  • Cook on low 4 to 5 hours.
  • If using broccoli, add to crock pot 1 hour before chicken is done.
  • Before serving, remove chicken and broccoli to serving dish and keep warm.
  • Turn crock pot on high.
  • Stir cornstarch into water and add to crock pot.
