ORANGE KANTEN (JAPANESE DESSERT)

This japanese dessert is made with the powdered agar-agar. Kanten is a regular dessert on the New Years Menu and is delicious and healthy.

ORANGE KANTEN (JAPANESE DESSERT) image

Steps:

  • 1. In a medium saucepan, combine water and kanten powder on medium-heat and bring to a boil to dissolve the powder, stirring well.
  • 2. Turn the heat down to low and simmer for about 5 minutes, add in the sugar and turn off the heat.
  • 3. Add in the orange juice and stir well.
  • 4. Place orange slices in individual jelly molds or glass bowls and pour the jelly mixture over the orange slices.
  • 5. Refrigerate until set.

2 tsp kanten (agar-agar) powder
1 1/4 c water
3 Tbsp sugar
1 1/4 c orange juice
1 orange, peeled and sectioned

Japanese kanten is a regular staple on our New Years Menu. It comes in several different flavors. It is almost like jello and has a few health benefit to boot!

CINNAMON KANTEN (JAPANESE DESSERT) image

Steps:

  • 1. Wash the kanten sticks and soak in water for half an hour.
  • 2. Bring to a boil and cook until kanten is dissolved completely.
  • 3. Add sugar, salt, msg and continue cooking
  • 4. When sugar is dissolved, add flavoring and coloring.
  • 5. Remove from heat and strain into a mold or ramekins cups or your choice of a receptacle. Refrigerate.

2 stick white (shiro) or red (aka) kanten (agar-agar)
4 c water
1 c sugar
pinch of salt
1/4 tsp msg, optional
2 to 3 drops of cinnamon
few drops of red or green food coloring

  • Gather all the ingredients. You will need a Nagashikan (6” x 5.1” x 1.8” high (15 cm x 13 cm x 4.5 cm high)) or a similar-sized container lined with plastic wrap.
  • In a small saucepan, add 2 cups (480 ml) of water and 4 gram kanten powder. Whisk to combine and bring it to a boil.
  • Once boiling, lower the heat and cook for 2 minutes. Whisk occasionally and make sure kanten powder has completely dissolved. After 2 minutes, remove from the heat.

  • If you are using gelatin sheets, cut them into thin ½ inch (1.3 cm) strips. Put gelatin (powder/sheets) in a bowl and pour 3 Tbsp hot water. If you are using gelatin sheets, we’ll need to melt the gelatin with a double boiler (Step 3). Please make sure to use a heat resistant bowl that is larger than the opening of the saucepan.
  • Drain the mandarin oranges into a sieve over a bowl or measuring cup. There should be 200 ml (¾ cup + 4 tsp) of syrup. Save the syrup and transfer the oranges to a plate.
  • In a small saucepan, bring roughly ½ cup of water to simmer and place the bowl of gelatin mixture over the saucepan. The steam will immediately warm up the glass bowl and start dissolving the gelatin.
