Steps:

  • In a large bowl, combine the first five ingredients. In another bowl, combine egg, orange juice, water, butter and orange zest. Add to dry ingredients just until combined. Fold in the blueberries. Pour into a greased and floured 8x4-in. loaf pan. , Bake at 350° for 65-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack.

Steps:

  • Stir together flour, baking powder, salt, and nuts.
  • In a large bowl, beat together butter or margarine and 1 cup sugar. Beat in eggs one at a time. Stir in rind and 1/2 cup juice. Pour in flour mixture, and stir until moistened. Turn into a greased 9 x 5 x 3 inch loaf pan.
  • Bake at 350 degrees F (175 degrees C) for 1 hour, or until done. Remove loaf from oven, but not from pan.
  • Combine 1/2 cup orange juice with 1/4 cup sugar in a small saucepan. Heat and stir to dissolve sugar. Spoon glaze over hot loaf. Let stand in pan for 10 minutes before removing loaf to rack to cool.

Orange-Blueberry Marmalade image

Steps:

  • Using a vegetable peeler, remove the zest of the oranges and lemons. Cut the zest pieces into thin slices, then finely chop or grind and set aside. Peel the remaining white part of the peel from the fruit and discard. Chop the fruit pulp, reserving any juice and set aside. Place the zest and 1 1/2 cups water in a medium saucepan over high heat and bring to a boil. Reduce the heat, cover and simmer for 20 minutes, stirring occasionally. Add the reserved fruit pulp and juice, cover and simmer on low heat for an additional 7 minutes. Add the blueberries and simmer for 3 more minutes. Stir the sugar into the fruit in the saucepan. Bring the mixture to a full rolling boil and cook exactly 1 minute, stirring constantly. Stir in the pectin. Remove from the heat and skim off any foam with metal spoon. Serve at room temperature.

Steps:

  • Preheat the oven to 350 degrees F. In a large mixing bowl, cream the butter and both sugars together with an electric mixer. Beat in the eggs, one at a time, then mix in the orange juice, vanilla, and orange zest. Add the flour, baking powder, salt, orange zest, and vanilla and mix together well. Generously butter and flour a 10 inch bundt pan and scoop the batter into it, smoothing the top with a spatula. Bake for 30 to 35 minutes, or until the sides shrink away from the pan and the center of the loaf springs back. Cool the pan on a rack for 10 minutes, then turn out onto a round platter. Sprinkle a little confectioners sugar over the top of the bread and serve warm or at room temperature, accompanied by small pots of cranberry butter.

Just found this recipe on the internet and have not made it yet, but it sure looks different and interesting. Bread is glazed with additional orange marmalade after baking.

Steps:

  • Preheat oven to 350°.
  • In a large bowl, combine flour, baking powder, salt and baking soda.
  • In a separate bowl, mix together 1 1/4 cups of marmalade, egg, oil and orange juice.
  • Add wet ingredients to flour mixture and mix well.
  • Stir in the nuts.
  • Pour into a greased loaf pan and bake at 350° for 50 to 60 minutes.
  • When done, cool briefly, then remove bread from the pan and place on a baking dish.
  • Glaze with the 1/4 cup of reserved marmalade and return to the oven for 1 minute.
  • Place on a rack and cool completely.
  • Bread will slice easier if chilled first.

I have not tried this marmalade. I'm posting this for safe keeping. I found this recipe in Complete Book Of Small Batch Preserves. Blueberries and citrus enhanced with a hint of cinnamon make this marmalade quite unusual. The recipe is adapted from one developed by the Wild Blueberry Producers Association Of Nova Scotia. I plan to use Splenda for the sugar.

Blueberry Orange Marmalade image

Steps:

  • Squeeze juice from orange and lemon, including any pulp. Discard seeds and set juice aside. Slice rinds into very thin slices. Place rinds, water and cinnamon in a large stainless steel or enamel saucepan. Bring to a boil over high heat, reduce heat, cover and boil gently for 25 minutes or until rinds are very tender. Remove and discard cinnamon stick.
  • Add blueberries and reserved juice; return to a boil, cover and boil gently for 10 minutes.
  • Add sugar; bring to a boil and boil rapidly, uncovered, until mixture will form a gel, about 15 minutes, stirring frequently. Remove from the heat.
  • Ladle into sterilized jars and process as directed.

  • Heat oven to 350°F. Grease bottom only of 9x5-inch loaf pan with shortening or cooking spray.
  • In large bowl, stir all bread ingredients except blueberries until blended. Fold in blueberries. Pour into pan.
  • Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; loosen loaf from sides of pan. Remove from pan to cooling rack. Cool completely, about 45 minutes.
  • In small bowl, mix powdered sugar and orange juice until smooth and thin enough to drizzle. Drizzle glaze over bread; sprinkle with additional orange peel.

  • With a sharp paring knife, slice the top and bottom off each orange. Then, cut off the peel and pith in swift downward curves, exposing the pulp. Hold the peeled orange over a bowl to catch any juices and cut out the segments by wedging the knife next to the connective membranes on both sides of each segment. You will need 2 cups of fruit with no pith or membrane attached.
  • Strain out half a cup of the orange segments and set aside. Leave the remaining 1 1/2 cups of the segments with the juice.
  • Combine the sugar with the water in a heavy-bottomed nonreactive saucepan, stirring until the mixture resembles wet sand. Add the vanilla bean and seeds. Using a pastry brush or clean fingers, brush down any stray sugar granules on the sides of the pan to prevent the mixture from crystallizing as it caramelizes.
  • Set the pan over high heat and cook the mixture, undisturbed. When it begins to brown, gently swirl and continue cooking until the sugar turns a deep golden brown, 8 to 10 minutes. Add 1 1/2 cups of the orange segments and all of the reserved juice (be careful; the hot caramel will spatter as you do this). Once the spattering subsides, stir the mixture quickly and continuously with a wooden spoon until the marmalade begins to thicken and the bubbles are thick and glossy, about 8 minutes.
