Apple Orchard Chicken Salad image

Steps:

Grill chicken on an indoor grill coated with cooking spray for 5-7 minutes or until a thermometer reads 179°. Meanwhile, for dressing, combine the apple juice concentrate, oil and yogurt in a jar with a tight-fitting lid; shake well., On four plates, arrange the salad greens, apples, onion, pecans and cheese. Slice chicken; place over salads. Drizzle with dressing. Sprinkle with apple chips.

6 tablespoons thawed apple juice concentrate
1/4 cup canola oil
2 tablespoons vanilla yogurt
8 cups torn mixed salad greens
2 cups chopped apples
1 small red onion, cut into rings
1/2 cup chopped pecans
1/4 cup crumbled Gorgonzola cheese
1 package (2-1/2 ounces) dried apple chips

Steps:

Coarsely chop lettuce.
Squeeze a little lemon juice over apples and pears and toss with greens.
Combine cider, vinegar and sugar in a bowl and whisk in oil in a slow stream.
Pour dressing over salad, season with salt and pepper, toss to combine and coat evenly.
Serve salad with a garnish of sliced sharp cheddar cheese.

1 head red leaf lettuce
1 head green leaf lettuce
1 teaspoon lemon juice
1 crisp red apple, thinly sliced (such as McIntosh or Paula Red)
1 Anjou pear, thinly sliced
2 tablespoons apple cider
2 tablespoons cider vinegar
1 teaspoon sugar
1/3 cup extra virgin olive oil
salt
coarse black pepper
8 ounces sharp cheddar cheese, thinly sliced

COPYCAT SUBWAY® ORCHARD CHICKEN SALAD SUB

I found this recipe when I was looking for this recipe or one close to it. I tried this at Subway and really liked it. Subway always uses light Mayo. In this recipe the salt and pepper are optional. Use more or less mayo to suit your own taste and the same with the fruits. I like to add a few more fruits. There is no cook time unless you are cooking your chicken for this recipe. I use left over or canned.

Copycat Subway® Orchard Chicken Salad Sub image

Steps:

In a medium bowl toss apples, celery, raisins, cranberries and chicken.
Season with celery salt, salt and pepper to taste and mix.
Stir in mayonnaise.
Slice a 6 inch roll in half.
Add 2 heaping tablespoons chicken salad to bottom slice of roll and spread.
Add your toppings.

1/4 cup golden raisin (to your taste)
1/4 cup dried cranberries (to your taste)

Combine ingredients for Maple-Dijon Vinaigrette in a jar with a tight fitting lid or bowl then shake or whisk to combine and refrigerate. Can be done ahead of time.
Warm extra virgin olive oil in a large skillet over medium heat. Add onions then cook until soft and caramelized, 40-50 minutes, stirring occasionally. Turn heat down slightly if they begin to sear or burn. Season with salt then set aside. Can be made ahead of time and added to the salad either warm or cold.
Add spring mix to a large serving bowl then top with caramelized onions, cheese, apples, and granola. Drizzle with Maple-Dijon Vinaigrette then toss and serve.
