BEEF STEW WITH ALMONDS AND DRIED FRUIT
Many stews are thickened with flour, but this hearty one is safe for gluten-intolerant diners.

Steps:
- Preheat oven to 350 degrees. In a large Dutch oven or heavy pot with a tight-fitting lid, heat 1 tablespoon oil over medium-high. Season beef with salt and pepper. In 2 batches, cook beef until browned on all sides, about 5 minutes per batch. Transfer to a plate. To pot, add remaining 1 teaspoon oil, onion, and garlic and cook over medium until onion is translucent, about 6 minutes. Add wine and cook until slightly reduced, about 3 minutes.
- Return beef to pot; stir in broth, bay leaf, parsley sprigs, lemon zest, and 1 1/2 cups water. Bring to a boil. Cover, transfer to oven, and cook 45 minutes. Stir in dried fruit and cook, uncovered, until meat is fork-tender, 35 minutes. Stir in almonds; cook 5 minutes. Remove bay leaf, parsley sprigs, and lemon zest. Serve stew over brown rice and top with chopped parsley.

OREGON BEEF-FRUIT STEW
I found this recipe years ago in a magazine at the check out stand while I was still living in California; long before I knew what an Oregon was! I have always been compelled by unknown forces to serve the beef stew over wide egg noodles. Tossed green salad that include toasted hazelnuts is a requirement, too!

Steps:
- Preheat oven to 325 degrees.
- Heat the oil in a 4 quart Dutch oven over medium-high heat and brown the beef. Add the apple cider and bring to a boil.
- Remove from heat and add the remaining ingredients in layers, *EXCEPT* for the dried fruit.
- Cover Dutch oven and slow roast for 2 to 2 1/2 hours, checking the pot periodically throughout the cooking process to be sure the liquid has not evaporated. Add more apple cider if needed to avoid the meat drying out.
- During the final 20-30 minutes of cooking, add the dried fruit and cook until soft. Remove both lemon slices before serving.
- Taste and adjust seasoning if necessary.

TREO PHEASANT STEW
This stew/soup turned out great. Very similar to the soup we were fed while on the hunt at Treo Ranches in Oregon. Serve this hearty dish with bowls of sour cream, chopped cilantro, olives, green onions, and shredded cheese. Credits to Judy Stevens "TREO Ranches".

Steps:
- Remove all skin and any visible fat before cooking.
- Bring the broth to a boil in a 4 1/2 to 5 quart Dutch oven. Add pheasant, onion, celery, salt, garlic powder and pepper. Cover and cook over medium-low heat for 60 minutes or until pheasant is tender.
- Remove pheasant with slotted spoon. Let cool.
- Add potatoes, carrots, corn, tomato sauce, salsa, undrained chilies, and cilantro to Dutch oven. Cover and cook for 20 minutes until the vegetables are almost tender.
- Cut pheasant from the bones and add to the stew.
- This can be thickened and dumplings put on top for a main dish.
- I use the legs and the thighs of the Pheasant.

INCOMPARABLE BEEF STEW
My Mother In Law gave me this recipe years ago. I believe she got it out of a magazine. It is different than any other beef stew out there. The sour cream and nutmeg give it such a wonderful flavor and the smell as it cooks is indescribable. While I am posting the original recipe, which is AMAZING, I make a few changes for calorie reasons. The original below calls for regular sour cream, I always use light sour cream and it comes out great. I also spray PAM in the oven proof dish, and then add 2 teaspoons of oil rather than use a full 2 Tablespoons of oil and the stew is fine.

Steps:
- Preheat oven to 375 degrees.
- Put oil in oven proof casserole dish or dutch oven.
- Brown Meat in dish. Add onion, garlic, potato and carrots.
- Sprinkle with salt, pepper, nutmeg and flour and bay leaf. Stir to combine.
- Pour in beef broth. Bring to a boil.
- Cover tightly and place in oven. Meat should be tender in an hour, but that depends on what size you cut your beef chunks to. If it is not tender enough, recover and continue to bake another 20-30 minutes longer.
- Once meat is tender, stir in sour cream and serve.
