LOW SUGAR BLACKBERRY COBBLER

This is a great recipe. I tweaked it to make it low sugar by using half sugar and half splenda. When I was a new bride a girlfriend made this for a tupperware party. Low Sugar Blackberry Cobbler image

Steps:

  • 1. sift flour, baking powder, sugar and salt
  • 2. Mix in shortening with large mixing spoon
  • 3. add in milk, blend well ( by hand )
  • 4. In a sprayed 8 x 8 pan, pat down 1/2 of dough in bottom. (I wet my fingertips with cold water to do this. Keeps it from sticking to hands
  • 5. sprinkle sugar coated berries over dough
  • 6. spread remaining dough over berries ( as best as you can )
  • 7. Bake in preheated 450 degree oven for 20 minutes, or more, until golden brown
  • 8. NOTE* I pulled out after 10 minutes to spread out top dough better while warm, and returned to oven
  • 9. mix butter and powdered sugar together in a small bowl
  • 10. when cobbler is golden, smear butter/sugar mixture over the top of cobbler and return to hot oven for another 10 minutes.

1 qt berries mixed with 1/2 cup sugar ( i used 1/4 cup splenda and 1/4 cup sugar)
2 c flour
3 tsp baking powder
2 Tbsp sugar
1 tsp salt
1/2 c shortening
1 c milk
1/4 c butter
1 c confectioners' sugar ( i used 1/2 sugar, 1/2 splenda)

Steps:

  • Preheat oven to 350°. In a large bowl, combine sugar, tapioca and allspice. Add blackberries and orange juice; toss to coat. Let stand for 15 minutes. Spoon into a greased 2-qt. baking dish., In a large bowl, combine flour, 1/3 cup sugar, baking soda and salt. Combine yogurt, milk and butter; stir into dry ingredients until smooth. Spread over the berry mixture. , Bake for 20 minutes; sprinkle with remaining sugar. Bake until golden brown, 25-30 minutes. Serve warm.

Steps:

  • Combine all of the ingredients except the fruit in a bowl.
  • Pour it into an 8x8 pan coated with cooking spray.
  • Add the fruit right on top.
  • The crust will come up over the fruit and cover it.
  • Bake in a 350 degree oven for 40 minutes.

Steps:

  • Preheat oven to 350 and spray a 7"x 9" baking pan.
  • In a medium bowl, mix all ingredients together well, except blackberries and pour into pan.
  • Place blackberries on top of the batter.
  • If using frozen blackberries allow them to partially defrost.
  • Bake 45-50 minutes, or until dark golden brown.

Steps:

  • 1. For Filling: Add berries, sugar, cornstarch, cinnamon, and water to a saucepan. Bring to boil and cook for three minutes. Stir in butter. Pour into a 81/2 x ll baking dish.
  • 2. For Topping: Sift together flour, sugar, baking powder, and salt. Cut in butter until mixture looks like coarse crumbs. Mix together egg and milk then add to flour mixture. Stir until moist. Spoon batter over berry filling.
  • 3. Bake at 400 degrees for 25 minutes.

8 c blackberries
1/2 c sugar
4 Tbsp cornstarch

OREGON BLACKBERRY COBBLER LOWERED FAT & SUGAR

Altered recipe to fit a more healthy diet. It comes from my backyard - we have 20 acres of wild blackberries that grow like wildfire with no water or fertilizer. Only hazards are the thorns! I'm going to try whole wheat flour for my next batch. I found a great cast iron pot to take this from the stove top to the oven and it's great. I found it in an Asian grocery store and it has 2 handles somewhat like a water bucket. It also has an enamel coating. The cobbler, once cut, slipped right out for me in this container.

Steps:

  • 1. pre-heat oven to 350 degrees.
  • 2. melt butter in cast iron pot.
  • 3. mix all ingredients except blackberries in a bowl, set aside.
  • 4. crush berries in a bowl with a potato masher to release juices.
  • 5. put melted butter into ingredients in step 3 and mix well.
  • 6. pour step 5 ingredients back into cast iron pot.
  • 7. pour crushed berries into the middle of the batter - it will sink in until it
  • disappears.
  • 8. cook in oven at 350 for 60 minutes. if you use convection bake, then 55 minutes.
  • 9. can eat cool or hot. after cooling, refrigerate with a top on the pot.
