SPICY SPAGHETTI SAUCE

I appreciate the fact that this hearty pasta sauce is quick to assemble and cooks in just a few hours. My husband and I have our hands full raising two children and 25,000 game birds on our farm.

Spicy Spaghetti Sauce image

Steps:

  • In a Dutch oven, cook the beef and onion over medium heat until meat is no longer pink; drain. Stir in the tomato juice, tomato paste, mushrooms and seasonings; bring to a boil., Reduce heat; simmer, uncovered, for 2-1/2 hours, stirring occasionally. Discard bay leaves. Serve with spaghetti.

1 can (46 ounces) tomato juice
1 can (12 ounces) tomato paste
1 can (4 ounces) mushroom stems and pieces, drained
2 tablespoons minced fresh parsley
1 tablespoon garlic salt

2 teaspoons sugar
2 teaspoons dried oregano
1/4 to 1/2 teaspoon crushed red pepper flakes
3 bay leaves
Hot cooked spaghetti

I do not remember where I got this recipe. We've been cooking this dish at our house for years. It's very easy and delicious and can be adapted for vegetarians by leaving out the meat.

Steps:

  • Brown meat with Garlic.
  • Stir in remaining ingredients.
  • Heat to boiling.
  • Reduce heat and cover.
  • Simmer about 25 minutes.
  • Serve immediately and garnish with Green Onions.

Steps:

  • Preheat oven to 400°F.
  • Cook spaghetti according to directions on package.
  • Grease a 9" pie pan with the vegetable oil.
  • Place drained spaghetti in a bowl with the carrots and squash, and toss to mix, then place evenly in pie pan.
  • Bake uncovered for 15 minutes.
  • Combine all remaining ingredients, and spread the mixture evenly over the pasta.
  • Bake uncovered for 20 minutes (until meat is cooked through).

  • Place a large pot of salted water over high heat to boil. In a separate saucepot, add the ground beef, sausage, onions, and garlic. Brown the meat over medium heat for about 5 minutes, breaking into small pieces with a wooden spoon. Once the meat is cooked and the onions have softened, add the crushed tomatoes, tomato paste, Italian seasoning, and 1 teaspoon salt. Stir and simmer on low.
  • Once the water is boiling, add the pasta and cook according to the package instructions, usually 6-9 minutes. Drain the cooked pasta.
  • Separate out 2 cups of meat sauce and set aside. Add the cooked pasta to the remaining pot of meat sauce. Stir well to coat the pasta. Beat the eggs, then stir them into the spaghetti.
