NORTH ITALIAN MEAT SAUCE (RAGU BOLOGNESE)

This recipe comes from Bologna, Italy. One unusual characteristic of this sauce is that there is no garlic in it--but there is a hint of ground nutmeg. Serve over hot cooked pasta.

North Italian Meat Sauce (Ragu Bolognese) image

Steps:

  • In a large skillet, melt 2 tablespoons butter over medium heat. Add pancetta, onion, carrot, and celery and cook, stirring often, for 10 minutes or until lightly browned. Transfer to a heavy large saucepan.
  • In same skillet, heat olive oil. Cook ground beef and pork over medium heat, stirring to break up any lumps, until browned. Pour in the wine, increase the heat and boil briskly, stirring constantly, until almost all of the liquid has evaporated. Transfer ground meat mixture to the saucepan with the pancetta and vegetables. Set skillet aside.
  • Stir the beef stock and tomato paste into the saucepan. Bring sauce to a boil over high heat, then reduce the heat and simmer, partially covered, for 45 minutes, stirring occasionally.
  • Meanwhile, melt remaining 2 tablespoons of butter over medium-high heat in the original skillet. Add chicken livers and saute for 3 to 4 minutes, or until firm and lightly browned. Remove livers from skillet and dice. Set aside and add to sauce 10 minutes before it is done. A few minutes before serving, stir in the cream and let it heat through. Season sauce with nutmeg, salt, and pepper to taste.

Northern Italian Lasagna is usually a bit different than the Sicilian Lasagna we are accustomed too. No Ricotta cheese in this Lasagna. White sauce is used in place of it, with plenty of Mozzarella. Steps:

  • 1. Heat oven to 350 degree's. Have your meat sauce made ,or make mine as follows. Cook the sausage, chicken, and onion separately, In a sauce pan mix wine,tomato paste,water together to combine. Add the rest of the ingredients. Add in the chicken and sausage. bring to a boil,and reduce to simmer for one hour uncovered.
  • 2. Mix the Parmesan cheese,parsley,and Mozzarella together and set aside,
  • 3. Make the white sauce. Melt butter in saucepan on stove on low. Add the flour and mix well. Add the milk and half and half and nutmeg. Stir constantly while cooking until sauce becomes thick like a heavy cream. Remove from heat.
  • 4. In a 13x9 inch pan spread 1 cup of meat sauce on the bottom.
  • 5. Top with as many Lasagna noodle that will fit. Usually 3-4 will do.. Spread half the White sauce over noodles. Put half the Mozzarella mixture on top of white sauce. Next layer Lasagna noodles, meat sauce, Mozzarella mixture. Next Lasagna, Meat sauce,White sauce,and top with Mozzarella mixture. mixture. Bake at 350 degree's for 45 minutes,or until done.

1 box lasagna noodles, cooked aldente,or ( my homemade spinach lasagna noodles)
NOTE: YOU USE BOTH SAUCES IN THIS LASAGNA. THE MEAT SAUCE AND THE WHITE SAUCE FOR LAYERING.
CHEESE FILLING
2 c mozzarella cheese
1 3/4 c parmesan cheese
1/4 c chopped parsley ,or 3 tablespoons dried parsley
WHITE SAUCE
1/3 c melted butter
1/3 c flour
1 tsp salt
1 dash of nutmeg
1 1/2 c half and half
1 1/2 c milk
NOTE: YOU MAY USE ALL MILK IN PLACE OF THE HALF AND HALF. I FIND THE HALF AND HALF ADDS A RICHER FLAVOR

I grew up in an Italian household with my Grandfather (Carl D'andrea), teaching me from early childhood, his family recipe for 'basic tomato sauce' or marinara (not written down, completely from memory). I know this recipe like the back of my hand, and when I recently found myself with leftover italian sausages, peppers, and onions from italian sausage sandwiches the night before - I decided to 'get creative' with my grandfathers marinara recipe in combination. Awesome flavor, very good over pasta -- enjoy, & as my Grandpa used to say, 'Mangia!' (which means 'EAT' in Italian)...

Red Wine Italian Sausage Pasta Sauce image

Steps:

  • In a large non-stick skillet with a lid, add the olive oil and warm over medium heat, allow oil to heat for approximately 2 minutes.
  • Add chopped onion and green pepper, cook for about 2-3 minutes or until onion is soft and you can see thru it, stir for even cooking.
  • Add chopped/minced garlic, stir and continue to simmer thru for another 2 minutes.
  • Add dry seasonings, chopped tomato, and chopped Italian sausage. Stir all and cook for another 2 minutes then add the ¼-cup dry red wine and stir all together.
  • Add fennel seed & black pepper, cook another 2 minutes longer.
  • Next, add the tomato sauce and water, bay leaves, salt and sugar, stir all and cover with lid, allow to cook on medium until mixture begins to slow boil, then remove lid. Stir again, cover and turn heat to a low simmer, allowing to cook for several hours or until ready to serve with pasta.
  • Allowing sauce to slow cook for at least 2-3 hours makes for a more robust sauce ~ serve with al dente pasta, a good crusty Italian bread (ciabatta for example), freshly grated Italian cheese (a good quality aged Pecorino Romano made from sheeps or goats milk is best, never cows milk), & your favorite red wine (our favorite is a good cabernet).
  • Sauce is also better the next day, so as a time saver make this sauce up a day ahead, allow to cool thoroughly before refrigerating, then serve the next night for dinner.

28 ounces tomato sauce (use a good sauce such as Furmano's)
3/4 cup onions, chopped fine or 1 small onion
3 -4 garlic cloves, chopped or 2 -3 tablespoons store bought minced garlic
1/2 cup green pepper, chopped
1 medium size tomatoes, chopped
3 -4 Italian sausages, pre-cooked and chopped in food processor (sweet or hot, your preference)
1/4 cup extra virgin olive oil
1/4 cup dry red wine (a good one that you will drink)
3/4 cup water

2 -3 tablespoons dried Italian herb seasoning (oregano, basil, parsley, thyme mixture)
2 teaspoons fennel seeds
1/4 teaspoon fresh ground black pepper
1/4 teaspoon kosher salt
1 pinch sugar

Steps:

  • Coat the bottom of a heavy (I use cast-iron) skillet with just enough olive oil to dampen it, and place over high heat with three or four smashed garlic cloves, stirring them around until the garlic starts to sizzle. Then slap in two steaks of your choice and sear them quickly on both sides. Have ready 2/3 cup of leftover dry red wine, and as soon as the steaks are seared, start pouring in the wine, 1/3 cup at a time, turning the steaks periodically and adding more wine, a splash at a time, as the liquid evaporates. It should take about 7 or 8 minutes to use up all the wine, at which point the steaks should be mahogany-brown on the outside and medium-rare in the middle. Move them to a serving plate, and deglaze the pan with a splash of water, stirring over high heat to incorporate the pan drippings and burnt fragments. Discard the garlic, pour the pan juices over the steaks, and serve.
