Steps:
- Fill melon cavity with ouzo and sprinkle with aniseed. Cover and chill 1 day.
- Pour juices from melon into small bowl and reserve. Cut melon into 4 wedges. Transfer to plates and drizzle with reserved juices. Drape prosciutto over melon. Season with pepper. Garnish with mint sprigs and serve.

Steps:
- Scoop out seeds from each melon half. Cut each half into 6 wedges. Remove melon skins. Wrap 1 or 2 slices of prosciutto around each wedge. Secure prosciutto with 4 toothpicks. Cut each wedge into 4 bite-sized pieces. Cover and refrigerate.
- Serve chilled.
- (Can be made 2 to 3 hours ahead of time and chilled. Make sure melon wedges are well wrapped so that they do not dry out.)

Steps:
- Stand the melon on one cut end and slice off the remaining rind.
- Cut the melon in half lengthwise and scoop out the seeds.
- Halve each melon half, so that you have four long wedges. Slice the wedges crosswise about 1/4" thick. Gently toss the melon in a bowl with the lime juice, red pepper flakes, salt and half of the mint.
- Arrange on a platter, drape the prosciutto on top, and drizzle with the olive oil.
- Sprinkle with the remaining mint and serve immediately.
