This is delicious, and I have made it many times since. We have used many types of fish as well as halibut, which I prefer.

Grilled Halibut image

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Stir butter, lemon juice, onion powder, parsley, dill, sugar, salt, and pepper together in a bowl; spread evenly over the halibut steaks.
  • Cook on preheated grill until the fish flakes easily with a fork, 5 to 6 minutes per side.

¾ cup butter, softened
1 tablespoon lemon juice
1 ½ teaspoons onion powder
1 ½ teaspoons dried parsley
¾ teaspoon dried dill weed

OVEN-GRILLED HALIBUT, FLOUNDER, OR SEA BASS

This is a fast and easy method for preparing firm, thick fish fillets. A heavy skillet with a ridged bottom will produce nice grill marks when preheated in the oven. Serve this fish with stir-fried Asian noodles or spaghetti tossed with sautéed bok choy, green onions, and any type of sprouts, seasoned with minced garlic, ginger, rice vinegar, and sesame oil.

Oven-Grilled Halibut, Flounder, or Sea Bass image

Steps:

  • Position the oven racks so that the top rack is 5 to 6 inches from the top of the oven. Coat a ridged cast-iron skillet with nonstick spray and place it in the oven on the top rack. Preheat the oven to convection roast at 500°F.
  • Rub the fish fillets with the vegetable, sesame, and chili oils. Mix the garlic, lemon zest, salt, and pepper and rub both sides of the fillets with the mixture. Place the fish on the preheated skillet and cook until lightly browned, about 3 minutes.
  • Turn the fish over carefully and cook for 5 to 7 more minutes or until the fish flakes easily when tested with a fork but is still moist. Total cooking time is approximately 10 minutes.

1 pound firm fish fillets, such as halibut, flounder, or sea bass (about 4 pieces)
2 tablespoons vegetable oil
1 teaspoon sesame oil
1/4 teaspoon hot chili oil
2 garlic cloves, minced
1 tablespoon freshly grated lemon zest
1/2 teaspoon kosher salt
1/8 teaspoon freshly ground pepper, preferably white

Herb-Roasted Fish image

Steps:

  • Preheat the oven to 400 degrees.
  • Place the fish fillet on a piece of parchment paper and sprinkle it with the salt and pepper. Drizzle the lemon juice and olive oil over the top of the fillet. Lay the thyme on top and place the olives next to the fillet.
  • Beat the egg together with 1 tablespoon of water for an egg wash. Brush the egg wash around the edge of the parchment paper and fold it in half. Carefully fold the edge of the parchment paper under and around the fish to make a package. Place the package on a sheet pan and cook for 12 to 15 minutes, until the fish is cooked through. Serve hot in the parchment paper.

8 ounces boneless fish fillet, such as snapper or cod

MISO-GLAZED FISH

Most recipes for miso-glazed fish are for salmon, because fatty fish are well suited for this preparation and salmon is particularly delicious. Nobu Matsuhisa is known for his miso-marinated black cod, which he marinates for two to three days. I can't imagine finding fish fresh enough to marinate for that long, so in my recipe I marinate the fish for a few hours before broiling and then finishing, if necessary, in the oven. The marinade is based on the Matsuhisa recipe, but I've reduced the sugar considerably.

Miso-Glazed Fish image

Steps:

  • Combine the mirin and sake in the smallest saucepan you have and bring to a boil over high heat. Boil 20 seconds, taking care not to boil off much of the liquid, then turn the heat to low and stir in the miso and the sugar. Whisk over medium heat without letting the mixture boil until the sugar has dissolved. Remove from the heat and whisk in the sesame oil. Allow to cool. Transfer to a wide glass or stainless steel bowl or baking dish.
  • Pat the fish fillets dry and brush or rub on both sides with the marinade, then place them in the baking dish and turn them over a few times in the marinade remaining in the dish. Cover with plastic wrap and marinate for 2 to 3 hours, or for up to a day.
  • Light the broiler or prepare a grill. Line a sheet pan with foil and oil the foil. Tap each fillet against the sides of the bowl or dish so excess marinade will slide off. Place skin side up on the baking sheet if broiling.
  • Place the fish skin side down on the grill, or skin side up under the broiler, about 6 inches from the heat. Broil or grill for 2 to 3 minutes on each side, until the surface browns and blackens in spots. If necessary (this will depend on the thickness of the fillets) finish in a 400-degree oven, for about 5 minutes, until the fish is opaque and can be pulled apart easily with a fork.

  • In a small bowl, combine the first eight ingredients; let stand for 30 minutes. Spread 1 tablespoon herbed butter over each halibut steak., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Steps:

  • Preheat oven to 450F°.
  • In a cup, mix garlic, olive oil, salt, and black pepper.
  • Place fish in a shallow glass or ceramic baking dish.
  • Rub fish with oil mixture.
  • (Optional) Pour wine over fish.
