APPLE-CIDER SABAYON

Sabayon (called zabaglione in Italy) can be served over cake, ice cream, or fruit. Use this recipe when making our Oven-Roasted Apples with Cider Sabayon.

Apple-Cider Sabayon image

Steps:

  • Fill a medium stockpot a quarter of the way full with water. Bring to a boil, then reduce heat and let simmer. Fill a large bowl with ice water; set aside. Combine sugar and egg yolks in bowl of an electric mixer fitted with a paddle attachment, and beat until mixture is pale and has a thick consistency, about 2 to 3 minutes. Scrape down sides of bowl with a rubber spatula one time while beating. Add cider and Calvados, and beat for 2 more minutes.
  • Transfer the yolk mixture to a large metal bowl, and set over simmering water. Whisk together for 6 to 8 minutes, until the sabayon thickens and is fluffy and slightly stiff. The sabayon should begin to look satiny and start sticking to the bowl slightly. The air bubbles will become very fine, instead of large and loose.
  • Set bowl in ice-water bath. Continue whisking sabayon until chilled, about 3 minutes. Whip the cream to medium-stiff peaks, and fold into chilled sabayon. The sabayon can be stored in refrigerator for up to 24 hours.

1/4 cup sugar
4 large egg yolks
3 1/2 cup sparkling apple cider
2 tablespoons Calvados, a French apple brandy (regular brandy can be substituted)
1/4 cup heavy cream (1/2 cup whipped)

OVEN-ROASTED APPLES WITH CIDER SABAYON

Apple halves are set in a vanilla-and-orange-infused caramel and then slowly roasted until soft. Serve them warm with our Apple-Cider Sabayon.

Oven-Roasted Apples with Cider Sabayon image

Steps:

  • Heat the oven to 250 degrees. Place the cut apples, 1 tablespoon sugar, maple syrup, orange zest, lemon zest, lemon juice, bay leaves, vanilla bean, cinnamon, mace, nutmeg, and star anise in a medium mixing bowl. Toss the mixture well to combine.
  • Melt the remaining 1/3 cup sugar in a 12-inch cast-iron skillet over medium-high heat until the sugar has caramelized, about 4 minutes. If the sugar starts to brown unevenly, stir occasionally with a wooden spoon. Add the butter, and cook until melted.
  • Reduce the heat to medium. Carefully place the apple halves, cut side down, into the skillet, and pour the rest of the ingredients from the mixing bowl over the apples. Cook for 4 to 6 minutes, until the apples begin to caramelize and the sauce starts to thicken slightly. Transfer the skillet to the oven, and bake for about 40 minutes. Remove the skillet from the oven and, using a spatula or tongs, carefully turn the apples over. Bake 20 minutes more, until the apples are very tender. Serve immediately with the Apple-Cider Sabayon.

Mutsu or any firm, crisp apples, such as Golden Delicious or Granny Smith, peeled, cut in half lengthwise, and cored
1/3 cup plus 1 tablespoon sugar
1/4 cup maple syrup
Zest of one orange, cut into julienne
Zest of one lemon, cut into julienne
3 tablespoons lemon juice
2 fresh or dried bay leaves
1/2 vanilla bean, split in half lengthwise

APPLE BUTTER IN THE OVEN

I went apple picking and knew I wanted to make apple butter, but I also knew I didn't want to stir it for hours on the stove. I was glad to find recipes for baking it at a low temperature instead. I adapted one I found to make this spiced, not-too-sweet treat! I like it on toast or over oatmeal. Keep refrigerated for a few days, or freeze for later use.

Apple Butter in the Oven image

Steps:

  • Combine apples, apple cider, brown sugar, and salt in a large Dutch oven over medium heat. Add cinnamon, star anise, cloves, and allspice. Bring to a simmer. Cover partially and cook until apples are soft, 20 to 25 minutes.
  • Preheat the oven to 275 degrees F (135 degrees C).
  • Remove whole spices from the pot with a slotted spoon. Reserve cinnamon and star anise; discard cloves and allspice. Puree apples with an immersion blender until smooth. Stir in lemon juice and return cinnamon and star anise to the pot.
  • Bake uncovered in the preheated oven, stirring every 30 minutes, until apple butter thickens and deepens in color, about 3 hours. Let cool completely. Discard cinnamon and star anise before transferring to airtight containers.

Apple Cider Pork Pot Roast image

Steps:

  • Preheat the oven to 325°F (165°C).
  • Season the pork with the salt and pepper.
  • Heat the oil in a large Dutch oven over medium-high heat. Once the oil is hot, add the pork and brown well on all sides, 3 to 4 minutes per side.
  • Remove the pork and add the onion wedges to the pot. Cook for a few minutes, letting them get a little color but being careful not to let them burn.
  • Return the pork to the pot, placing it on the bed of onions. Add the cider and 1 cup (235 ml) water and bring to a simmer, then wedge the apple pieces under the meat among the onions. Toss in the thyme.
  • Cover and transfer to the oven. Cook for 3 hours, or until the meat is fork-tender, shreds easily, and is a deep brown color; the apples will have caramelized.

1 (5-pound; 2.3 kg) boneless pork shoulder (6 pounds; 2.7 kg if bone-in)

Roasted Winter Root Vegetables With Apple Cider image

Steps:

  • Combine the apple cider and wine in a heavy saucepan and reduce to 3/4 cup. This will take about 30 minutes.
  • Whisk in the butter until smooth.
  • Preheat oven to 425°F.
  • Peel all the vegetables and cut in to 1/2 inch pieces.
  • Use the largest roast pan you own (or use two roasting pans and divide the vegetables). Pour the prepared apple cider/wine mixture over the vegetables. Stir to coat.
  • Sprinkle with salt and pepper.
  • Roast the vegetables until they are tender and golden, stirring occasionally and cook approximately 40 minutes.

Steps:

  • In a Dutch oven over medium heat, melt butter and add apples. Cook apples until slightly softened, about 5 minutes. Add cider, bring to a boil, and reduce heat to a simmer. Let simmer, partially covered and stirring occasionally, until soft, about 30 minutes.
  • Preheat oven to 250 degrees. Mash softened apples with a potato masher. Remove from heat and add lemon juice, lemon zest, and cinnamon. Using an immersion blender, puree mixture until smooth.
  • Pour apple mixture evenly into a baking dish. Transfer to oven and bake, stirring occasionally, until thickened and reduced, about 3 to 3 1/2 hours. Let cool before serving. Apple butter may be kept, refrigerated in an airtight container, up to 5 days.

2 tablespoons unsalted butter
