SLOW-ROASTED PORK SHOULDER

- Preheat the oven to 275 degrees F.
- In a food processor, combine the peppercorns, garlic, and cloves and puree. While the motor is running, drizzle in the oil until a paste is formed. Using a rubber spatula, scrape the garlic paste into a small bowl.
- Place the pork butt on a work surface and season all over generously with salt. Rub all over with the garlic paste. Place in an oven-safe roasting bag and close with a twist tie. Place in a large roasting pan, and cook until tender, about 5 hours.
- Remove roast from the oven. Slip the oven-roasting bag off the meat and discard. Transfer the cooking liquid to a medium saucepan. Skim the fat from the cooking liquid with a ladle or de-greaser. Bring to a boil, lower the heat, and simmer to thicken the juices slightly.
- Raise the oven to 400 degrees F. Return the pork, in the roasting pan, to the oven. Continue roasting, basting frequently with the simmering cooking liquid, until well-browned, about 30 minutes. If there is any cooking liquid left, pour it over the pork.
- Remove pork from the oven and let it rest at room temperature for 10 minutes. With the pork drippings you may make a vinegar sauce using this formula: for every 1/2 cup of drippings, whisk with 3 tablespoons vinegar and 1/4 teaspoon salt. Either carve the pork into thin slices, or, using 2 forks, pull into small pieces. Serve with the vinegar sauce on the side.
OVERNIGHT SLOW-ROASTED FENNEL PORK
A number of years back, I was doing some sort of search on my computer and this recipe from Jamie Oliver appeared. It's funny how things like that happen, as I wasn't even looking for a recipe! Anyway, I had decided to make something different for our Christmas meal and decided to give it a try; this dish is put in the oven to cook every Christmas Eve now and has become a bit of a tradition. Thanks, Jamie Oliver... wonderful dish!

- Preheat your oven to maximum temperature.
- Trim the greenery from the fennel bulbs and discard, and roughly chop the bulbs; peel the carrots and roughly chop; peel the onions and roughly chop; separate the bulb of garlic into cloves, leaving skin on cloves and roughly smash.
- Place all the roughly chopped vegetables into a large, covered roasting pan. Separate the bunch of thyme and lay all the sprigs on top; set aside.
- Smash the fennel seeds and salt in a pestle and mortar until fine.
- Score the entire top surface of the pork then pat with olive oil and place on top of chopped vegetables in the roasting pan. Sprinkle all the crushed fennel mixture on the pork using your fingers to massage it into the surface and into the scores.
- Place the prepared roast, uncovered, into the preheated oven and cook until it becomes very fragrant and the meat starts to color, about 20-30 minutes.
- Turn the temperature down to 250 degrees, cover the roasting pan and cook overnight until soft and sticky, 9-12 hours depending on roast size. ADD THE ENTIRE BOTTLE OF WINE TO THE ROASTING PAN FOR THE LAST HOUR OF COOKING TIME.
- Remove from the oven when done and allow to sit covered for an hour before removing the roast from the pan. Place the roast on a platter and cover with foil to keep warm.
- Remove the thyme stems from the roasting pan, then mash the vegetables with a potato masher. Add the chicken stock and slow-boil on the stove top to reduce as desired, for the most amazing sauce to be served with the pork, potatoes, etc.
- Jamie Oliver says you can thicken with flour, if you wish, but I can tell you reducing it a bit on the stove top retains all that wonderful, intense flavor. *** THE SMELL OF THIS COOKING HAS GOT TO BE ONE OF THE BEST I HAVE EVER CREATED IN MY KITCHEN... OVERNIGHT SLOW ROASTED PORK
For that feast you are planning! This makes the most meltingly tender pulled pork. This calls for a whole shoulder, but I have done this with a Boston Butt(with skin on) with good results. From Jamie Oliver.

- Preheat oven to maximum.
- Smash fennel seeds with salt in a mortar and pestle until fine.
- Put the veggies, garlic, and thyme sprigs into a large roasting tray.
- Pat shoulder with olive oil and put on top of the veggies. It is IMPERATIVE that it covers all the veggies, or they will burn, and your sauce will not work.
- If you use a Boston Butt be sure to reduce cooking time!
- Massage with the powdered fennel, rubbing into the scores.
- Put into max heated oven for 20-30 minutes, or until it is beginning to color, then turn down to 250F and cook for 9-12 hours or until you can pull it with a fork (198 internal temp).
- Tip all the wine into the roasting tray and let it cook for another hour until you have a nice thick sauce.
- Remove and let rest for a half hour, before moving to a very large cutting board.
- Mash up the veggies in the tray with a potato masher. Add chicken stock, and boil until you have a nice gravy. You may need to thicken it.
- Serve with braised greens, baked beans and the lovely gravy. Yum!

- 1. Preheat oven to 225 degrees.
- 2. Mix all spices together. Feel free to adjust to your liking. You may also buy a premade 'dry rub' if you prefer.
- 3. Rub all of pork roast with the dry rub and place roast on the rack in a roasting pan and place in oven, uncovered.
- 4. Mix together the BBQ sauce and the vinegar in a bottle or bowl. Set aside by oven.
- 5. Go to bed.
- 6. If you happen to wake up in the middle of the night, you can squirt or brush the roast with the BBQ/vinegar 'mop'. The brown sugar in the rub and the sugar in the sauce will start to make the outside of the roast look REALLY dark as it caramelizes. This is fine and you want that look and crustiness! We usually mop it two to three times during the night as my hubby wakes up a lot. If you don't wake up, don't worry about it, it will still be delicious and crusty.
- 7. After about 10 hours, pull the roast out and see if it is fork tender. If not, let it cook a few more hours or you can turn the heat up to about 350 degrees and check it each hour. It shouldn't need much more.
- 8. After it is done, you can shred it with a fork while it is warm. If you prefer, take the leftover sauce and toss it with the pork. Serve some extra BBQ sauce/vinegar 'mop' on the side for people to add their own. I serve this on large buns with coleslaw but you can do whatever you like with it! Also makes great nachos for the leftovers! Enjoy!
