PACIFIC RIM SALMON

Here's a quicky, easy, tasty grilled salmon recipe that I found in the Daily Herald. Prep time includes marinading time.

Pacific Rim Salmon image

Steps:

  • In a small bowl, combine soy sauce, vinegar, garlic, brown sugar, hoisin sauce, ginger, sesame seeds and lemon pepper.
  • Pour over the salmon in a shallow glass dish.
  • Cover and let marinate for 1 hour in the refrigerator.
  • Before preparing a hot fire, spray grill grate with non-stick cooking spray.
  • Grill the salmon, flesh side down first, directly on the grill grate, for about 5 minutes.
  • Using both a wide metal fish spatula and a grill spatula, carefully turn the fillet over onto the skin side and grill for another 5 minutes, until a milky juice appears on top of the thickest part of the fillet.
  • Serve immediately, sprinkled with the black sesame seeds.

1/2 cup soy sauce
1/2 cup rice vinegar
2 -3 cloves garlic, to your taste,minced
2 tablespoons firmly packed brown sugar
2 tablespoons hoisin sauce
1 teaspoon ground ginger
2 teaspoons sesame seeds, toasted
1/2 teaspoon lemon pepper
2 1/2 lbs salmon fillets, with skin on
2 teaspoons black sesame seeds, toasted for garnish (optional)

Steps:

  • Mix well 1 cup cheese, onions, sour cream, and seasonings. Add potatoes. Place in greased casserole and top with remaining cheese. Sprinkle with paprika. Can be covered and refrigerated overnight. Bake, uncovered, at 350° for 30-40 minutes

Steps:

  • Put potatoes in a steamer basket; set in a saucepan over 1 inch boiling water.
  • Cover tightly and steam until tender when pierced with a fork, about 20 minutes.
  • Spray broiler rack with nonstick spray and preheat broiler.
  • Broil chicken breasts 5 inches from heat, turning frequently, until cooked through, about 10 minutes.
  • Cool 5 minutes and chop coarsely.
  • Cool the potatoes for 5 minutes, then cut in half.
  • Place in large serving bowl with chicken.
  • Add in bean sprouts, peas, radishes, and bell pepper, toss gently.
  • Whisk the vinegar, oil, ginger, soy sauce, and sugar in small bowl.
  • Pour over the veggies, toss again and serve at once or refrigerate for up to 1 day.
  • 5 Points per serving (2 cups).

3/4 lb small red potato (about 1-2 inches in diameter)
1 1/4 lbs boneless skinless chicken breasts
1 1/2 cups bean sprouts (about 6 oz)
1 cup frozen peas, thawed
6 medium radishes, thinly sliced
1 medium red bell pepper, cored, seeded and diced
2 tablespoons rice wine vinegar or 2 tablespoons red wine vinegar
1 tablespoon sesame oil
1 tablespoon ginger, grated peeled fresh
1 1/2 teaspoons reduced sodium soy sauce
1/2 teaspoon sugar

Steps:

  • Boil potatoes in jackets; chill unpeeled. Peel and shred potatoes. In saucepan, melt butter and cheese, using low heat. Add soup, sour cream, onion, and salt; stir. Pour mixture over potatoes and gently stir to blend. Pour into greased baking dish. Bake 45 minutes at 350°.

Steps:

  • Preheat oven to 400ºF.
  • Place a large baking sheet in the oven to get nice and hot.
  • Toss cut potatoes, EVOO, five-spice powder and grill seasoning together in a large bowl.
  • Carefully take the hot baking sheet out of the oven, transfer the potatoes to it and put it back in the oven. Cook until crispy and cooked through making sure to toss around a few times, about 40 minutes.
  • While the potatoes are cooking, mix the hoisin sauce and ketchup together in a small bowl and serve alongside the fries as a dipping sauce. Serve the Pacific Rim Potatoes alongside Hula Joes.
