GARLIC TRUFFLE POTATO WEDGES
These are delicious. I order Truffle fries a lot when I go out to dinner. I love them. The oil is inexpensive. These are roasted Potato wedges with white truffle olive oil,Garlic,Parmesan cheese,and seasoned nicely. This is the version I came up with. Hope you all enjoy them. They are a hit in my home. I'll be making these a lot....

Steps:
- 1. Line a large baking sheet with parchment paper. This way potatoes won't stick while roasting.
- 2. Preheat oven to 450 degree's. Wash potatoes and dry them. Cut each potato in to 8 wedges. Rinse potatoes under cold water and dry them.
- 3. Combine olive oil with the Truffle olive oil. Toss potatoes in the oil,and coat well. Mix the seasoning together and sprinkle on top of oiled potatoes to coat.
- 4. place skin side down on lined pan and bake for about 40-45 minutes until nicely browned and soft. Remove from oven. Sprinkle the chopped garlic on fries and pan. Return to oven for about 5 minutes. You just want to roast the garlic a bit.Remove from oven again.
- 5. Remove from oven. Empty potatoes in to a bowl. Toss with the 2 tablespoons of White truffle oil. Sprinkle and coat with 2 tablespoons of white truffle oil. Sprinkle 1/2 the Parmesan cheese on the potatoes to coat. Return to lined sheet pan and place under broiler for a few minutes until crisp. about 3-5 minutes.
- 6. Remove from oven. Sprinkle with salt and pepper to taste. Top with remaining Parmesan and chopped parsley. Ready to serve!
PAIN PERDU
Steps:
- Stir together the milk and vanilla in a shallow dish. Soak the bread slices in the milk mixture for about 5 minutes, turning once so that they absorb the milk evenly.
- Beat the egg with the sugar and pour onto a plate.
- Heat the butter in a skillet until sizzling. Take the bread from the milk, holding it above the bowl to drain slightly. Dip into the egg mixture to coat both sides, then drop into the sizzling butter and fry until golden brown, about 5 minutes per side.
- At the last minute, sprinkle the tops with a little extra sugar and "broil" with a blowtorch (or place them on a baking sheet under the broiler until the sugar, melts, bubbles and turns golden).
- Divide the bread among serving plates. Serve hot with a scoop of vanilla ice cream and a dribbling of fresh, ripe cherries and blackberries that have been sauteed in butter and sugar and possibly flamed.
THE CLASSIC TRUFFLE AND THE COCONUT TRUFFLE

- For the classic truffle: Boil heavy cream and sugar. In a separate bowl add your finely chopped chocolate. Once cream has been brought up to a boil, pour it slowly over the chocolate while whisking, then add the butter. Once combined, set aside in a cool place, but not in the refrigerator.
- The coconut truffle: Same procedure as above, but add toasted coconut to the mixture.
- For dipping truffles, have some chocolate melting over a double boiler. The water should be simmering and not boiling or you will burn the chocolate. The truffles can be piped onto a sheet of parchment paper in small dollops and chilled slightly or it can be scooped out with a small teaspoon and rolled by hand, or finally use our "Me a Chocolatier kit" small hollow chocolate shells. You can dip in the melted chocolate and/or you can roll in the cocoa powder or toasted coconut.
WHITE TRUFFLES
Steps:
- Place the cream in a heat-proof bowl, and set the bowl over a pan of simmering water. Cook until heated through. Using a wire whisk, slowly stir the white chocolate into the warm cream until completely melted. Whisk in the liqueur and vanilla. Cover and chill for 1 hour or until pliable but firm enough to scoop. Preheat the oven to 350 degrees F. With 2 teaspoons or a 1 1/4-inch ice cream scoop, make dollops of the chocolate mixture and place on a baking sheet lined with parchment paper. Refrigerate for about 15 minutes, until firm enough to roll into rough spheres. Place the chopped hazelnuts on a sheet pan and place them in the oven for 8 minutes. Cool to room temperature. Melt the bittersweet chocolate in a heat-proof bowl, set over a pan of simmering water. Drizzle the melted bittersweet chocolate over 10 of the truffles. Roll the remaining truffles in the chopped nuts. Chill until ready to serve.

PAIN PERDU I
Yes, this is French toast, but a superior one. Unlike normal French toast this batter cooks into a custardy, crispy coating that leaves the bread creamy and oh so good. The use of good egg bread is a must here. Homemade is best, however store bought (such as Hawaiian bread) will work in a pinch.

- Cut the bread and place on a wire rack to dry out a little as you prepare the batter.
- Whisk the egg to blend. Melt 3 tablespoons of the butter in a saucepan or on the stovetop and allow to cool slightly. Whisk the sugar, salt and spices into the egg. When the butter has cooled slightly, slowly drizzle it in to the egg, whisking all the time. A little at a time, add the flour to the egg mixture to make a smooth thick paste. After it is all added, slowly blend in the milk and finally the vanilla. Whisk until just smooth and set aside.
- Heat the remaining butter in a large skillet over medium heat. Dip a slice of the bread in the batter and allow to soak for 30 seconds, no more. Remove from the batter and allow the excess to drip off, back into the bowl. Place the battered slice in the skillet. Repeat with the remaining slices. Cook until golden on one side and then flip to brown the other. Serve immediately--a fresh squeeze of lemon juice and a good dusting of powdered sugar is traditional.

- Cook the pasta in plenty of boiling salted water. Drain.
- Meanwhile, in a large saucepan big enough to hold the cooked pasta easily, melt the butter.
- Stir in the cheese and cream. Add the cooked pasta, toss well and sprinkle with salt and pepper.
- Put into a serving dish and grate the truffle over the pasta or serve the truffle at the table allowing each guest to help himself. Serve additional cheese in a small bowl.
