CABBAGE WEDGES WITH WARM PANCETTA VINAIGRETTE

Make this cabbage dish instead of coleslaw. Not that there's anything wrong with coleslaw and sauerkraut, but cabbage has more potential.

Cabbage Wedges with Warm Pancetta Vinaigrette image

Steps:

  • Start the coals or heat a gas grill for medium direct cooking. Make sure the grates are clean.
  • Discard any discolored outer leaves from the cabbage, cut it into 8 wedges, then trim the stem a bit but leave enough on to keep the wedges together. Brush the cabbage on all sides with 2 tablespoons of the oil.
  • Put the cabbage on the grill directly over the fire, cut side down. Close the lid and cook until the bottom browns, about 5 minutes; turn and cook the other side. Transfer to a platter.
  • While the cabbage is grilling, put the pancetta in a small skillet over medium heat. Cook, stirring occasionally, until it renders its fat and the meat crisps, about 5 minutes. Remove from the heat, add the vinegar and remaining 3 tablespoons oil, and whisk to combine; taste and add some salt and pepper. (You can make the vinaigrette up to a day ahead; refrigerate and gently reheat it before using.) Pour the hot dressing over the cabbage wedges and serve.
  • Variations
  • Cabbage Wedges with Warm Bacon-Cumin Vinaigrette: The classic combination: Substitute diced thick-sliced or slab bacon for the pancetta and add 1 teaspoon cumin seeds along with the vinegar.
  • Cabbage Wedges with Apple Cider-Caraway Vinaigrette: Lose the meat: For the vinaigrette, whisk together 1/2 cup good-quality olive oil, 3 tablespoons cider vinegar, 1 teaspoon caraway seeds, and salt and pepper to taste. No need to heat it up.
  • Ketchup and Soy-Glazed Cabbage Wedges: Sweet and salty: Omit the vinaigrette. Instead of olive oil, brush the cabbage with a mixture of 1 tablespoon each good-quality vegetable oil and sesame oil. Combine 2 tablespoons each ketchup and soy sauce and 1 tablespoon each rice vinegar and minced fresh ginger and whisk until combined. Just before taking the cabbage off the grill, brush the glaze on top, close the lid, and cook for a minute; turn and repeat with the other side.

1 small head red or green cabbage (2 pounds or less)
5 tablespoons good-quality olive oil
4 ounces thickly sliced pancetta, chopped
3 tablespoons sherry vinegar or white wine vinegar
Salt and pepper

REGINETTI WITH SAVOY CABBAGE AND PANCETTA

We're into the ruffles-on-ruffles look you get from using savoy, but green cabbage is great in its place.

Reginetti with Savoy Cabbage and Pancetta image

Steps:

  • Cook pasta in a large pot of boiling salted water, stirring occasionally, until very al dente (pasta will still be opaque and very firm in the center). Drain pasta, reserving 1 1/2 cups pasta cooking liquid.
  • Meanwhile, heat oil in a large skillet over medium and cook pancetta, turning halfway through, until brown and crisp, about 4 minutes. Drain on paper towels.
  • Add cabbage to skillet and cook undisturbed until deeply browned in some spots, about 3 minutes. Toss, then cook undisturbed until deeply browned in other spots, about 2 minutes. Continue to cook and toss until cabbage is charred in some spots and bright green in others and beginning to wilt. Add butter and thyme and cook, tossing, until butter begins to brown, about 2 minutes. Add Parmesan, pasta, and 1 cup pasta cooking liquid and cook, tossing often and adding more cooking liquid to help finish cooking pasta, until pasta is al dente and sauce is thickened and emulsified and coats pasta, about 5 minutes. Add pancetta and toss to combine; taste and season with salt and pepper. Serve topped with poppy seeds.

12 ounces reginetti or other short pasta
Kosher salt
2 tablespoons olive oil
6 ounces thinly sliced pancetta (Italian bacon)
1 small head of savoy cabbage, tough ribs removed, leaves torn
1/4 cup (1/2 stick) unsalted butter, cut into pieces
2 teaspoons fresh thyme leaves
1/2 ounce Parmesan, finely grated (about 1/2 cup)
Freshly ground black pepper
Poppy seeds (for serving)

Pan Seared Salmon with Pancetta Fried Cabbage and Thyme Beurre Blanc Sauce image

Steps:

  • Preheat the oven to 350 degrees F.
  • Season the salmon fillets with salt and pepper. In a large oven-safe saut¿ pan over medium-high heat, coat the bottom of the pan with oil and heat the oil. Pan-sear the seasoned fish, skin-side down, until browned, about 3 to 4 minutes. Transfer the fish to the oven for 10 minutes. In a large, deep saut¿ pan over medium-high heat, cook the pancetta until crisp, stirring frequently. Then add the cabbage into the pan, cover the pan and continue cooking until the cabbage is soft, about 15 minutes.
  • To make the Thyme Beurre Blanc: In a saucepan, combine the white wine, diced shallots, crushed garlic, rosemary, and thyme. Cook until the wine is reduced by 3/4, then strain the wine into another saucepan and gradually whisk in the butter until the sauce is smooth.
  • Serve the salmon fillets over the cabbage and drizzle the beurre blanc over the top.

4 (6-ounce) wild-caught salmon fillets

1/2 pound pancetta, diced

Pancetta or Side Pork Fried Cabbage image

Steps:

  • In a large frying pan, brown pancetta or side pork until lightly browned (about 10 mins.) Add onion to pancetta and stir often until onion is sauteed (about another 10 mins.) Add cole slaw mix and stir often (for about another 10 mins.) until cabbage is totally wilted and done.
  • The cabbage will look like a lot at first but it really cooks down.
  • Add pepper to taste.
  • I have used proportionate amount of bacon for this recipe with excellent results.

  • Heat the oil in a pan and sizzle the pancetta until crispy. Sprinkle over the sugar and splash in the vinegar. Stir the cabbage into the pan, then pour over the stock. Simmer it all for 10 mins until the cabbage is tender but still slightly crunchy.
