PAPAYA ICE CREAM
You can use the ice cream recipe below or just add 4 cups of mashed papaya to your favorite vanilla ice cream recipe mid-way through freezing. Cooking time does not include freezing time. Made for ZWT9. From New Settlement Cookbook.

Steps:
- Combine dry ingredients.
- Gradually add milk, while stirring.
- Cook in double boiler for 10 minutes stirring occasionally.
- Add the egg yolks very gradually while stirring, cooking until it coats the spoon.
- Cool.
- Add cream, egg whites, and vanilla.
- Strain out any lumps.
- Chill according to your ice cream-maker instructions.
- Half-way through chilling, add mashed papaya.
- Finsh chilling per instructions.

PAPAYA FREEZER ICE CREAM
This is a versatile ice cream. You can exchange the papaya with 1 1/2 cups of pureed apricots, peaches or berries.

Steps:
- Halve papayas, scrape out seeds and peel and dice the fruit. Force the diced fruit through a sieve or food mill (or whiz in blender for 30 seconds).
- Mix in the sugar, lemon juice and cream.
- Pour mixture into 8x13-inch pan and freeze quickly with your temperature control turned to it's coldest setting.
- Stir mixture twice during freezing.
- When firm, reduce temperature control to normal setting and allow ice cream to sit in the freezer for an hour before serving.

- Ingredients. One medium sized, fully ripe Papaya. One cup of home-made Cream. One cup of Fresh Milk. One cup of Condensed Milk. We will open the tin and take out one cup when required.
- Cut Papaya. Trim both ends of papaya fruit and cut it in half. Remove any seeds and the white stuff lining inside the fruit with a spoon.
- Scoop Out Fruit. Using a spoon, scoop out the pulp and store in a bowl. You can discard the skin or send it to the compost bin.
- Drain Out Water. If you keep the scooped out pulp in the bowl for some time, the excess water will ooze out, which you can drain out. Beat the pulp with a spoon to break chunks and transfer to a deeper bowl.
- Add Ingredients. Add one cup of milk, one cup of condensed milk and one cup of cream to the fruit pulp in the bowl.
- Deep Freeze and Serve. Keep the bowl with the mixture in the freezer for about 3 hours. After 3 hours, the mix in the bowl will be partially cold. Transfer the Ice Cream to serving dishes and keep in the freezer till well set.

- Add the ingredients to the food processor. Add the thick part of the coconut cream and reserve the liquid. Blend the ingredients in a food processor or high-speed blender until smooth. If the mixture is too thick, add a bit of the reserved liquid from the coconut can until you reach your desired consistency.
- Serve immediately for a soft-serve consistency, or freezer until firmer, approximately 2-4 hours. (If using a loaf pan, place a piece of parchment paper over the surface of the nice cream, then wrap the pan in plastic wrap to prevent ice crystals from forming along the top.)
