BALSAMIC BAKED TILAPIA
Steps:
- Preheat an oven to 350 degrees F (175 degrees C).
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook onion and red pepper in the oil until onion is tender and golden, and peppers are slightly soft, about 10 minutes. Stir balsamic vinegar into the vegetables; season with salt and pepper.
- Rub tilapia filets with 2 teaspoons olive oil and a sprinkle of salt and pepper. Place fillets in a small baking dish, and top with the balsamic onion mixture. Sprinkle fish evenly with blue cheese.
- Bake in preheated oven until fish flakes easily. Serve atop salad greens.

PARANZA MIXED FRIED FISH WITH BALSAMIC VINEGAR
Steps:
- Mix the flour together in a bowl. Clean the squid. Cut the squid into rounds of about one fifth of an inch thick. Carefully and thoroughly wash the sardines, mullet and whitebait. Place all the fish together in cold water and do a final rinse. Drain thoroughly, and coat with the flour mixture. Pour the oil into a pan and heat it. When the oil is hot, place the fish into the pan and fry until crisp and brown. Using a slotted spoon, transfer fish to paper towels to drain. Right before serving, sprinkle with pearls of Prelibato, our white balsamic vinegar.
BALSAMIC TILAPIA
This is a great way to make Tilapia with a twist. Easy, flavorful and good for you, it's different than the usual broiled, baked or fried Tilapia I usually have. Ingredients needed are minimal - I made it up with what I had on hand and it turned out beautifully. My husband loved it and he isn't much of a fish eater.

Steps:
- Add 1 tbs. olive oil to small saute pan.
- Add onions and cook until tender.
- Add tomatoes to onion and let cook until tomatoes begin to lose their shape.
- Turn heat to medium/low and add 2 tbs. balsamic vinegar to onion and tomato mixture. Stir and let simmer while you prepare the fish.
- Coat a large frying or saute pan with olive oil over medium heat.
- Season fillets with salt and pepper then add to pan. The fish will cook very quickly. Try to flip only once. The fish is done when it begins to flake easily - in about 4-5 minutes total.
- To serve, plate fish and spoon the tomato/onion mixture over the fish - about 1/4 cup per fillet. Serve immediately.
MIXED FRUIT SALSA

I was recently introduced to monkfish (sold as "monkfish tail" in fish markets) and it has become a new favorite of mine. It's often called "poor man's lobster" because its firm flesh and delicate, slightly sweet flavor are similar to lobster. Served with a balsamic, garlic, and sun-dried tomato topping, this recipe comes together in a snap.

- Combine sun-dried tomatoes, 2 tablespoons olive oil, balsamic vinegar, tomato oil, garlic, and sugar in a small bowl. Toss to coat and set aside.
- Use a sharp knife to cut the purple translucent membrane away from each fillet. Cut each fillet crosswise into 3 to 4 pieces. Season with salt and pepper.
- Heat 1 tablespoon olive oil and butter in a large skillet over medium-high heat. Sear monkfish until golden brown, about 3 minutes. Flip and continue cooking until opaque throughout, 2 to 3 minutes more. Reduce heat to low, remove fish to a plate, and cover with aluminum foil to keep warm.
- Pour sun-dried tomato mixture into the skillet and quickly stir around the pan until just warmed, about 20 seconds. Spoon topping over fish and garnish with parsley.

- Working in small batches, dredge the squid into the flour and toss to coat. Place the squid in a fine-mesh sieve and gently shake away any excess flour. Fry the squid, one scant layer at a time, until lightly golden and crispy, about 1 1/2 to 2 minutes. Using a wire skimmer, transfer the squid to a paper towel lined plate to drain while you prepare the remaining squid.
