- In a large skillet, saute onions in butter until softened. Add garlic powder and salt. Reduce heat to medium-low; cook, stirring occasionally, until deep golden brown, 25-30 minutes., Meanwhile, cook pasta shells according to package directions. Drain pasta; set aside., Stir the broth, sherry, thyme and pepper into onions. Bring to a boil; cook until liquid is almost evaporated. Remove from the heat. Stir in sweet potatoes and Gorgonzola cheese., Spoon into shells; place in a greased 11x7-in. baking dish., Sprinkle with Parmesan cheese. Cover and bake at 375° for 10-15 minutes or until heated through. Sprinkle with parsley. Serve with gravy.

- Bring a large pot of lightly salted water to a boil. Cook fusilli in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
- In the meantime, melt butter in a skillet over medium heat and cook shallots until soft and translucent, 3 to 5 minutes. Pour in cream and cook until heated through, 3 to 5 minutes. Add spinach and crumble in Gorgonzola cheese. Season with salt and pepper and cook until spinach is wilted and sauce has thickened, about 4 minutes.
- Drain fusilli and toss with sauce. Serve immediately.

- Bring a large pot of lightly salted water to a boil.
- Add pasta, and cook for 8 to 10 minutes or until al dente; drain.
- Heat oil in a large skillet over medium high heat.
- Saute onions until golden brown, about 10 minutes.
- Stir in garlic, and cook for 2 minutes.
- Remove from heat, and stir in balsamic vinegar.
- In a large bowl, combine pasta, onion mixture, and Gorgonzola.
- Toss until evenly coated, and cheese is melted.
LITTLE ONION TARTS WITH GORGONZOLA AND WALNUTS

Caramelized onions and Gorgonzola on buttery pastry rounds, topped with walnuts and sprinkled with rosemary - what's not to love? Perfect with drinks, they reheat beautifully, too.

- Make the pastry: Put flour and salt in a mixing bowl. Add half the butter and work it into the flour until it resembles damp sand. Add the rest of the butter cubes, the ice water and lemon juice and mix just until the dough comes together. (There will be little chunks of butter in the dough - this makes the pastry flaky.) Form dough into a disk shape, wrap in plastic and flatten to a 1-inch thickness. Refrigerate for at least an hour, or up to a day in advance.
- Make the topping: Put olive oil in a cast-iron skillet over medium-high heat. Add onions and brown for about 5 minutes, stirring. Season generously with salt and pepper. Turn heat to medium and cook until onions are soft and well browned, about 10 minutes. Let cool to room temperature. Heat oven to 425 degrees.
- Roll out pastry to about 1/8 inch thickness. Using a cookie cutter or a glass, cut out 2-inch rounds and move them to a plate. Once you've filled the plate, transfer to the refrigerator. Reroll the scraps and continue to cut rounds, chilling as you go. You should have 24 pieces.
- Line 2 baking pans with parchment and lay 12 pastry rounds on each. Put about 1 tablespoon of the caramelized onions on each round, followed by a piece of Gorgonzola. Top each with walnut pieces. Sprinkle with a small pinch of chopped rosemary.
- Transfer to oven; bake for 10 to 15 minutes, until lightly browned. Sprinkle each tart with chives, and a speck of fleur de sel, if using. Serve warm or at room temperature.

- Heat the oil in a large frying pan. Add the onions, thyme and some seasoning. Sauté for 10 mins until softened, then add the chilli flakes, vinegar, sugar and stock. Increase the heat and cook for another 10 mins.

- Cut the ends off the onions, remove outer skin, cut in half, and then slice thinly from end to end. Add onions and garlic to the oil and stir to coat in oil. Reduce the heat to medium low and allow the onions and garlic to cook, barely sizzling and stirring every 5-10 minutes. The onions and garlic are done when they are soft and golden, 40-60 minutes. Do not allow the garlic to burn. If things are browning too quickly reduce the heat slightly.
- Meanwhile, bring a large pot of water to a boil and cook rigatoni according to package directions. Just before you drain the pasta, reserve 1/2 cup of the pasta water. Drain the pasta and return it to the pot.
- Once the onions are completely caramelized, add 1/4 cup of the reserved pasta water to the pan, scraping up all the browned bits on the bottom of the pan. Stir until the onions have almost completely absorbed the water and add the gorgonzola cheese. Stir for about a minute or until the cheese just begins to melt. If the mixture looks dry at all you can add a bit more pasta water. Transfer the entire mixture to the pot with the pasta making sure to get all the oil and any browned bits off the bottom of the pan. Stir thoroughly to coat the pasta with the cheese, onions, and garlic. Season to taste with salt and pepper.
