MAMA'S YEAST ROLLS

This recipe has been handed down in my family for several generations. I'm not sure which of the ancestors actually originated it, but I know my grandmother used it and made the absolute best rolls in the world. My grandfather wouldn''t eat store bought bread because it wasn't as good as "Mama's" bread.

Mama's Yeast Rolls image

Steps:

  • Place water in large bowl.
  • add yeast.
  • stir in sugar, oil, salt, and 4 cups flour.
  • Beat well with electric mixer at med to high speed.
  • Stir in the last 2 cups of flour 1/4 cup at a time until the dough pulls away from the sides of the bowl and is soft and elastic.
  • Turn out on floured board and knead for 5 to 10 minute.
  • Transfer to greased bowl, cover and place in warm, draft-free area.
  • Allow to rise to double.
  • Punch down and turn out on floured board.
  • Knead to remove most of the air bubbles.
  • Pinch off approx 2 inch diameter pieces.
  • Place in greased pan.
  • When all rolls made, brush with oil or butter.
  • Allow to rise to double.
  • Bake in hot (425) oven until golden brown.
  • Remove from pans and cool on wire rack or serve while still warm.
  • May be frozen after baking.

2 cups very warm water
2 (1/4 ounce) packages fast rising yeast
1/2 cup sugar
1/2 cup vegetable oil
1 tablespoon salt
4 cups all-purpose flour, plus
2 cups all-purpose flour (additional)

Steps:

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine sugar, egg, oil, salt, yeast mixture and 4 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a stiff dough., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch down dough. Turn onto a lightly floured surface; divide into four portions. Divide and shape each portion into 12 balls. Roll each ball into an 8-in. rope; tie into a loose knot. Tuck ends under. Place 2 in. apart on greased baking sheets. Cover; let rise in a warm place until doubled, about 30 minutes. Preheat oven to 350°., Bake 15-20 minutes or until golden brown. Remove from pans to wire racks.

Steps:

  • 1. In a large bowl or a stand mixer add warm water, yeast and sugar. Let stand for 5 minutes. Add the beaten eggs. Now add the flour and salt. Mix together. This dough will be sticky.
  • 2. On a lightly floured board dump out your dough and knead it until it is smooth and elastic. This dough should stay slightly sticky. Don't add more than 1/4 cup of flour while kneading. Put the dough into a greased bowl and coat the dough ball throughly with the oil. Cover with a towel and set in a warm place to rise until double in size about 1 1/2 hours. When dough has doubled punch it own, knead lightly and divide into 16 even pieces. I do this with a knife, I cut the dough ball in half, then in half again and again until I have 16 pieces. Roll these into balls and place on a well greased baking sheet, turning the rolls over in the pan until they are cover with the oil. Put them in a warm place to raise until double in size. This takes about an hour.
  • 3. Pre- heat the oven to 375 degrees, bake the rolls for 15-20 minutes or until they are brown. Brush with butter as soon as you take them out of the oven. REFRIGERATED METHOD , make the dough but don't let it rise. Put the dough into a greased bowl and coat all sides, cover tightly with plastic wrap. You can keep the dough in the refrigerator for up to a week. Remove from the fridge when your ready to make the rolls. Let it sit on the counter for 20 minutes before working it into rolls. Let rise until doubled, this may take up to 2 hours or you can speed it up by putting it in the oven with a pan of hot water.

Steps:

  • 1. In a large mixing bowl, proof yeast in the 1/2 cup lukewarm water, with half the sugar dissolved in it.
  • 2. In a 2-cup measuring cup, heat the milk and butter together until the butter is melted.
  • 3. When the yeast is bubbly, add 1 cup flour and beat well.
  • 4. Then add eggs, salt, and another cup flour. Beat well.
  • 5. Last, add the warm milk and butter, remaining sugar, then 3 cups flour and mix by hand; gradually adding another cup of flour.
  • 6. Turn out onto silicone mat or floured surface and knead until you have worked in the flour.
  • 7. Work until the dough is only slightly sticky.
  • 8. Set in a warmed oven covered by a tea towel, to rise.
  • 9. When the dough is doubled in size, remove from oven.
  • 10. Using two 9x13" pans, form dough into dinner roll shapes and place dough into the pans (20 per pan).
  • 11. When rolls have doubled in size, bake in a 375 F preheated oven for 13- 15 min.
  • 12. When out of the oven, brush with melted butter.

Steps:

  • Melt margarine in hot water. Add sugar and salt and stir. Add cold water and yeast. Stir to dissolve yeast.
  • Add 3 cups flour and mix. Add eggs and 2 1/2 - 3 cups more flour. Mix, cover and let rise until dough doubles in size.
  • Punch down and let rise 30 more minutes or until doubles.
  • Make walnut size balls of dough. Place about 2 inches apart in well-buttered 9 x 13 inch pan. Bake in a preheated 350 degrees F (175 degrees C) oven for 30-45 minutes. Brush top of rolls with margarine while hot.

GRANDMA'S OLD-FASHIONED YEAST ROLLS

This recipe is one of our family traditions. We don't know how old it is, but it is at least Depression Era (no milk, no eggs). It was handed down from my Grandma Pearl Nash. She never wrote down the recipe, always measured by memory and her hands. She developed breast cancer in the early 60's and shortly before she died. My Daddy asked her to measure out all the ingredients so the recipe would not be lost. He carried her into the kitchen, where she carefully placed the ingredients on newsprint paper. My mama (who my kids called Tutu) shifted the ingredients into measuring cups and spoons to record the amounts.

Grandma's Old-Fashioned Yeast Rolls image

Steps:

  • Dissolve yeast in warm water in the bowl of a stand mixer fitted with the dough hook. Stir in sugar and salt until you see foam rising. Add 3 cups flour and 3/4 cup shortening; mix with the dough hook until the mixture is the consistency of a thick pancake batter.
  • Fill a pot with hot (not boiling) water.
  • Remove the mixer bowl and cover it with plastic wrap and a towel. Place the bowl over the pot of hot water, making sure the bottom does not touch the water. Let rise until doubled in size, 45 minutes to 1 hour.
  • Place the bowl back on your stand mixer and gradually mix in remaining 4 cups flour until dough is smooth and elastic; you may need to add up to 1 additional cup.
  • Heavily grease two 9x13-inch pans with shortening.
  • Divide dough into 24 balls. Place 12 balls into each of the prepared pans; cover with plastic wrap and a towel. Let rise in a warm area until doubled in size, about 1 hour; balls will start out at about 1 1/2 inches in diameter but will rise and touch the sides of the pans.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Bake rolls in the preheated oven until golden brown on top, 25 to 30 minutes. Remove from the oven and brush melted butter over top.
