BUSY DAY CHICKEN RICE CASSEROLE
This is my family's favorite one dish meal - mine too, since it is so easy to put together! I use skinless, boneless chicken breasts but mixed chicken pieces can be used, too. I also use the low fat, low sodium canned soups and the taste is still great!

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- In a large bowl combine the mushroom soup, celery soup, water, rice, mushrooms, garlic powder and black pepper. Mix all together. Pour mixture into a 9x13 inch baking dish and spread on bottom.
- Lay chicken pieces over soup mixture and sprinkle dry onion soup mix over all. Cover tightly with aluminum foil and bake in the preheated oven for 1 to 1 1/2 hours or until chicken is cooked through and no longer pink inside.

- 1. Place chicken in large skillet with cover; sprinkle with onion soup and brown sugar 2. Pour tomato sauce over all 3. Turn heat to medium high and cook until mixture starts to bubble 4. Turn heat down to medium low and cook or slow cook for 4 hours 5. For a crowd, use 1 can tomato sauce and 2 tbsp sugar for every 3 lbs of chicken. Do not increase onion soup

- 1. In a large skillet, place the chicken and sprinkle with onion soup mix and brown sugar. Pour sauce over all. Turn heat to med and cook until mixture starts to bubble, then turn to med-low and cover. Cook 35 to 45 minutes or until chicken is done.
- 2. For crock pot, cook low 4 hours or high 2 hours. Serve with potatoes, rice or noodles.
CHICKEN BOUDINE PAULA DEEN
This is a lovely casserole that I first saw on Paula Deen's show. It has become of favorite of my family.

- Preheat oven to 350°F.
- In a large bowl, toss together the noodles, soup, broth, and sherry.
- Add the chicken, 2 cups of cheese, almonds, pimento, mushrooms, and salt and pepper, to taste, and toss to combine.
- Transfer the mixture to a greased 13x9x2-inch casserole and top with the remaining cup of cheese.
- Bake for 30 minutes, or until bubbly.
- Note: When I make this I make it without the almonds but I kept them in the recipe as this is how Paula made it on her show.

Steps:
- Preheat oven to 350°F.
- Melt butter in a 10 x 15-inch baking pan.
- In a shallow dish, combine buttermilk and egg.
- In another dish combine flour, pecans, salt, paprika, pepper, and sesame seeds.
- Dip chicken in buttermilk, then in flour.
- Place skin side down in melted butter.
- Turn to coat and leave skin side up.
- Sprinkle with pecan halves.
- Bake for 1 1/4 hours.

- Remove the outer wrappers from the box of spinach. Open 1 end of each box. Microwave on full power for 2 minutes, until thawed. Drain the spinach and put into a large bowl. Add the shredded chicken.
- In a medium bowl, combine the soup, mayonnaise, sour cream, Cheddar, lemon juice, curry powder, salt and pepper, to taste, and wine. Whisk together to make a sauce. Pour the sauce over the spinach and chicken. Mix well with a spatula.
- Place the mixture into an 11 by 7-inch casserole dish or 2 (9-inch) square disposable aluminum foil pans that have been sprayed with vegetable oil cooking spray. Pat down evenly and smooth with a spatula. Combine the Parmesan and bread crumbs and sprinkle over the top. Dot with the butter.
- Wrap the uncooked casserole securely with plastic wrap, then with aluminum foil. Place each pan into a plastic freezer bag and seal. Place into freezer.
- Allow casserole to thaw 24 hours in refrigerator. When ready to bake, remove the plastic wrap and foil. Bake uncovered at 350 degrees F for about 30 minutes until bubbly.
