ROOT VEGETABLE PAVE

This is a stunning side dish to serve company. The robust blend features earthy root vegetables in a lightly herbed cream sauce. It's a perfect make-ahead dish for special occasions. -Carla Mendres, Winnipeg, Manitoba

Steps:

  • Preheat oven to 350°. With a mandoline or vegetable peeler, cut the first 5 ingredients into very thin slices. Transfer to a large bowl; toss with flour. Stir in the cream, thyme, 1 tablespoon rosemary, salt and pepper., Place half of the vegetable mixture into a greased 9-in. springform pan. Sprinkle with 1/2 cup cheese. Top with remaining vegetable mixture. Place pan on a baking sheet and cover with a double thickness of foil., Bake until vegetables are tender and easily pierced with a knife, 1-3/4 to 2 hours. Remove from oven and top foil with large canned goods as weights. Let stand 1 hour. Remove cans, foil and rim from pan before cutting. Top with remaining cheese. Add reserved fennel fronds and, as desired, additional fresh thyme and pepper. Refrigerate leftovers.

1/2 cup all-purpose flour
1 cup heavy whipping cream
1 tablespoon minced fresh thyme, plus more for topping
1 tablespoon minced fresh rosemary
1/2 teaspoon salt
1/2 teaspoon pepper, plus more for topping
1 cup shredded Asiago cheese, divided

My high school Spanish teacher gave us this recipe in class. It's pronounced pah-vay. It's great to eat after a spicy Mexican meal. The cool sweetness is very soothing.

Steps:

  • Boil the unopened can of condensed milk in a large amount of water for 1 1/2 hours; let cool to room temperature.
  • Mix butter, sugar, and shipped topping until blended.
  • Dip individual graham crackers in shallow bowl of milk.
  • Place crackers in square or rectangular casserole dish in one layer.
  • Spread half of whipped mixture over crackers.
  • Place a second layer of crackers over the topping.
  • Spread other half of whipped mixture over crackers.
  • Top whipped mixture with remaining crackers.
  • Open can of condensed milk; stir, then pour over top of crackers.
  • Sprinkle with crushed cashews.
  • Freeze overnight.
  • Serve frozen.

Steps:

  • Place potatoes and heavy cream in a large zip bag and marinate over night.
  • Line a 8x8 inch loaf pan with foil hanging over all sides and brush with melted butter.
  • Arrange potatoes in bottom of pan overlapping slightly, layer with sweet potatoes keep stacking potatoes-sweet potatoes push down and use all the potatoes salt and pepper each layer.
  • Tightly cover pan with foil place another 8x8 loaf pan on top and place a brick or oven proof object inside pan Bake 350 1 1/2 hours or till tender leave brick on and refrigerate at least 4 hours.
  • Turn out on cutting board and cut into 2 inch squares, saute in oil brown on both sides 3-4 minutes,or in the oven 350 for 5 minutes.
