PEACH-BALSAMIC REDUCTION image

Steps:

  • Pour vinegar into sauce pan, add rosemary sprigs, and simmer to reduce by half. Remove rosemary sprigs. Melt 2 tbsp butter in cast iron skillet over medium heat. Add peaches and cook until browned on both sides. Add brandy and carefully ignite to flambé peaches. Mix until flame expires. Turn heat off. Add remaining 1 tbsp butter and mix until incorporated. Move peaches and accompanying liquids to a mixing bowl. Pour in reduced balsamic. Use immersion blender to combine to desired consistency.

3/4 cup Balsamic vinegar
2 sprigs Rosemary
3 tbsp butter
2 Peaches, cut into about 12 wedges
2 tbsp Brandy

Steps:

  • Sprinkle chicken with salt and pepper. In a large skillet, brown chicken on both sides in butter. Remove from the skillet and keep warm., Add broth and sherry to the skillet, stirring to loosen browned bits from pan. Stir in the preserves, garlic and tarragon. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes, stirring occasionally. Stir in vinegar. Return chicken to the skillet; cover and cook over medium heat for 8-10 minutes or until a thermometer reads 165°.

  • Place pizza stone in oven and preheat oven to 450 degrees. Let pizza stone preheat with oven and rest 30 minutes (assemble pizza during last 10 minutes or so).
  • Meanwhile, pour balsamic vinegar and honey into a large and deep skillet. Set skillet over medium heat, allow mixture to cook and simmer, until reduced to slightly under a 1/2 cup, about 15 minutes (I recommend using a silicone spatula to stir, so you can scrape bottom and sides of pan while stirring. Stir mixture occasionally during first 5 minutes, then stir constantly during last 10 minutes).
  • Lightly dust a sheet of parchment paper (about 14-inch long) with flour. Stretch and shape dough into a 12 1/2-inch round. In a small bowl, stir together olive oil and garlic. Brush mixture evenly over top of crust, working to evenly distribute garlic. Season crust lightly with salt and pepper.
  • Layer prosciutto over crust into an even layer, aligning pieces side by side (if they overlap slightly that's fine). Dollop small portions of the ricotta over pizza, then sprinkles with mozzarella cubes and asiago cheese.
