PEACH BERRY LEMON CRUMBLE

Steps:
- Heat oven to 350°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray.
- In large bowl, toss peaches, blueberries, 1/2 cup of the cookie mix and 1 teaspoon of the lemon peel. Spoon mixture into baking dish.
- In same bowl, place remaining cookie mix. Cut in butter, using pastry blender (or pulling 2 knives through mix in opposite directions), until mixture looks like coarse crumbs. Stir in remaining 1 teaspoon lemon peel. Sprinkle over fruit mixture.
- Bake 40 to 45 minutes or until filling is bubbly and topping is golden brown. Serve warm.

Steps:
- Preheat oven to 350 degrees F.
- In a large mixing bowl, combine frozen peaches, berries and lemon juice.
- Mix flour and sugar in with the fruit until well combined.
- Pour mixture into a baking dish or skillet.
- In a mixing bowl, combine crumble topping ingredients with a pastry cutter or fork until mixture is crumbly.
- Sprinkle crumble topping on top of fruit in an even layer.
- Bake in preheated oven until the fruit is bubbling and the topping is golden brown, about 30 minutes.
- Top with vanilla ice cream before serving, if desired.

- Heat oven to 400°F. In large saucepan, combine 1 cup sugar and cornstarch. Add water; mix well. Bring to a boil, stirring constantly; cook and stir an additional minute or until thickened. Stir in fruit; return to a boil, stirring frequently. Remove saucepan from heat; stir in almond extract. Pour into ungreased 8-inch square (1 1/2-quart) baking dish.
- Lightly spoon flour into measuring cup; level off. In medium bowl, combine flour, 1/4 cup sugar, baking powder, margarine and milk; mix well. Drop dough by spoonfuls over hot fruit mixture.

- Preheat oven to 350ºF. Lightly butter a 9-inch pie plate. Line a large, rimmed baking sheet with foil. Make topping: In a bowl, combine oats, flour, brown sugar, cinnamon and salt. Stir in butter until crumbly. Toss in nuts.
- Make filling: Bring a large pot of water to a boil; have ready a large bowl filled with ice water. Using a sharp knife, cut a shallow X into bottom of peaches. Blanch peaches until skins begin to wrinkle, 30 to 60 seconds. Remove with a slotted spoon and place in ice water to cool. Slip off skins with your fingers; cut in half, remove pits and slice fruit into wedges.
- In a bowl, toss peaches with sugar, flour and salt. Fold in berries. Let stand for 5 minutes. Transfer to prepared pie plate. Sprinkle with topping, place on baking sheet and bake until filling bubbles and topping is golden, 50 to 55 minutes. Let cool on a wire rack. Serve warm or at room temperature, with vanilla ice cream, if desired.
