PEACH JAM (REFRIGERATOR)

Hubby was helping shop and came home with a small box of peaches , they looked good but after cutting one up for breakfast I realized they were hard and had no flavor so this is what I did with them.

Peach Jam (Refrigerator) image

Steps:

  • Skin peaches
  • Dice small
  • In large sauce pan add diced peaches, sugar, and water.
  • Bring to boil turn on low and simmer till peaches are tender and sauce is cooked down and slightly thick.
  • Remove from heat ; with hand blender ,blend peaches slightly. Add almond flavoring; cool.
  • Can be stored in refrigerator for 2 weeks in tightly sealed container.

4 large peaches
1 cup(s) sugar
1/2 cup(s) water
1/4 teaspoon(s) almond extract

Steps:

  • Crush 1 cup chopped peaches in the bottom of a large saucepan. Add remaining peaches, and set pan over medium-low heat. Bring to a low boil, and cook for about 20 minutes or until peaches become liquid (my family likes a few bits of peach left) .
  • Pour peaches into a bowl, and then measure 6 cups back into the pan. Add sugar, and bring to a boil over medium heat. Gradually stir in dry pectin, and boil for 1 minute.
  • Remove from heat after 1 minute, and transfer to sterilized jars. Process in hot water bath canner for 10 minutes. Let cool, and place on shelf.

30 Minutes to Homemade SURE.JELL Peach Freezer Jam image

Steps:

  • Rinse 6 clean plastic containers and lids with boiling water. Dry thoroughly.
  • Peel and pit peaches. Finely chop or grind fruit. Measure exactly 3 cups prepared fruit into large bowl. Add sugar and lemon juice; mix well. Let stand 10 min., stirring occasionally.
  • Mix water and pectin in small saucepan. Bring to boil on high heat, stirring constantly. Cook and stir 1 min. Add to fruit mixture; stir 3 min. (A few sugar crystals may remain.)
  • Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Refrigerate up to 3 weeks or freeze up to 1 year. (If frozen, thaw in refrigerator before using.)

  • To a large saucepan add sliced peaches, sugar, water, and cinnamon stick. Bring to a boil; add butter and reduce heat to medium.
  • Continue to simmer the peaches on medium to medium-high heat, removing foam from the surface as needed until the peaches are soft, most of the liquid has evaporated and the jam has thickened. About 20-30 minutes. During this process, I like to use a potato masher to further break down the peaches. The back of a spoon works well too.
  • Ladle jam into glass refrigerator containers. The jam will keep in the refrigerator for up to 2 weeks.

  • Peel and pit peaches. Finely chop or pulse fruit in a food processor until diced. Measure exactly 3 cups of diced peaches into a large bowl (You can eat any extra diced peaches leftover after measuring 3 cups.)
  • Add one cup of sugar to the bowl and stir well. Rest for 5 minutes. Repeat with remaining sugar, adding it a little at a time and resting in between. Stir in lemon juice. Let mixture rest for 10 min.
  • Taste the mixture and if it's still grainy from the sugar don't proceed until the sugar has dissolved! (If needed, you could place the heat-proof bowl or peaches over a saucepan of warm water on the stove. Gently stir the mixture and the heat will help the sugar to dissolve.)

  • Measure crushed peaches into a large pot. Add lemon juice and pectin; stir well. Place on high heat and, while stirring constantly, bring to a full rolling boil with bubbles over the entire surface. Add the sugar and spices all at once and heat again to a full bubbling boil. Boil hard for 1 minute (set a timer), stirring constantly.
  • Remove from heat; skim foam off the top. (We keep the foam in the refrigerator and enjoy it on toast for the next couple of days. I love it warm straight off the stove as well!)
  • Pour immediately into sterile canning jars. Fill the jars to 1/4 inch from the top. Seal them and process 5 minutes in a boiling water bath.
