- Blend peaches, ice, whiskey, honey, lemon juice, lime juice, cardamom, and 1 oz. water in a blender until smooth. Divide among 4 glasses and serve.
PEACH CARDAMOM JAM
Thanks to the reduced amount of sugar, it tastes extremely peachy, but with a smooth little kick. It makes a nice thick jam, that goes great on challah or a croissant.

- Peel, pit, and chop peaches. Measure 4 1/2 cups of chopped peaches.
- Combine peaches, lemon juice, pectin, and 1/4 of sugar. Bring peach mixture to a boil.
- Add remaining sugar. Boil hard for 1 minute.
- Remove peaches from heat. Stir in cardamon and vanilla extract.
- Ladle into sterilized jars. Process in a boiling water bath for 10 minutes.
SKILLET MEATBALLS WITH PEACHES, BASIL AND LIME
You can make these gingery meatballs with any kind of ground meat (or vegan meat), but rich, brawny pork goes especially well with juicy peaches and the fresh basil. Make sure to use ripe or even overripe peaches (or nectarines). They should be very soft so they cook quickly, and very sweet so they contrast with the savory meatballs and tangy lime juice. Rice or rice noodles would fill this meal out perfectly and substantially, as would a crisp-leafed salad for a lighter, more summery supper.

- In a large bowl, mix together ginger, garlic, cumin and salt. Add pork, panko and basil. Using your hands, gently mix everything together, making sure not to overwork the mixture. (Otherwise, the meatballs get tough.) Form into 1 1/4-inch balls.
- Heat a large skillet over medium-high, then add the oil and let it heat up until it thins out. Add meatballs in one layer. Cook, turning and shaking the pan, until meatballs are browned all over, 5 to 7 minutes.
- Pour the wine into the skillet and move meatballs over to one side of the pan, scraping up the browned bits. Add peaches, a pinch of salt and 2 tablespoons water to the empty side of pan. When peaches are simmering, cover the pan, lower the heat to medium, and let cook until the meatballs are no longer pink at their centers, and the peaches juicy and tender, about 5 to 10 minutes longer.
- Uncover the pan. If the mixture seems too runny, let it cook down for another minute or so. The peaches should break down into a chunky sauce. Hard or unripe peaches may take a few extra minutes.
- Add the onions to the pan and mix them in so they wilt slightly. Squeeze lime juice all over everything, then taste and add salt and lime juice, as needed. Sweeter peaches will need more lime juice, tart ones, less.
- Serve the meatballs sprinkled with more cumin and garnished with torn basil leaves, over the rice or greens.
BLACKBERRY CRISP WITH CARDAMOM CUSTARD SAUCE
You could use a combination of berries (raspberries, blueberries and blackberries in equal parts) in this crisp, but it especially sings with just blackberries. (Wild blackberries, if you can find them, are even better.) Cardamom perfumes the accompanying rich custard sauce. The warm, musky spice adds a flavor that's perfect with berries. The crisp needn't be served piping hot straight from the oven; it's delicious served at room temperature or just slightly warm.

- Make the topping: Put flour, sugar, butter and ground cardamom in a medium bowl. Using your fingertips, work ingredients together until the mixture resembles wet sand with a few stray pebbles. (The topping can be made in advance and refrigerated for 1 week or frozen for up to 2 months.)
- Heat oven to 400 degrees. Toss the blackberries with ½ cup/100 grams sugar and transfer the mixture to an 8-inch square baking dish.
- Sprinkle topping over berries loosely, and transfer to the oven. Bake for 30 to 40 minutes, until the topping is well browned. Let cool for 10 minutes, or serve at room temperature.
- As the crisp bakes, make the custard sauce: Put half-and-half and sugar in a small saucepan over medium-high heat. Add the cardamom seeds and bring to just under a simmer, stirring. Put yolks in a bowl and whisk until smooth, then whisk in 1 cup of hot half-and-half mixture. Pour the contents of the bowl back into the saucepan and cook, whisking, on a very low flame until the mixture barely thickens, about 5 minutes. Strain through a fine-mesh sieve. Serve sauce hot, or let cool and refrigerate until ready to use. (Sauce can be made up to 2 days in advance.)
- To serve, scoop large spoonfuls of crisp into individual shallow bowls. Ladle the sauce around each serving or pass the sauce at the table.
FRESH PEACH SAUCE
I like to make my breakfast table as pretty as possible. This peach sauce adds a warm golden color to the table and terrific flavor to pancakes, waffles and French toast.

- Preheat the oven to 400 degrees. Make the Filling: Whisk sugar, cardamom, allspice, cornstarch and salt together in a medium bowl. Add peaches, vanilla extract and lemon juice and gently toss until the peaches are evenly coated. Transfer fruit to a 9-inch deep dish pie plate and bake until fruit begins to release liquid, about 20-25 minutes.
- Meanwhile, make the Biscuit Topping: Combine the flour, sugar, baking powder, baking soda and salt together in the work bowl of a food processor. Pulse until combined. Scatter cubes of butter over the top and pulse until the mixture resembles wet sand with a few pea-sized pieces of butter, about 8-10 pulses. Transfer the mixture to a large bowl. Add skyr or yogurt and water. Mix together using a fork and/or your fingers until a dough forms (be careful not to overmix).
- Once the fruit is out of the oven, use an ice cream scoop or large spoon to drop 6 equal-sized mounds of dough on top of the hot peach mixture leaving at least a half inch between each biscuit. Sprinkle the dough mounds wth turbinado sugar and transfer to the oven. Bake until the filling is bubbly and biscuits are golden brown, about 20 minutes. Transfer to a wire rack to cool. Serve warm with vanilla ice cream or whipped cream.

- Place all the ingredients except for the butter in a medium-sized stock pot and bring to a boil. Reduce the heat to medium-low, cover and simmer 25 minutes, stirring occasionally, until the peaches are soft.
- Use an immersion blender or transfer to a blender and puree until smooth. Add the butter and stir until melted. If the sauce is too thick, add a little water to thin it out.
- FOR CANNING: You can also can this sauce for long-term storage. Omit the butter and ladle the hot sauce into sterilized jars, leaving 1/2 inch headspace, wipe the rims with a damp cloth and screw on the lids/rims. Process in a boiling water canner for 10 minutes. Carefully remove the jars and let them sit undisturbed for 24 hours. Check the seals. Stored in a dark, cool place, this will keep for at least a year but for best flavor use within 6 months.
