LAYERED CHOCOLATE AND PEANUT BUTTER BARS
Steps:
- HEAT oven to 350 degrees F. Spray 13 x 9-inch pan with a no-stick cooking spray. Melt chocolate chips in dry, microwave-safe bowl on HIGH (100% power) 1 minute. Stir. Microwave at additional, 10- to 15-second intervals, stirring just until chips are melted. Set aside.
- BEAT together brown sugar, peanut butter and butter in large bowl with an electric mixer, until smooth and creamy. Add egg and vanilla. Beat until well blended.
- STIR together flour, baking soda and salt. Add to peanut butter mixture. Beat just until combined. Stir in oats. Press 3/4 of dough into prepared baking pan. Spread evenly with melted chocolate. Dot chocolate layer with remaining dough.
- BAKE 24 to 26 minutes. Cool. Cut into 24 bars.

- Preheat oven to 350°. In a large bowl, beat the eggs, butter and vanilla until smooth. Whisk together the dry ingredients; gradually add to egg mixture. Stir in chocolate chips. Set aside 1 cup for topping. Spread remaining batter into a greased 13-in. x 9-in. baking pan. , In a small bowl, beat the cream cheese, peanut butter and sugar until smooth. - Preheat oven to 350 degrees F (175 degrees C). Grease a 10x15-inch jellyroll pan.
- Melt 1 cup butter and 1/3 cup cocoa powder together in a saucepan over low heat, stirring often, until smooth, about 5 minutes. Remove from heat and cool slightly.
- Combine white sugar, flour, and salt together in a large bowl; add chocolate mixture. Beat with an electric mixer on medium speed until blended, 1 to 2 minutes. Add eggs and vanilla extract; stir until combined. Pour batter into prepared jellyroll pan.
- Bake in the preheated oven until edges begin to become crisp, about 20 minutes.

TAHOE'S LAYERED PEANUT BUTTER BARS
Lake Tahoe, a ski resort and gambling destination straddling the border between California and Nevada, was not my first choice of places to live when I left Ireland, but a bakery in one of the casinos there offered me a job, and I grabbed it. At the bakery, I was required to start work at the shocking hour of three a.m. When it's that early, it's hard to know what an appropriate breakfast is, so I'd often eat one of the bakery's peanut butter bars, which featured a layer of chocolate and were salty and sweet and really very good. As time went by, the number of bars I ate each day started to climb, and I realized I had to limit my peanut butter bar intake or risk a slippery slide into gluttony. Consider yourself warned.

- Preheat the oven to 350 degrees F (180 degrees C) and line a 9 x 13-inch baking pan with parchment paper.
- In a large bowl, cream together the butter and sugar with a wooden spoon until light and fluffy.
- Mix in the peanut butter, followed by the egg and vanilla.
- Add the flour, coconut, and salt and mix until well combined.
- Spread the mixture evenly in the prepared pan.
- Scatter the peanuts over the top. Press them into the dough with your hand.
- Bake for 25 to 30 minutes, until golden brown on top. Let cool in the pan for 20 minutes.
- Melt the chocolate in a small heatproof bowl in the microwave or over a bain-marie. Spread a thin layer of the melted chocolate over the top of the bars in the pan. Transfer the pan to the fridge and let the chocolate cool for 2 hours. When the chocolate has set, cut into 24 bars.
- Store the bars in an airtight container in the fridge for up to 5 days.

- Preheat the oven to 350 degrees F. Line a 24-cup mini muffin pan with paper liners; coat with cooking spray. Melt the butter and unsweetened chocolate in a heatproof bowl set over a pot of simmering water, stirring, until smooth. Whisk in the granulated sugar, vanilla and salt until combined; remove the bowl from the pan. Stir in the eggs, one at a time. Add the flour and beat with a wooden spoon until the batter is shiny, about 1 minute.
- Divide the batter among the prepared muffin cups. Bake until a toothpick inserted into the center comes out clean, about 17 minutes.

- Let the brownies cool 5 minutes in the pan; make an indentation in the center of each with a teaspoon. Pipe the filling into the indentations.
- Make the glaze: Combine the semisweet chocolate and 2 tablespoons cream in a heatproof bowl set over the simmering water. Let sit 3 minutes, then stir until smooth. Stir in the remaining 2 tablespoons confectioners' sugar. Slowly stir in the remaining 2 tablespoons cream until pourable. Spoon over the brownies; top with the coarse sugar. Chill until set, 30 minutes.

- Set aside 50g each of the peanut butter and chocolate. Heat oven to 180C/160C fan/gas 4 and line a 20cm square baking tin with baking parchment. Gently melt remaining peanut butter, chocolate and all the sugar in a pan, stirring occasionally, until the sugar has just about melted. Transfer mix into a bowl to cool down slightly. Turn off heat and use a wooden spoon to beat in the eggs one by one. Stir in the flour and scrape into the tin.
- Melt reserved peanut butter in the microwave on High for 45 secs, or in a pan, until runny, then drizzle over the brownie. Bake for 20-25 mins until it has a crust, but the middle still seems slightly uncooked.
- Melt reserved chocolate, drizzle over the brownie, then cool in the tin before cutting into squares.

- To make the brownie layer, pulse dates in the food processor until small bits remain. Remove from processor and set aside in a small bowl. Add walnuts, almonds, chocolate chips and cocoa powder in the processor and pulse until well combined. Then, while the processor is running, drop small bits of the dates in until a dough is formed. It should begin to ball up at some point. If it remains too dry, add a couple more whole (pitted) dates until a dough is achieved.
- Press into an 8×8 pan (or one of similar size // adjust if altering batch size) lined with parchment or plastic wrap. This makes it easier to lift out and cut.
- To make peanut butter layer, process dates until small bits remain. Remove and set aside in a bowl. Then add raw almonds and peanuts and pulse until small bits remain. Add back in peanut butter and the dates and process until well combined. Press on top of brownie layer until smooth. Using plastic wrap or parchment can help get it completely flat.
