CHICKPEA FLOUR CHOCOLATE CHUNK COOKIES (WITH PEANUT BUTTER AND OATS)

These cookies are gluten-free, and have great taste and texture, like better gourmet cookies. The flour is entirely chickpea with a touch of corn starch. The peanut butter removes the strange chickpea-flour taste. A little extra vanilla wouldn't hurt things either. These are really good!

Chickpea Flour Chocolate Chunk Cookies (With Peanut Butter and Oats) image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  • Beat brown sugar, butter, peanut butter, egg, and vanilla extract together in a bowl.
  • Whisk chickpea flour, cornstarch, baking powder, and salt together in a bowl. Stir flour mixture into peanut butter mixture. Stir chocolate, oats, and walnuts into peanut butter mixture until dough is evenly combined. Cover the bowl with plastic wrap and refrigerate dough until chilled, about 15 minutes.
  • Form dough into tablespoon-sized balls and place 2-inches apart on prepared baking sheet.
  • Bake in the preheated oven until brown, about 12 minutes. Let cool on baking sheet for 3 to 5 minutes; transfer to a wire rack to cool completely.

2 cups chickpea flour
2 tablespoons cornstarch
1 teaspoon baking powder

1 cup chocolate, chopped
½ cup oats
¼ cup chopped walnuts

CHICKPEA "COOKIE DOUGH"

No one will ever guess that this "cookie dough" is made with a can of chickpeas! Eat as-is or roll into balls and freeze. You can add raisins, M&M's®, peanut butter chips, then roll them in coconut, powdered sugar, or cocoa. I added chocolate chips and chopped peanuts but the choices are endless.

  • Combine chickpeas, peanut butter, maple syrup, flour, vanilla, and salt in a powerful blender, such as a Vitamix®. Blend until smooth, using tamper if needed. Scoop into a bowl.
  • Stir in chocolate chips and peanuts. Roll mixture into balls.

  • Add the chickpeas, peanut butter, vanilla, dates and salt to a food processor and process until smooth.
  • Stir in the chocolate chips. You can do this in the food processor by hand but I found it easier just to move everything to a separate mixing bowl.
  • Scoop out the dough about 1 1/2 -2 tablespoons at a time. Keep in mind the cookies will keep their shape after baking so you can roll into neat little balls or just drop by the spoonfuls onto your baking tray. The cookies won't spread much so you can fit quite a few on your tray.

  • Add in the egg and vanilla, and mix again. Then add in the flour, baking soda, and salt, Mix until a thick batter is created.
  • Fold in the chocolate chips, then use a tablespoon or 1-ounce scoop to scoop the dough onto the prepared baking sheet. Sprinkle with flaky salt on top, if desired. Bake at 350ºF for 8 to 10 minutes, until the cookies puff up and start to look lightly golden around the edges.
  • Let the cookies cool completely on the pan, to help them firm up. They are fragile when hot, but will become sturdy as they cool. (Don't be surprised if these flatten as they cool-- this helps with the chewy texture!) Enjoy them right away, or store in an airtight container in the fridge for up to a week. You can also freeze these for up to 6 months.
