PEAR AND GRUYERE HAND PIES

These days practically every supermarket offers frozen puff pastry. For the best results, look for the brands that have the fewest ingredients and use real butter. Puff pastry is all about the butter, and that's the flavor you want to come through.

Pear and Gruyere Hand Pies image

Steps:

  • In a large skillet, melt the butter over medium heat. Add the pears and the thyme and cook until the pears are tender and any juice has evaporated, 4 to 6 minutes. Season to taste with salt and pepper. Transfer to a plate to cool completely.
  • Working with 1 sheet of puff pastry at a time, on a lightly floured surface, roll the dough out to a 10-by-15-inch rectangle. Trim about 1/8 inch off of each edge. Cut the dough into 6 equal squares. Transfer the squares to a parchment-lined baking sheet. Repeat with the remaining dough.
  • Brush a 1-inch border of egg on each square. Divide the cheese among the 12 squares. Then divide the pear mixture among the squares. Fold the squares over into triangles and press to seal with a fork. Transfer the pies to the freezer for 15 minutes.
  • Preheat the oven to 400 degrees F.
  • Brush the tops and sides of the pies with the egg. Cut a slit in each pie to allow steam to escape. Bake the pies until deep golden brown and puffed, 20 to 25 minutes, rotating halfway through. Transfer to a rack to cool slightly and serve warm.

Steps:

  • Melt 3 tablespoon of the butter in sauté pan.
  • Sauté pear slices until just turning soft.
  • Beat together eggs, cream or milk, and salt & pepper until blended but not frothy.
  • Melt remaining butter in omelet pan over high heat until foam begins to recede but before beginning to color.
  • Pour in egg mixture into omelet pan, stirring lightly, but allowing it to set on the bottom.
  • Top half of the omelet with sautéed pears and cheese.
  • With spatula, fold other half over pears and cook until cheese begins to melt. Slide omelet out of pan onto a heated plate.
  • Serve.

Steps:

  • Place flour, cheese, sugar and salt in a food processor; pulse until blended. Add butter; pulse until butter is the size of peas. While pulsing, add just enough ice water to form moist crumbs. Divide dough in half. Shape each into a disk; wrap and refrigerate 1 hour or overnight., In a large saucepan, combine water, wine, sugar, cinnamon stick, vanilla and spices; bring to a boil. Add pears to poaching liquid. Cook, uncovered, 10-15 minutes or until tender., Using a slotted spoon, remove pears and cool slightly. Refrigerate until cooled; discard cinnamon stick. Meanwhile, return poaching liquid to a boil. Cook 12-15 minutes or until liquid is reduced to 3/4 cup. In a small bowl, mix cornstarch and water until smooth; stir into reduced liquid. Return to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Pour into a 1-cup measuring cup. Cool slightly; refrigerate until chilled., Preheat oven to 400°. On a well-floured surface, roll 1 dough portion to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Add pear filling; pour syrup over pears. Roll remaining dough to a 1/8-in.-thick circle. Cut decorative cutouts from remaining crust and arrange over filling; re-roll scraps as needed. Roasted Pear and Goat Cheese Omelet image

Steps:

  • Preheat the oven to 375°F.
  • Toss together the pear slices, melted butter, and salt in a small shallow baking pan. Roast the pears for 5 minutes. Using tongs or a spatula, turn over the pears so they'll cook evenly. Continue to roast for another 10 to 15 minutes, or until browned. Set aside to cool.
  • Using a whisk or a fork, beat the eggs in a small bowl until frothy.
  • For each omelet, sauté 8 pear slices in the butter in an 8-inch nonstick skillet over medium heat for 1 minute. Pour the eggs into the pan, tilting the pan gently to evenly distribute the eggs around the pear slices. Let the eggs cook and set for about 5 seconds.
  • Using a silicone or rubber spatula, gently pull the cooked egg from the edges toward the center of the pan, while allowing the liquid egg to run underneath and onto the hot pan. When the sides of the omelet begin to rise up the edge of the pan, flip the omelet. It is done when it is nicely set but not overly firm. There should be traces of just-cooked egg in the center of the omelet.
  • Sprinkle the goat cheese over half of the omelet. Using the spatula, fold the omelet in half and slide it onto a serving plate. Sprinkle with the parsley and serve.

  • Roasting intensifies a fruit's naturally sweet flavor, softens it, and opens up many serving possibilities. You can top roasted fruit with ice cream or whipped cream, roll it into a crêpe, or serve it with cakes and other pastries. Apples, pears, apricots, plums, and nectarines are especially delicious when roasted.
  • To roast fruit, preheat the oven to 375°F. Mix the fruit with a little lemon juice in a large bowl. Generously butter a rimmed baking sheet. Place the fruit on the prepared sheet and drizzle with a little melted butter. Roast the fruit for about 20 to 25 minutes, or until soft and golden, turning it with a spatula after 10 minutes. Let the fruit cool on the baking sheet. You can store roasted fruit in the refrigerator for up to 2 days.

Steps:

  • Peel the pears and cut them in half. Scoop out the seeds with a melon baller or cut them out with a knife. Slice thin and set aside. In a medium skillet, melt the butter over medium heat. Add the sugar and cook, stirring, until slightly browned, about 3 to 5 minutes. Add the lemon juice and ginger and stir. Add the pears and reduce the heat to low. Cook uncovered, stirring occasionally, until the pear slices are tender and almost translucent and the mixture is thickened, about 30 minutes. Let cool to room temperature. To serve, shave the cheese with a vegetable peeler or a cheese slicer into thin shards. Toast the bread. Spoon a mound of confit in the center of each serving plate. Fan 4 pieces of toast around the top of the plate, and pile the cheese shards around the bottom.

  • Melt butter in heavy large skillet over medium heat. Add leeks; stir 1 minute. Reduce heat to low; cover and cook until leeks begin to brown, stirring occasionally, about 7 minutes. Stir in pear and sugar. Increase heat to medium; saut uncovered until any liquid evaporates, about 2 minutes. Season with salt and pepper. Transfer to bowl; cool. Stir in cheese and chives.
  • Place puff pastry sheets on work surface. Using 4 1/2-inch-diameter tartlet-pan rim or bowl as aid, cut out 4 rounds from each pastry sheet. Roll out each pastry round to 5-inch circle. Place leek mixture on half of each pastry round, dividing equally. Brush pastry edges with egg glaze. Fold pastry over filling, pressing to adhere. Press edges with fork to seal. Brush turnovers with egg glaze. Pierce pastry in several places with toothpick. Place on baking sheet. Chill 20 minutes.
  • Preheat oven to 400°F. Bake turnovers until puffed and golden, about 18 minutes. Serve warm.

Steps:

  • Preheat the oven to 425 degrees F. Lightly butter an 8 by 8-inch baking dish.
  • Heat the oil in a medium skillet over medium-high heat. Add the onion and cook until translucent, about 3 minutes. Add the sausage and cook until brown, about 5 minutes. Set the pan aside to cool.
