THE BEST PECAN PIE

- Preheat oven to 350°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., In a Dutch oven or large saucepan, melt butter over medium heat. Add pecans; cook, stirring constantly, until very fragrant and pecans start to brown, 4-5 minutes. Remove pecans with a slotted spoon, reserving butter in pan. Stir in brown sugar, maple syrup, and salt; bring to a boil. Reduce heat; simmer 2 minutes. Remove from the heat. In a bowl, whisk a small amount of the hot mixture into eggs; return all to the pan, whisking constantly. Stir whiskey, optional, and vanilla into brown sugar mixture; stir in pecans. Pour into crust. , Bake until a knife inserted in the center comes out clean, 55-60 minutes. Cover edges with foil during the last 30 minutes to prevent overbrowning if necessary. Cool on a wire rack. If desired, top with whipped cream and cinnamon. Refrigerate leftovers.

Steps:
- To make crust, place flour, salt and butter in a food processor and pulse until mixture resembles coarse meal. Add yolk mixture and process just until dough comes together. Wrap in plastic and refrigerate.
- To make pecans, preheat oven to 225 degrees. Mix sugar and salt in a bowl. In another bowl, whisk together egg whites and water until frothy. Toss pecans in the egg white mixture to coat well. Drain, then toss in the sugar mixture, coating well. Place on a baking sheet and bake until dry, about 1 hour, stirring every 15 minutes.
- To make the filling, whisk together the eggs, corn syrup and brown sugar. Whisk in the butter, bourbon, vanilla and salt. Stir in the chopped pecans.
- Preheat the oven to 400 degrees. Roll the dough out to just fit a 10-inch quiche dish and line the dish with the dough. Pour in the filling. Top with the sugared pecans. Bake for 15 minutes. Lower the temperature to 350 degrees and bake just until the filling is set, about 20 minutes longer. Place on a rack to cool. Cut into wedges and serve.

- In a large saucepan, combine the first four ingredients. Cook over medium heat until all sugar is dissolved. Gradually add milk; mix well. Continue cooking until a candy thermometer reads 248° (firm-ball stage). , Remove from the heat; stir in vanilla until blended. Fold in the pecans. Drop by tablespoonfuls onto a greased or parchment-lined baking sheets. Chill until firm. Loosen from paper. , Melt chocolate chips and shortening in a microwave-safe bowl. Drizzle over each cluster. Cool.

So simple, so good! Have tried several different combinations of spices, but keep coming back to this one. I use only pecans, but mixed nuts would be fine.

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
- In a small bowl beat the egg white with the water. Stir in the pecans, mixing until well moistened.
- In a small bowl, mix together sugar, salt, cinnamon, cloves and nutmeg. Sprinkle over the moistened nuts. Spread nuts on prepared pan.
- Bake in preheated oven for 30 minutes, stirring once or twice. Be careful not to overcook and burn the nuts.
