Lemon Pecan Pie image

Steps:

  • Preheat the oven to 325 degrees F.
  • In a large bowl, whisk together the brown sugar, granulated sugar and eggs until incorporated. Stir in the butter, vanilla, lemon zest and juice, milk, flour and 1 cup chopped pecans until combined. Pour the mixture into the unbaked pie shell. Arrange the pecan halves on top of the pie in a circular pattern.
  • Bake until the crust is golden brown and the filling is set but still a little loose in the center (it will set as it cools), about 55 minutes. Serve warm or at room temperature.

1 cup firmly packed dark brown sugar
1/2 cup granulated sugar
2 large eggs
1/2 cup (1 stick) unsalted butter, melted
1 1/2 teaspoons vanilla extract
2 teaspoons finely grated lemon zest plus 3 tablespoons juice
2 tablespoons milk
2 tablespoons all-purpose flour
1 cup chopped pecans plus 1 cup pecan halves
One store-bought 9-inch deep-dish pie shell, unbaked

Easy Lemon Loaf image

Steps:

  • Heat oven to 350°F. Grease 9x5-inch loaf pan with shortening; lightly sprinkle with flour.
  • In large bowl, beat cake mix, yogurt, melted butter, lemon peel and eggs with electric mixer on low speed until ingredients are moistened; scrape bottom and side of bowl. Beat 2 minutes on medium speed. Pour batter in pan. Sprinkle with coarse sugar.
  • Bake 40 to 50 minutes or until toothpick inserted in center of loaf comes out clean. Cool in pan on cooling rack 10 minutes; run metal spatula around edge of loaf to loosen. Remove from pan to cooling rack. Cool completely, about 1 hour.

Steps:

  • Preheat oven, grease& line the base of a 9x5 loaf pan with baking/parchment paper.
  • Sift flour and baking powder into a bowl.
  • Cut butter into the flour and mix until the mixture looks like fine breadcrumbs.
  • Add in the sugar and pecans.
  • Beat eggs together with milk and lemon zest in a seperate bowl.
  • Stir in maple syrup.
  • Add this to the flour mixture and gently mix together.
  • Do not overmix, only until all dry ingredients have become moist.
  • The batter should be lumpy.
  • Pour batter into pan and smooth out the surface of the batter.
  • Bake in the oven for about 50-60 minutes or until cake is lightly browned.
  • To make sure, insert a toothpick into the center of the cake and if it comes out clean then the cake is ready.
  • Cool cake in pan for at least 10 minutes then turn out and let it cool on the rack.
  • (For Icing) Sift the icing sugar into a small bowl and stir in the lemon juice to create a smooth icing.
  • Drizzle over the loaf and then sprinkle the chopped pecans over the icing.
  • Wait until the icing is set then slice.

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 9x5-inch loaf pan.
  • Whisk flour, salt, baking powder, and baking soda in a bowl. Cream sugar and butter in a separate bowl with an electric mixer. Add eggs, lemon juice, lemon zest, lemon extract, and vanilla; beat until incorporated.
  • Pour the egg mixture into the flour mixture; whisk until smooth. Add oil and mix well. Pour into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Cool on a wire rack.

  • 1. In a large bowl, cream butter and 1 cup sugar until light and fluffy. Beat in eggs. Combine the flour, baking powder and salt; add to creamed mixture alternately with sour cream, beating well after each addition. Fold in pecans and lemon peel.
  • 2. Transfer to a greased 9-in. x 5-in. loaf pan. Bake at 350° for 50-60 minutes or until a toothpick inserted near the center comes out clean.
  • 3. In a small saucepan, combine lemon juice and remaining sugar. Cook and stir over medium heat until sugar is dissolved. Pour over warm bread. Cool completely on a wire rack before removing from pan. 7 points per slice
