JALAPENO HUSHPUPPIES

Jalapeno Hushpuppies image

Steps:

  • Heat the oil to 350 degrees F. in a deep-fryer or Dutch oven.
  • In a 1-quart mixing bowl, stir the cornmeal, flour, onion, jalapeno, corn, and eggs, until blended. Allow to stand 5 minutes.
  • Drop the batter by teaspoonfuls into the hot oil. Don't overcrowd; leave room for the hushpuppies to be turned. Cook the hushpuppies until golden brown, about 3 minutes. Remove from the oil with a slotted spoon and drain on paper towels. Keep the cooked hushpuppies warm in an oven while cooking the remaining batter. Lightly sprinkle with salt and pepper, to taste, and transfer them to a serving dish. Serve with Paula Deen's Sweet and Spicy Chili Sauce, if desired.

1 1/2 quarts peanut oil, for frying
1 1/2 cups self-rising cornmeal
1 cup self-rising flour
1/2 cup chopped onion
1 (7-ounce) can diced jalapeno peppers, drained or 3/4 cup fresh jalapenos, seeded and finely diced
1 (15-ounce) can creamed corn
2 large eggs, lightly beaten
Salt and freshly ground black pepper
Paula Deen's Sweet and Spicy Chili Sauce, for dipping, optional

Steps:

  • In a large bowl, combine the cornmeal, pancake mix, sugar, baking powder and salt. In another bowl, beat the egg, buttermilk, oil, jalapenos, onion and pepper sauce. Stir into dry ingredients just until combined., In an electric skillet or deep-fat fryer, heat oil to 375°. Drop batter by rounded tablespoonfuls into oil. Fry for 3-4 minutes or until golden brown. Drain on paper towels. Serve warm.

Hot and Spicy Hush Puppies image

Steps:

  • Preheat deep fryer to 375 degrees F.
  • Mix all the ingredients together into a large mixing bowl to form a thick batter.
  • Dip 2 tablespoon spoons into water. Using the spoons scoop up some of the batter and drop into the hot oil. Work in batches. Fry for 3 to 4 minutes or until golden and brown. Remove and drain on a paper towel lined sheet tray. Serve with dipping sauce.
  • Mix the above ingredients together.

1 cup yellow cornmeal
3/4 cup self-rising flour
1 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon cayenne
1/2 small sweet onion, finely chopped
1/2 jalapeno, finely chopped
4 green onions, sliced thin

Use floury stone-ground cornmeal to keep the hush puppies light and hold them together as they fry. An electric wok or frying pan or deep fryer works well for this recipe. Beer gives these puffs a light texture.

Captain Buddy's Peppery Hush Puppies image

Steps:

  • Sift cornmeal,flour,baking powder,salt and soda into large bowl.; make a well in the center.
  • Add 2 cups beer or milk, onion,egg,parsley and pepper.
  • Stir quickly until just combined; do not overmix.
  • Add remaining 1/2 cup beer or milk if batter is too thick, it should be the consistancy of porridge.
  • Preheat oven to 250 degrees. Heat oil in electric skillet or wok, deep fryer, or large saucepan to 365 degrees.
  • Drop batter by rounded teaspoonful into hot oil and fry, turning once, until richly browned, 3 to 5 minutes per side.

Steps:

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Mix flour, cornmeal, onion, milk, egg, celery, garlic, and Cajun seasoning in a bowl.

  • Add about 3 inches of oil to the bottom of heavy bottom dutch oven or deep skillet - being sure the oil doesn't come more than halfway up the side of the vessel. Heat to 350°F.
  • While the oil is heating, combine the onion, cornmeal, flour, sugar, and salt together in a medium bowl.
  • In a small bowl, whisk the egg into the buttermilk. Add to the dry mixture and stir until just combined. Allow the batter to rest for about 5 minutes.
  • Drop the batter by heaping tablespoonsful carefully into the hot oil and fry for 5 to 6 minutes, turning over once, or until golden brown and cooked through. Drain on a wire rack over paper towels. Working in batches, being sure not to cook too many at one time as the oil temp will drop and the hush puppies will end up greasy. Be sure to adjust the heat to keep the oil at about 350°F.
