RICE WITH PEAS AND CILANTRO

Steeped in aromatics and studded with peas, this grain-and-veggie combo is more substantial than a typical side.

Rice with Peas and Cilantro image

Steps:

  • Tie together reserved cilantro stems with kitchen twine.Heat oil in a medium pot over medium heat. Cookonion and garlic, stirring occasionally, until tender, about8 minutes. Add chili powder, and season with salt andpepper; cook for 1 minute. Add rice, and stir to coat. Addcilantro-stem bundle and the water; bring to a boil.Reduce heat to low, and gently simmer, covered, until wateris absorbed, about 15 minutes.
  • Remove from heat, and add peas (do not mix). Cover, andlet stand for 10 minutes. Discard cilantro-stem bundle.Season with salt and pepper. Stir in cilantro leaves.

1 cup fresh cilantro, stems reserved
2 tablespoons extra-virgin olive oil
1 medium onion, finely chopped
1 garlic clove, minced
1/4 teaspoon chili powder
Coarse salt and freshly ground pepper
1 cup long-grain rice
1 1/2 cups water
1 pound fresh peas, shelled (1 1/2 cups)

PERUVIAN STYLE CORIANDER RICE WITH PEAS

Loosely adapted from the well-known Peruvian dish, Arroz con Pato, which is very similar to the ubiquitous Spanish Arroz con Pollo, but without the tomatoes. It's also a little spicier, and has thePeruvian addition of a dark beer as part of the liquid(you can sub veg. broth). Peruvian food is unique and delicious-- a cultural mix of native Indian, Spanish, African, Italian, Chinese and, more recently, Japanese cooking. Peruvian Style Coriander Rice With Peas image

Steps:

  • In a large heavy skillet or saute pan with a tight lid (can be non-stick), sprayed with oil, saute the onion, bell peppers, hot peppers, and garlic until the onion begins to brown a bit. Add water a tablespoon at a time to keep them from sticking, as needed.
  • Add the cilantro, coriander, and cumin, and stir-fry for a minute.
  • Add the raw rice and stir-fry briefly.
  • Pour in the beer and the hot water with the bouillon, and the peas, with pepper to taste, plus your Protein choice and any Optional addition you might be using.
  • Bring to a boil, cover and cook for 15-20 minutes(longer for whole wheat basmati-about 45 mins), or until the rice is done.
  • Toss ingredients and taste for salt and pepper.

1 red bell pepper, seeded and diced
2 tablespoons minced minced fresh pickled canned hot peppers (such as aji amarillo, Peruvian yellow hot peppers)
6 large garlic cloves, minced
2 tablespoons minced fresh cilantro (or more, or use Italian parsley instead)
1 tablespoon ground coriander
1 teaspoon ground cumin
2 cups white basmati rice (I use whole wheat basmati- or converted rice)
2 cups dark beer (or ale, or stout or nonalcoholic beer, or substitute veg. stock)
1 cup boiling water (with chicken-style vegan bouillon cubes, powder or paste for 3 cups broth-I use homemade veg. broth)
1 cup frozen peas, thawed and drained
fresh ground black pepper
2 cups chinese vegetarian roast duck, rinsed, drained and cut into smaller chunks (mun chai'ya)
2 cups vegan chicken, strips browned in a non-stick pan (or reconstituted Soy Curls)
2 cups seitan (or commercial savory baked tofu or tempeh or other poultry substitute, cut into cubes and browned in)
1 1/2 cups cooked chickpeas, rinsed and drained (1 can)
cooked corn, drained (1 can)

Steps:

  • In a saucepan with a tight-fitting lid bring broth to a boil with salt, oil, and garlic.
  • Stir in rice and cook, covered, over low heat 20-30 minutes, or until water is absorbed and rice is tender.
  • Fluff rice with a fork and toss with coriander and salt and pepper to taste.

2 cups chicken broth
1 teaspoon salt
1 teaspoon olive oil
2 garlic cloves, sliced thin
1 cup jasmine rice (long grain) or 1 cup basmati rice (long grain)
1/3 cup chopped fresh coriander sprig (wash and dry before chopping)
salt and pepper (you may not need any extra salt)

GREEN CORIANDER RICE

A tasty side for simple grilled chicken or meat. Being gluten-free I tend to eat a lot of rice and this makes for a great change. I love the peppery flavour of coriander. Use a gluten-free stock to make this recipe suitable to a gluten-free diet (I like to use Massell brand )

Green Coriander Rice image

Steps:

  • Place the capsicum, onion, garlic, coriander and parsley in a food processor. Blend to a fine paste. If you dont have a processor- chop ingredients as finely as possible or use a mortar and pestle. Set aside.
  • In a saucepan, heat the butter and oil. Add the rice and fry gently for 2 to 3 minutes- until the grains become translucent.
  • Quickly stir the herb paste into the rice. Continue to cook over heat for another 2 minutes, stirring constantly.
  • Pour in the boiling stock and season with pepper. Bring to the boil and then reduce the heat to a simmer. Cover and cook 10- 15 minutes, or until the rice is tender and the stock has been absorbed. Watch closely after the 10 minute mark and add some extra water if more liquid is required.
  • Remove from the heat and leave to stand , with the lid covered for a few minutes.
  • Fluff the rice with a fork to seperate the grains and serve garnished with chopped coriander leaves or sprigs.

Steps:

  • Bring 3 quarts water to a boil in a heavy pot.
  • Rinse the rice in several changes of cold water until the water runs clear. Drain well.
  • Add the rinsed rice to the boiling water and cook, uncovered, stirring occasionally, 5 minutes from the time the water returns to a boil.
  • Drain the parboiled rice well and clean and dry the pot.
  • Add the butter to the pot and cook over low heat until melted.
  • Stir in the coriander seeds and pepper.
  • Add the parboiled rice to the pot, making a mound in the center.
  • Use the handle of a cooking utensil to make 5 or 6 holes in the rice, all the way to the bottom of the pot.
  • Lay the lemon zest over the top of the rice.
  • Cover the pot with a kitchen towel and a lid, folding the edges of the towel up over the lid (to keep the towel from burning).
  • Cook rice over low heat, undisturbed, until the rice is tender and a crust has formed on the bottom of the pot, about 30 to 35 minutes.
  • Remove the pot from the heat and let rice stand, tightly covered and undisturbed, for 30 minutes.
  • Spoon the loose rice onto a serving platter and garnish with the lemon zest.
  • Season with salt to taste.
  • Break up the crust and scatter it over the rice. Serve warm.

A quick to prepare rice dish, adapted from a recipe on one the cards in international culinary celebrity Kurma Dasa's 52 card set 'Quick Vegetarian recipes you can prepare in a hurry'. It is important to use pans with tight-fitting lids for this recipe. If you are not overly fond of peas or spinach, substitute them with a vegetable you prefer. But the green of the vegetables in this dish does contrast most attractively with the yellowish rice and the cashews.

Basmati Rice With Cashews, Peas and Fresh Coriander image

Steps:

  • In a small pan over a medium heat, bring the water to the boil; add the salt and turmeric; reduce to a simmer and cover tightly.
  • In a larger - preferably heavy-based - pan, over a medium heat, heat the ghee or oil; add the yellow asafetida powder and chopped onion and stir to combine for 1-2 minutes, add the rice and sauté for about 2 minutes, or until the rice becomes whitish in colour.
  • Carefully pour the simmering water into the pan containing the rice, stir briefly, and if the peas you are using are fresh, add them now; increase the heat so that the water is again boiling, then reduce to a very low heat and cover the pan with a tight-fitting lid.
  • Simmer the rice for 15-20 minutes or until the water has been absorbed by the rice and the rice is tender and flaky; if you are using frozen peas, add them 5 minutes before the end of this stage of the cooking; stir through the rice quickly, and replace the lid as soon as you can.
  • Remove the pan from the heat and leave it covered and undisturbed for 5 minutes to allow the grains to firm up.
  • Fold in the cashews, chopped baby spinach leaves and chopped coriander leaves, and stir well to combine the ingredients.
  • Serve hot, garnished with the remaining herbs.
  • NOTES: (i) I have suggested adding the chopped baby spinach leaves in step six, as baby spinach leaves wilt very quickly once they come into contact with something like hot rice. If you would like your spinach leaves not just wilted but cooked, add them when adding the frozen peas towards the end of the cooking time in step four. (ii) The Zaar Kitchen Dictionary suggests that either garlic powder or onion powder are suitable substitutions for yellow asafetida powder.
