TERIYAKI MARINADE AND SAUCE
I looked long and hard for a good-flavored teriyaki marinade recipe that could double as a sauce. Found a few and modified to this.

Steps:
- Stir soy sauce, honey, rice vinegar, sesame oil, brown sugar, sesame seeds, garlic, and ginger together in a small saucepan over medium-high heat.
- Whisk cornstarch into water in a bowl; add to soy sauce mixture. Cook sauce, stirring regularly, at a simmer until thickened, 5 to 7 minutes.

- In a medium bowl, mix the soy sauce, water, sugar, Worcestershire sauce, vinegar, oil, onions, garlic powder, and ginger. Stir together until sugar dissolves. Voila - marinade!

TERIYAKI MARINADE
Teriyaki marinade. I usually use it for shish kabobs, also makes good stir fry. I tend to go light on the honey and heavy on the garlic.

Steps:
- Combine everything that's not meat. Mix well.
- Add meat. If whole poke holes with fork so the teriyaki penetrates. I think the best flavor is from chunks.
- Let stand 24 hours in fridge. Sometimes I let it go longer. The longer the better as long as it doesn't start decaying.

PETE'S TERIYAKI MARINADE
Our good friend Pete was a chef at a local steak house for many years, and this an excellent marinade he created to use on shish kebabs. Pete passed away several years ago, but everytime we make kebabs, we use this marinade and remember our dear friend. This would also be good with steaks or thick-cut pork chops.

- Mix all ingredients.
- Marinate meat several hours or overnight.
- Baste with marinade while cooking.
- Strain remaining marinade, heat to boiling and use as gravy over rice.
- You may use 1 tablespoon dried, ground ginger in place of fresh.
