PHIL & DEB'S CANADIAN DIRTY RICE
An American in Canada told me how much he missed the dirty rice he used to have at home. This is something we slapped together from about 10 different recipes we found on the web.

Steps:
- Spray a large non-stick pan with vegetable oil spray.
- Brown crumbled sausages in pan along with diced onion, bell peppers, and garlic.
- Drain fat and season with cayenne pepper, red pepper flakes and garlic powder.
- Add water and simmer for about 20- 30 minutes, until the vegetables are cooked down.
- Add Worcestershire sauce and Franks Hot Sauce (Tabasco).
- Simmer for 15 minutes.
- Add cooked rice, stir gently, until all rice is moistened.
- Top with green onion and parsley, stir lightly and serve.
DIRTY RICE
This is a cajun classic. Dirty rice is basically a rice pilaf that is called dirty because it's cooked with minced chicken livers or gizzards. Don't run away now! The rice doesn't taste like liver, it just deepens the flavor of the rice and the crispy bits are so small you won't really notice them. You have a choice of using green bell peppers or jalapenos, depending on your heat tolerance. Enjoy!

Steps:
- Cook the rice according to the package instructions, but use chicken broth for one third of the cooking liquid. So, for example, if the package says to use 3 cups of water for 1 1/2 cups of rice, use 2 cups of water and 1 cup of chicken broth. Once the rice has finished cooking, remove from heat and let sit for 5 minutes. Turn the rice out onto a sheet pan and drizzle 1 tablespoon of olive oil over it. Mix to combine and let cool.
- While the rice is cooking, mash and finely chop the chicken livers, or purée briefly in a blender. In a large pan that can eventually hold the rice plus everything else, put 1 tablespoon of oil plus the bacon in and cook over medium-low heat until the bacon is crispy.
- Add the ground pork and increase the heat to high. Allow the meat to brown before stirring. As soon as the pork starts to brown, add the final tablespoon of oil and add the celery, jalapeños, and onions. Brown them all over medium-high heat. You may notice the bottom of the pan getting crusty. Keep it from burning by lowering the heat if needed. Add the minced liver and cook for a few minutes more.
- Add the remaining cup of chicken broth and deglaze the pan by scraping the bottom of the pan with a wooden spoon. Add the Cajun seasoning and turn the heat to high. Boil away most of the chicken stock and then add the cooked rice. Toss to combine.
- Turn off the heat and add the green onions. Toss once more to combine and serve hot.

SMOKED SAUSAGE AND OKRA DIRTY RICE
This Louisiana dish does not include giblets, but incorporates all of the other standard ingredients including okra and sausage.

Steps:
- Bring 4 cups water to a boil in a 4-qt. heavy saucepan. Add rice and 1/2 teaspoons salt and cook, covered, over low heat until water is absorbed and rice is tender, about 20 minutes. Remove from heat and let stand, covered for 10 minutes, then fluff rice with a fork and keep covered.
- Meanwhile, heat 1 tablespoons oil in a 10-12 inch heavy skillet, preferably cast-iron, over moderately high heat until hot, but not smoking. Add sausage, in two batches, and cook stirring occasionally, until browned, 2-3 minutes per batch; transfer with a slotted spoon to a bowl. Add okra to skillet and cook, stirring occasionally, until browned, 2-3 minutes. Transfer to another bowl.
- Heat remaining tablespoons of oil in skillet over moderately high heat until hot, but not smoking. Add onions and bell peppers and cook, stirring occasionally, until softened and browned, about 5 minutes. Add garlic and cook, stirring, for 1 minute. Add okra, stock, remaining 1/4 cup water, 1 teaspoons salt, and pepper, bring to a simmer, and simmer, uncovered, stirring occasionally until liquid is slightly thickened and reduced to just below surface of solids, 10-12 minutes.
- Stir in sausage and toss with rice , scallions, and salt and pepper to taste.

MIMI'S DIRTY RICE
This dirty rice recipe came from my mom in 1996, and I don't have any idea where she got it. It can be adjusted for your tastes -- more or less of the "7 seasonings" to make it hotter. I usually make it and put it in stuffed peppers, but it could be a stand alone dish or side. We love it!

Steps:
- Combine first 7 seasonings and set aside.
- Over medium heat, place ground meat and bay leaves in skillet with oil. Brown meat thoroughly. Drain excess grease.
- Stir 7 seasonings into meat. Add onions, celery, peppers, and garlic, stirring well.
- Add butter and reduce heat to medium; cook 10 minutes, stirring constantly.
- Add chicken or beef broth; cook 8 minutes over high heat, stirring once.
- Add minute rice and cover. Reduce heat to low and cook for 5 to 10 minutes. Remove from heat. Let stand 10 minutes before serving.

I got this recipe from a former coworker, whose father, a professional cook, made this for every family get-together and holiday. When he passed away, she took on the responsibility for providing this tasty treat for her family.

Steps:
- Pinch all the ingredients together, with your fingers, in a large casserole dish.
- Spread it all out into an even layer and bake, covered with foil, in a 350°F oven for 30 minutes.
- After 30 minutes, remove the dish from the oven and stir/smoosh (breaking up the pieces of sausage and beef into itty-bitty tiny bits) and add a little more water if it looks dry.
- Bake, uncovered, for an additional 30 minutes.

DELICIOUS DIRTY RICE
Found on an advertising flyer, nutritious and full of flavour and texture. Prep time does not allow for the bean preparation, although if you substitute canned beans, then the time stated is the time it will take!

- Beans : Soak for 2 - 4 hours.
- To cook, drain the soaking water and add cold water, 1 part beans to 2 or 3 parts cold water. Bring to a boil, then reduce heat to a very slow simmer, so the beans stay in their jackets. Simmer for 2 hours.
- Lightly toast pine nuts.
- In a heavy saucepan, heat 1 tablespoon of the olive oil over medium heat.
- Add the garlic and the chopped onions; saute for 5 minutes, stirring frequently.
- Mix in the bell pepper, chili powder, chili flakes, cumin, and cinnamon.
- Saute for 2 minutes.
- Pour the rice into the saucepan and stir to coat.
- Add the water and 1 teaspoon salt, and bring the rice to a boil over high heat.
- Cover the pan and turn the heat to low.
- Simmer the rice for 25 minutes.
- When the rice is cooked, mix in tomatoes, corn, black beans, and pine nuts.
- Stir in salt, pepper and lime juice.
- When the mixture is heated through, spoon it onto plates and top with the sliced red onion and cilantro.
- Serve a wedge or two of lime with each plate to squeeze over the rice.

BAYOU DIRTY RICE
An easier knockoff recipe for Dirty Rice. Just as good! I advise not to substitute regular rice for the converted; it doesn't come out as pretty...and no Cajun I ever knew uses brown rice.

Steps:
- In large saucepan, saute bacon over medium heat until slightly crisp (about 10 minutes). Remove bacon from pan, place on paper towels. Drain off fat.
- Add to the saucepan, ground beef; saute over medium heat, breaking beef up into small pieces. Stir in onion, bell peppers, celery and garlic, sauteing until beef is no longer pink (3-5 minutes). Stir in cumin, salt, oregano, black and cayenne peppers; cook 1 minute.
- Stir in rice; cook 2 minutes. Stir in broth and bring to a boil; reduce heat, simmer, covered, until rice is tender and liquid is absorbed (25-30 minutes), stirring occasionally. Stir in parsley and bacon. Serve immediately.
