CLASSIC POTATO SALAD

Classic Potato Salad image

Steps:

  • Boil, peel and cube 2 pounds russet potatoes; toss with 2 tablespoons cider vinegar and 1/2 teaspoon salt. Mix 2 cups mayonnaise, 2 chopped scallions, 1 chopped celery stalk, 1 tablespoon each dijon mustard and vinegar, 1 teaspoon sugar, and salt. Toss with the potatoes.

PHYLL'S POTATO SALAD

This is the recipe my sister always uses and I ask her to make it whenever I have a family gathering. The potatoes are always cooked just right and the lemon juice adds a surprising and unexpected flavor that brightens the whole salad. I warn you, though ..... once you taste it you'll never want another potato salad again. It's absolutely delicious!!!

Phyll's Potato Salad image

Steps:

  • Place the potatoes (all equal size) in a large pot. Add cold water to cover. Place over medium high heat and bring to a boil. Reduce heat. Cover and simmer for 10-15 minutes or until potatoes are cooked (but NOT soft!) depending on size of potatoes. Drain and cool until easy to handle.
  • Meanwhile, in a medium size bowl, combine the chopped onion, lemon juice, salt, pepper and dry mustard. Set aside.
  • If desired, peel potatoes while still hot. Cut into bite size pieces and place in a large bowl. Pour lemon juice mixture over potatoes while still hot. Gently toss to coat all pieces. Cool for one (1) hour.
  • Add the chopped celery and hard cooked eggs to the potatoes. Add the mayonnaise and toss gently to coat all pieces. Garnish with a dusting of smoked paprika, if desired.

At least 20 years ago, Phyllis Diller contributed this recipe to a community cookbook. My daughter went wild for it - she was a pre-teen at the time. Although I prefer the more traditional type of potato salad. this is tasty, too!

Steps:

  • Mix lemon juice, sugar and mayonnaise. Pour the mixture over the potatoes; then add onions, and salt to taste. Chill.

1/4 cup(s) lemon juice
1 teaspoon(s) sugar
1 cup(s) mayonnaise (you know it has to be best foods/hellmans)
4 large boiled potatoes, sliced thin
1- 2 - white onions, diced fine
- salt, to taste

CLASSIC POTATO SALAD

The recipe for this Southern classic came from the chef Millie Peartree's mother, Millie Bell. The sweet relish melds with the creamy potatoes for a deep, balanced flavor. Onion powder adds savory notes without the texture of diced onion, which could overpower the dish. Make sure that your eggs are rinsed thoroughly, so no pieces of shell remain, and that your potatoes are uniformly cut in roughly 1-inch cubes so they all finish cooking at the same time. (Millie Bell used her thumb as a measure.) And, most important of all, don't overcook the potatoes: You want potato salad, not mashed potatoes.

Steps:

  • Set the potatoes in a large pot; add 1 tablespoon salt and cover with cold water by 1 inch. Set over high heat and cook just until fork-tender, about 15 to 20 minutes. (You still want the potatoes to still have some shape to avoid turning the dish into mashed potatoes.) Drain potatoes, and set them aside to cool.
  • As potatoes cool, make the dressing: To a large bowl, add mayonnaise, relish, mustard and granulated onion; whisk to combine.
  • Add the potatoes to the dressing, along with the diced hard-boiled eggs, and celery, if using; stir gently to combine. Taste and season with salt and black pepper as needed.
  • Chill for at least 2 hours, and up to overnight. Serve cold. Finish with a sprinkle of paprika. Potato salad will keep for 4 days in an airtight container.

3 pounds russet, Yukon Gold or Idaho potatoes, peeled and cut into 1-inch cubes

This is potato salad the old-fashioned way, with eggs, celery and relish. It's really good to serve with chili.

Old Fashioned Potato Salad image

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel and chop.
  • Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • In a large bowl, combine the potatoes, eggs, celery, onion, relish, garlic salt, celery salt, mustard, pepper and mayonnaise. Mix together well and refrigerate until chilled.
