PORK CHOPS WITH MUSHROOMS AND ONIONS
The classic pork chop with mushroom gravy but without using canned soup. Serve with rice or potatoes.

- Trim fat off pork chops and season generously with seasoning salt.
- Heat oil in a large skillet over medium heat. Add pork chops and cook until browned, 3 to 4 minutes per side. Transfer pork chops to a plate.
- Pour chicken broth into the skillet and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Add mushrooms, onion, and butter; simmer for 5 minutes. Transfer 2 tablespoons of sauce to a small bowl.
- Add flour to the sauce in the bowl and mix with a fork until no lumps remain. Pour slurry back into the skillet and stir until combined with the sauce.
- Return pork chops to the skillet. Cover and simmer for 15 minutes. Remove lid and continue cooking until gravy has reached desired thickness and pork chops are no longer pink in the center. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). For a thicker gravy, mix in more flour.

PIG 'N' SHROOMS (PORK MEDALLIONS WITH MUSHROOM SAUCE)
Bird poop might be the only thing on earth that a cup of heavy cream doesn't improve upon................what? This is another of my husband's dishes and I'm ticked at him right now, thus the recipe description. It's really quite good, in spite of my childishness. I mean REALLY good. Dang him!

- Clean up the pork tenderloin as much as possible, removing membranes and fat. Slice into 1 1/2-inch thick slices and slice these almost in half, butterflying them. You should have about 5 steaks.
- Fry the sliced mushrooms in 1/2 tbsp olive oil until they're dark and crisp. (Place in single layer and don't stir for first 2 minutes.) Set aside, but do not clean the pan.
- Mix the sliced onions with the minced garlic. Sprinkle some salt and pepper on the pork steaks, then fry them in the mushroom pan in 1/2 tbsp of olive oil and 1 tbsp of butter on high heat, about 4 minutes per side, until they're nicely browned.
- Move to a plate; cover with foil.
- Add another 1/2 tbsp of butter to the pan and fry the onions and garlic briefly on high heat until they start to brown.
- Then add the cream to deglaze, and add the mushrooms and rosemary. Let the sauce reduce on high heat until it's very thick. Add juice from the pork steaks towards the end, stir, then add the pork to the pan to heat. Eat while on the treadmill.

- Heat the oil in a large non-stick frying pan and fry the pork on each side for 2-3 mins until golden brown. Set aside on a plate.
- Melt the butter in the pan and, when foaming, fry the shallots and mushrooms over a medium heat for 10 mins. Add the garlic and cook for another 1 min. Stir through the flour and cook for another 2 mins. Whisk through the madeira and boil for 2 mins. Gradually stir through the stock until the sauce is lump free. Add the thyme and mustard and season to taste.
- Return the pork to the pan and simmer uncovered for 5-7 mins or until the pork is cooked through. Stir through the cream and heat again until simmering. Serve with creamy mashed potatoes and wilted greens.

- Slice Pork Loin diagonally into 1/2" medallions.
- Salt and Pepper each side of medallions.
- In a large skillet melt butter and add olive oil heat to medium high heat.
- Place medallions in butter/oil and brown each side until a light crust forms (about 3 minutes each side).
- Remove pork and set aside.
- Add Stock to skillet scraping bottom of pan, bring to rolling boil.
- Add Mushrooms, garlic and vinegar, basil, salt and pepper to stock.
- Stir occasionally and reduce by 1/2.
- Add medallions (and any juices from them) to the skillet and combine well.
- Lower heat to medium low and let simmer about 10 minutes.

- Trim the tenderloins of silverskin and any excess fat. Cut the tenderloins into medallions about 1 1/2-inches thick. Place medallions with the cut side up and press down with the palm of your hand to flatten slightly. Season the meat with salt and pepper.
- Heat 3 Tbsp. oil and 1 Tbsp. of the butter in a large skillet over high heat , somewhere between medium-high and high. You want a really hot pan, but not so hot that it will scorch. When the butter is melted and foaming, add the meat and sear until browned, 2 to 3 minutes. Don't over-crowd the pan. Do in two batches, if necessary. Flip and cook the other side until the meat is well browned and slightly firm to the touch, about another 2 min. Transfer pork to a plate.
- Melt the remaining 2 Tbsp. butter in the pan. Add the shallots and a pinch of salt and cook, stirring for about 30 seconds, using a wooden spoon to scrape up any browned bits from the bottom of the pan. Add the mushrooms and cook until all of the mushroom liquid has evaporated and the mushrooms are golden, about 3 minutes. Sprinkle with the flour and add the Marsala. Allow the Marsala to boil until almost completely evaporated.
- Once the Marsala has almost completely evaporated, add the chicken broth and cook until the mixture is reduced by half, about 3 minutes. Stir in the cream and parsley. Return the pork and any accumulated juices to the pan, and cook, flipping the pork once, until it’s firm to the touch and still a little pink in the middle (cut into a piece to check), 2 to 4 min. Taste for salt and pepper and serve. Serve garnished with additional parsley.

- Cut each pork tenderloin into 8 thick rounds to create 16 medallions, each piece about 1 – 1 ½” thick. Season both sides lightly with some of the salt and pepper.
- Heat 1 tablespoon of the oil in a large 12” skillet over medium-high heat. Once heated add 1 tablespoon of the butter and heat until the butter is melted. Add half of the medallions and sear until the bottoms are browned. Flip them over and sear the other sides, they do not have to be cooked through. Remove medallions to a plate, tent with foil, and repeat process with the remaining medallions, adding a little more oil and butter as needed.
- Add the remaining olive oil and butter to the skillet, let the butter melt. Add the shallots and sauté while stirring, until tender, about 2 minutes. Add the mushrooms and sauté the mushrooms, stirring occasionally, until browned, about 3 minutes. Stir in the thyme.
- Sprinkle with flour and stir to combine until some of the flour has cooked out. Add the wine and cook until most of the wine has evaporated and all the brown bits are picked up. Add the broth and stir to combine.

- Remove the silver skin from the pork tenderloin with a sharp knife. Slice into 1.5 - 2 inch disks. Flatten slightly with the palm of your hand. Season with salt and pepper.

Whisk the flour and all pork seasoning together in a shallow dish. Dredge each medallion in the mixture, shake off any excess, then transfer to a dry surface.
- Cook pork: Melt the 2 tablespoons butter in 2 tablespoons olive oil in a large skillet over medium-high heat. Once hot, add HALF of the pork medallions in a single layer and cook for approximately 3 minutes per side. Pork is cooked through when internal temperature registers at 145˚F. Cooking time will also depend on the thickness of the medallions. Transfer pork to a plate, tent with foil and repeat with remaining pork.
- Caramelize mushrooms: Melt 2 tablespoons butter with 1 tablespoon olive oil over medium heat. Increase temperature to medium-high and add half of the mushrooms. Give them a stir to evenly coat in the butter then arrange mushrooms in a single layer. Cook mushrooms for 3 minutes per side or until golden. Once evenly browned, season mushrooms lightly with freshly cracked salt and pepper and give them a stir. Remove mushrooms from skillet and repeat with remaining mushrooms; transfer all mushrooms to a plate.
- Gravy: To the now empty skillet, melt 2 tablespoons butter. Add shallot and sauté over medium-high heat for 2-3 minutes to soften. Reduce heat to medium, add garlic and red pepper flakes and sauté for 30 seconds. Add flour and cook for 1 minute, scraping up the browned bits on the bottom of the pan. Reduce heat to low and slowly whisk in beef broth. Add soy sauce, Worcestershire, Dijon, beef bouillon, and all seasonings. Bring to a simmer until thickened.
