Steps:

  • Place the gammon joint in a large pot and add the onions and pineapple juice. Bring to a boil over high heat.
  • Once boiling, reduce the heat to medium, cover, and simmer for 70 minutes. (Gammon joints need to cook for 40 minutes per kilo (2 ¼ lbs), so if you are using a smaller or large gammon joint, adjust the cooking time accordingly.)
  • Once cooked, carefully remove the gammon joint from the pan and place on a baking sheet to cool slightly.
  • Preheat the oven to 375°F (190°C).
  • Make the glaze: in a small pan over a medium heat, combine the Dijon mustard, pineapple juice, and maple syrup and bring to a boil. Cook for 10 minutes, or until slightly reduced and glossy.
  • Carefully remove the skin from the gammon joint, using a small paring knife to help ease the fat away from the skin. Be sure to leave a small layer of fat on top of the gammon.
  • Score the fat in a diamond pattern and push a clove into each cross section.
  • Liberally brush the gammon joint with the glaze, making sure to reserve at least half of the glaze.
  • Roast the gammon joint for 40 minutes, glazing again halfway through.
  • Carve and serve.

Classic Pineapple-Apricot Glazed Ham image

Steps:

  • For the ham: Remove the ham from the refrigerator and bring to room temperature, about 30 minutes. Preheat the oven to 325 degrees F.
  • Trim off any skin from the ham. Use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat. Insert the cloves into the ham, placing them at the intersections of the cuts (you may have some cloves left over).
  • Put the ham, flat-side down, on a rack in a roasting pan. Pour 1/4 inch water into the bottom of the pan. Transfer to the oven and roast until a thermometer inserted into the thickest part of the ham registers 130 degrees F, about 2 hours and 30 minutes (about 15 minutes per pound).
  • Meanwhile make the glaze: Squeeze the lime juice into a small saucepan. Add the ginger and pineapple juice. Bring to a boil, reduce the heat and simmer until reduced to 1/2 cup, 8 to 10 minutes. Strain, then stir in the lime zest, apricot preserves and Dijon.
  • Increase the oven temperature to 425 degrees F. Pour half the pineapple glaze over the ham and brush to coat. If the water in the bottom of the pan has evaporated, add more. Return the ham to the oven and roast, basting every 10 minutes with the remaining glaze, until glossy and well browned, about 45 minutes more.
  • Let the ham rest for 15 minutes before carving. Carve the ham into slices and serve.

Steps:

  • Put the gammon in a large pan and cover with water. Bring to the boil and skim any foam from the surface, then reduce to a simmer, cover and cook for 2 hrs. Leave to cool in the liquid in the pan for 30 mins.
  • Meanwhile, make the glaze. Tip all the ingredients into a pan and bring to the boil. Reduce to a simmer and bubble for 10-12 mins, or until just syrupy. Drain the gammon (you can reserve the liquid for stock). The gammon and glaze can be prepared and chilled up to one day ahead.
  • Heat the oven to 200C/180C fan/gas 6. Sit the gammon on a board and, using a sharp knife, cut away the skin, making sure you leave a good layer of fat. Score lines all over the fat. Transfer to a roasting tin and roast for 10 mins, then pour over some glaze. Continue to roast, basting with more glaze every 5-10 mins, until the gammon is sticky, about 40 mins. Don't worry if the ends get a little dark, as this adds flavour.
  • Remove from the oven and rest for 15 mins. Carve and serve.

  • Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Using a sharp knife, score surface of ham with 1/4-in.-deep cuts in a diamond pattern; insert a clove in each diamond.   • Before baking ham, place pineapple slices on ham with toothpicks and place cherries in center of pineapple.

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Place the ham, cut side down, into a roasting pan.
  • Cut the skin off the pineapple with a sharp knife and cut out any brown spots of skin left behind. Slice the pineapple into 1/2-inch slices and cut the cores out of the slices. Pin the slices onto the ham with toothpicks.
  • Bake ham in the preheated oven until a meat thermometer inserted into the thickest part of the ham reads 140 degrees F (60 degrees C), 1 1/2 to 2 hours.
  • While the ham is baking, mix the pineapple juice and brown sugar in a microwave-safe ceramic or glass bowl and microwave on medium power until the glaze is boiling and slightly thickened. Work carefully because the glaze will be sticky and very hot.

  • First, make the salsa. Mix together all of the ingredients (use 1⁄2 a chilli for a milder flavour, all of it for a pungent one). Set aside while you cook the gammon.
  • Heat the grill for 3 mins. Use a thin-bladed knife to slice the gammon into 2 steaks, then snip the rind every 2-3cm. Lightly brush with oil. Grill for about 3 mins each side until just firm, then brush over the honey on one side and cook for 1 min more. Remove and leave to stand for 2-3 mins.
  • Serve the gammon with the salsa spooned over the top. Good with a chicory salad or green beans and chunky-cut chips.

  • Fill a large pan or stockpot with cold water, add the gammon and set over a high heat. Bring to the boil, then drain and rinse off the gammon (this removes some of the saltiness).
  • Rinse the pan out, then return the gammon to it. Add 500ml of the pineapple juice, then top up with water to cover the gammon completely. Add 2 of the star anise, then put the pan back over a high heat. Bring to a gentle simmer, then cook for 1-1½ hours until a digital thermometer pushed into the middle of the joint reads 65-70°C, or a skewer pushed into the centre feels piping hot when the tip is pressed to the back of your wrist. Remove the ham to a board and leave until cool enough to handle.
  • Meanwhile, put the remaining pineapple juice and star anise in a heavy-based pan with the sugar. Heat gently to melt the sugar, then bring the liquid up to a rapid boil and reduce for 8-10 minutes to form a thick, sticky glaze. Take off the heat and add the chillies, then transfer to a bowl. Heat the oven to 220°C/200°C fan/gas 7.
  • Use a sharp knife to peel the skin off the ham, leaving on as much of the fat as possible. Score the fat diagonally in two directions to create diamond shapes, then thickly brush over the glaze. Reserve any leftover glaze for drizzling over.

  • Put the gammon in a large pan of water and bring to the boil. Once it bubbles, discard the water and put the gammon back in the pan. Pour in the pineapple juice and cider vinegar, add the cinnamon stick, peppercorns and bay leaves, then pour over fresh cold water to cover. Bring back to the boil, reduce to a simmer and cook for 2¼ hours. Keep an eye on it and top up the water if it looks like it’s getting too low.
  • When the gammon is almost ready, heat the oven to 220°C/200°C fan/gas 7. Mix together the ground coriander and brown sugar. Cut the pineapple into quarters, then cut each piece in half to make 8 thin wedges (leave all the leaves in place if you like). Score the remaining fat in a diamond pattern and spread with the mustard to evenly coat. Sprinkle over the sugar mixture and pierce the intersections of the diamonds with the cloves.
  • Put the gammon in a large roasting tin and nestle the wedges of pineapple around the joint so the leaves are poking upwards (if still on). Pour in just enough water to cover the base of the tin and drizzle the pineapple with a little olive oil. Transfer to the oven and roast for 20-25 minutes, basting the fruit with the juices in the pan once or twice until everything is caramelised and golden. Serve with fried eggs, if you like, and chips on the side.

Transfer to a wire rack set inside a large rimmed baking sheet and bake until an instant-read thermometer inserted into the thickest part of ham registers 115°, 3–3½ hours for boneless, 3½–4 hours for bone-in.
  • Meanwhile, bring pineapple juice, vinegar, brown sugar, and hot sauce to a boil in a large saucepan. Reduce heat; simmer, swirling occasionally, until thick enough to coat a spoon. Keep warm.
  • Remove ham from oven and increase oven temperature to 425°. Unwrap ham, peeling back the foil so it covers the baking sheet (this will make for easy cleanup). Once oven is at 425°, baste ham with warm glaze and return to oven. Bake, brushing with more glaze every 3 minutes or so, until glaze is deeply browned and thermometer registers 125°, 12–15 minutes. Carefully transfer ham to a cutting board and let rest 30–60 minutes before slicing.
  • While ham is resting, roast fruit, spooning juices over from time to time, until deeply browned, 20–25 minutes.
