Grandma made bread pudding 2 ways, plain cinnamon or pineapple. I liked this pineapple version best. Picture is free clip art.

- 1. Preheat oven to 350 degrees. In a large bowl, beat eggs well. Stir in honey and pineapple. Then stir in melted butter. Add bread and mix until well coated. Butter a 2 quart baking dish. Pour mixture into baking dish and spread evenly. Bake uncovered for one hour, until top is lightly browned. Serve warm or cold with whipped cream.
PINEAPPLE BREAD PUDDING
This is our family recipe (Grandma Mel's) side dish for Easter dinner, served alongside ham and green beans. It is very sweet and great for a holiday meal accompaniment.

Steps:
- Grease a 2-quart casserole dish.
- Spread bread cubes in the bottom of the prepared casserole dish. Pour butter over bread cubes and top with pineapple.
- Beat eggs and sugar together in a bowl until foamy; pour over bread mixture. Cover dish with aluminum foil and refrigerate, about 3 hours.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake in the preheated oven for 30 minutes. Remove aluminum foil and bake until browned, 5 to 20 minutes.

PINEAPPLE BREAD PUDDING

- Preheat the oven to 350 degrees F. Butter a 1.5-quart casserole dish.
- In a large bowl with an electric mixer, cream together the butter and sugar until light and fluffy, about 3 minutes. Then add the eggs one at a time, incorporating fully between each addition. With the mixer on low, beat in the pineapple just until incorporated. With a rubber spatula, fold in the bread. Pour it into the prepared dish.
- Bake in the oven until golden brown and set, 50 to 60 minutes.

- Place bread on a baking sheet. Bake at 375° for 4 minutes; turn over and bake 4 minutes longer or until very light brown. Cut toasted bread into 1-in. cubes. Toss with melted butter; set aside., In a bowl, beat eggs until thick and lemon-colored. Add the pineapple, currants, sugar and vanilla; mix well. - Beat cream cheese and brown sugar with a stand mixer fitted with a paddle attachment on medium speed until smooth and creamy, about 1 minute. Beat in vanilla and salt until incorporated, about 15 seconds. Add eggs 1 at a time, beating until incorporated, about 45 seconds. Gradually add milk and cream, beating on low speed until incorporated, about 15 seconds.
- Generously grease a 13- x 9-inch baking dish with butter. Arrange half of the torn dinner rolls in dish. Sprinkle evenly with 1 cup pineapple tidbits; cover with remaining torn rolls. Sprinkle with remaining 1 cup pineapple tidbits. Slowly pour cream cheese mixture evenly over pineapple-roll mixture. Cover with plastic wrap; refrigerate overnight (or 8 hours).
- Stir together pineapple juice and 1 1/2 cups of the granulated sugar in a medium saucepan; bring to a boil over high, stirring to dissolve sugar. Boil, stirring occasionally, until mixture thickens slightly and turns a light golden-amber color, about 15 minutes. Remove from heat; stir in butter cubes until melted and incorporated. If using, stir in rum. Let mixture cool to room temperature, about 45 minutes. Store in an airtight container in refrigerator until ready to use or up to 3 days.
- Preheat oven to 350°F. Remove baking dish from refrigerator; remove and discard plastic wrap. Sprinkle casserole evenly with remaining 2 tablespoons granulated sugar. Bake in preheated oven until set in the middle, about 1 hour, rotating baking dish 180 degrees after 30 minutes and, if needed, tenting with aluminum foil after 40 minutes to prevent overbrowning. Remove from oven.
