Curry Pineapple Dip image

Steps:

Cut pineapple in half vertically, leaving the top attached. Remove fruit from 1 half, leaving a 3/4-in. shell. Remove fruit and discard outer peel from remaining half; cut pineapple into bite-sized pieces. Set aside., In a small bowl, beat the cream cheese, chutney, curry and mustard until smooth. Spoon into pineapple shell and top with almonds. Serve immediately or refrigerate for up to 4 hours (remove from the refrigerator 30 minutes before serving). Serve with cut pineapple and, if desired, crackers.

This is one of my "back pocket" recipes for a quick and tasty party dip. I've had people ask me if it is chicken salad, because the pineapple adds a texture that is similar to shredded chicken, and the savory ingredients mask the pineapple flavor. It's perfect for a little bite before a meal or a satisfying afternoon snack on your favorite crackers. If you like, you can sneak in some vegetables, and serve it on celery sticks, or those little tri-color mini bell peppers, cut in half.

Savory Cream Cheese and Pineapple Party Dip image

Steps:

Combine cream cheese, crushed pineapple, pecans. bell pepper, most of the green onion, and salt in a bowl, reserving some of the green onion tops for garnish.
Serve immediately if desired with reserved green onions sprinkled over, or cover with plastic wrap and refrigerate until ready to serve.

1. Beat cream cheese in large bowl with electric mixer until smooth.
2. Drain pineapple and reserve juice.
3. Stir in pinapple and pudding mix to cream cheese. Add pineapple juice until well blended.
4. Chill 30 minutes in refridgerator. Serve with graham crackers.

Pineapple Salsa & Cream Cheese Dip image

Steps:

Soften cream cheese. A good way to soften the cream cheese is to take it out of its wrapper, and microwave 30-40 seconds or until it's soft.
In a large bowl, add the entire jar of salsa, and then add all the softened cream cheese.
Stir very well with a whisk until the salsa and cream cheese are fully blended. Make sure you have stirred away all the big chunks of cream cheese, and the dip is smooth and creamy.
Cover and place in fridge for at least 30 minutes. (You CAN eat it right away, but chilling it for a while blends the flavors, and sets the dip).
