PINEAPPLE UPSIDE-DOWN LIME MOLD
Pineapple rings and cherries decorate the top of this pretty two-tone lime gelatin and cream cheese mold. Serve as a salad or dessert.

Steps:
- Drain pineapple, reserving juice. Add enough cold water to juice to measure 1-1/2 cups; set aside. Arrange 7 pineapple slices in bottom of 9-inch round cake pan sprayed with cooking spray. Place maraschino cherry half, cut-side up, in center of each pineapple slice. Chop remaining pineapple slices; set aside.
- Stir boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Stir in measured pineapple juice and water. Remove 1 cup of the gelatin; set aside at room temperature. Refrigerate remaining gelatin 1-1/2 hours or until thickened (spoon drawn through leaves definite impression). Stir in chopped pineapple. Spoon gelatin over pineapple slices in pan. Refrigerate 30 min. or until set but not firm (should stick to finger when touched and should mound).
- Beat cream cheese in large bowl with wire whisk until creamy. Gradually beat in reserved 1 cup gelatin. Pour over gelatin layer in pan. Refrigerate 4 hours or until firm. Unmold. Store leftover gelatin in refrigerator.

PINEAPPLE AND LIME JELL-O FLUFF
Steps:
- 1. Boil 1 cup water. .
- 2. In a large bowl add lime Jell-O. Pour in boiling water, stirring constantly to dissolve, about 2 minutes
- 3. Add 1/2 cup cold water and pineapple juice.
- 4. Blend in cream cheese. Chill until thickened, but not set, about 1 1/2 hours.
- 5. Fold in pineapple, marshmallows, and nuts.
- 6. Pour into 1 qt. mold (or a small cake pan) and chill until firm, about 2 hours. (Spray with unflavored Pam spray.)
- 7. Unmold by placing mold in warm water for 10 to 15 seconds. Invert mold onto serving platter.

PINEAPPLE LIME GELATIN
This recipe was passed down by my mother. We serve it often, but especially at Christmas and Thanksgiving. Of course, the green color makes it nice for St. Patrick's Day, too. With the marshmallows, pecans and whipped cream, the sweet salad can even be served as a light dessert. I like to cook for both small groups and large crowds. When our entire family gets together for thanks and feasting, it's a wonderful time!

- In a bowl, add 1 cup boiling water to gelatin; stir 2 minutes to completely dissolve. In a small saucepan, combine marshmallows and remaining water; cook over low heat until blended, stirring occasionally. Stir into gelatin. Refrigerate until partially set., In a large bowl, beat cream cheese until smooth. Beat in pineapple. Fold in gelatin mixture, whipped cream, pecans and, if desired, food coloring. Pour into a 6-cup mold coated with cooking spray. Refrigerate, covered, until set. Unmold onto a serving plate.

PINEAPPLE LIME JELL-O MOLD
My mom made this at every holiday celebration. Very nostalgic. Very green. MMM MMM good! (Cook time is fridge time).

- Drain pineapple and reserve liquid.
- Spray Jello mold or bowl with PAM cooking spray.
- Dissolve Jell-o in 2 cups of boiling water, stirring for a few minutes.
- Add enough cold water to the reserved pineapple juice to equal 1.5 cups, and add to Jell-o mixture.
- Whisk in about 8 oz. sour cream (mom used a little less).
- Dump pineapple inches.
- Chill until set.
- If you want to unmold the dish, set bowl into warm water for 30 seconds, and place plate on top of bowl.
- Invert the bowl onto the plate and let the jell-o slide out.
- Enjoy!

PACIFIC LIME MOULD
This is my Grandmother's recipe. I haven't thought about it much over the past few years, but remember always having it in the summer when I was growing up! This "salad" is great for BBQ's, Family Reunions and just because you want some on those warm days!!

- 1. Dissolve Jell-o in 1 cup boiling water. Add reserved juice from crushed pineapple. Chill until slightly thickened.
- 2. Beat until frothy, fold in pineapple, cottage cheese, horse radish. Add mayonnaise or whipping cream (whipped) and chopped walnuts.
- 3. Chill until firm. Double for a large mould.
