PLAICE ROLL-UPS

This fish recipe is so simple as it uses a ready-made sauce, or, take the time to make your own cheese sauce

Steps:

  • Preheat the oven to 180C/gas 4/fan 160C. Tip the spinach into a large hot pan, shake in 1 tbsp water and cook, stirring, for about 1 minute. Squeeze out any liquid. Or, if you have a microwave, pierce both bags of spinach and cook them together on Medium (500W) for 3 minutes, until the spinach is just wilted - it's more convenient but takes a couple of minutes longer.
  • Butter a baking dish and spread the spinach out on the bottom. Lay each plaice fillet out flat on a chopping board, skinned-side up, and season with salt and pepper. Roll each one up like a Swiss roll and arrange on the spinach.
  • Spoon the sauce over the fish and spinach so they are well covered. Scatter over the almonds and bake for 20 minutes, until the fish is cooked and everything is golden and gently bubbling. Serve with boiled potatoes.

A friend gave me this recipe, and whenever I serve these tortilla pinwheel sandwiches, people ask me for the recipe, too! Steps:

  • Beat cream cheese, cheese and sour cream until blended. Stir in olives, green chiles, green onions and seasonings., Spread over tortillas; roll up tightly. Wrap each in plastic, twisting ends to seal; refrigerate several hours., Unwrap. Cut into 1/2- to 3/4-in. slices, using a serrated knife. If desired, serve with salsa.

Cream Cheese Roll-Ups image

Steps:

  • In a medium bowl, mix together the cream cheese, salsa and onions until fully combined. Spread the tortillas with the mixture, leaving a 1/2-inch edge. Top each with bacon and ham, then roll into tight cylinders and wrap in plastic wrap. Refrigerate for at least one hour. Remove from fridge, discard the plastic wrap and cut each roll into 1-inch pieces, discarding the uneven ends (or eating them while preparing, like I did!). Each roll should yield eight pieces. If you like, before cutting, stick toothpicks in the rolls at 1-inch intervals; it makes serving a snap.

4 green onions, finely sliced

10 slices bacon, cut into small pieces and cooked till crisp

  • Mix the cream cheese, ranch dressing mix and the black pepper together thoroughly.
  • Spread the mixture on the tortillas, and then sprinkle over the diced bell peppers and green onions. Roll up tightly, wrap in plastic wrap and refrigerate until party time (for at least 1 hour).
  • Slice into small wheels and serve.
