Plantain Chips and Avocado Aji image

Steps:

  • Place the eggs in a medium saucepan and cover them with water. Bring the water to a boil, cover and turn off the heat. Let the eggs sit for 10 minutes. Cool the eggs completely before peeling and chopping into small cubes; set aside.
  • Place the scallions, tomatoes, cilantro, lime juice, vinegar, 1/4 cup of water and some salt in a large bowl and stir to combine. Add the avocados, eggs and a few dashes of hot sauce and stir gently to combine, being careful not to mash the avocados or eggs too much. Cover with plastic wrap and refrigerate until chilled. Serve within a couple of hours with tortilla chips.

8 scallions, white and light green part only, finely chopped
2 medium tomatoes, cored and finely chopped
1 1/2 cups finely chopped fresh cilantro leaves
1/4 cup fresh lime juice (about 3 limes) plus extra lime wedges for serving

Steps:

  • Stir sesame seeds in dry skillet over medium heat until aromatic and light golden, about 2 minutes. Transfer to small bowl to cool.
  • Whisk next 6 ingredients in large bowl to blend. Add watercress, green onions, and jicama; toss to coat. Gently stir in avocados. DO AHEAD: Can be made 1 hour ahead. Cover; chill.
  • Sprinkle salsa with toasted sesame seeds and serve chilled.

Steps:

  • Combine salsa ingredients in a small bowl. Cover in plastic wrap and refrigerate until ready to use.
  • Carefully remove the peel from the plantains (this is easier if you score the peel with a pairing knife first).
  • Using a mandolin, thinly slice the plantains on the diagonal (the thinner the plantains are, the crunchier they will be).
  • Fill a heavy pot with about 1 inch of oil. Heat on med/ high heat to 360 degrees. Carefully add the plantain slices and fry until crisped.
  • Remove to a paper towel-lined plate. When all of the plantain chips have fried, transfer to a serving plate and serve immediately with the mango salsa.
