1770 HOUSE MEATLOAF

- Preheat the oven to 350 degrees F.
- Heat the olive oil in a large (12-inch) saute pan over medium heat. Add the onion and celery and cook for 5 to 7 minutes, stirring occasionally, until the onion is translucent but not browned. Set aside to cool slightly.
- Place the beef, veal, pork, parsley, thyme, chives, eggs, milk, salt and pepper in a large mixing bowl. Put the panko in a food processor fitted with the steel blade and process until the panko is finely ground.
- Add the onion mixture and the panko to the meat mixture. With clean hands, gently toss the mixture together, making sure it's combined but not compacted.
- Place a piece of parchment paper on a sheet pan. Pat the meat into a flat rectangle and then press the sides in until it forms a cylinder down the middle of the pan (this will ensure no air pockets). Bake for 40 to 50 minutes, until a thermometer inserted in the middle reads 155 degrees F to 160 degrees F. Remove from the oven and allow to rest for 10 minutes. Slice and serve hot with the Garlic Sauce.
- Combine the oil and garlic in a small saucepan and bring to a boil. Lower the heat and simmer for 10 to 15 minutes, until lightly browned. Be careful not to burn the garlic or it will be bitter. Remove the garlic from the oil and set aside. (I save the oil for vinaigrettes.)
- Combine the chicken stock, butter and cooked garlic in a medium saucepan and bring to a boil. Lower the heat and cook at a full boil for 35 to 40 minutes, until slightly thickened. Mash the garlic with a fork, whisk in 1/2 teaspoon salt and 1/4 teaspoon pepper, and taste for seasonings. Spoon the warm sauce over the meatloaf.

A twist on Mom's special. The plum sauce adds a sweet, delicious twist. Great with mashed potatoes and green beans.

- Meatloaf:.
- Preheat the oven to 350 degrees. In a medium skillet, heat the oil over moderately low heat.
- Add the onion, garlic, 1/2 teaspoon of the thyme, salt and pepper. Saute, stirring frequently, about 10 minutes, or until the onion is tender.
- In a large bowl, whisk the eggs, add the ground meat, oats, 1/4 cup ketchup, 1 1/2 tablespoons plum sauce, and remaining thyme. Fold in onion mixture and mix well. If the mixture seems too moist, ad a few more tablespoons of oats to the meat loaf holds together.
- Form the mixture into a loaf pan.
- Topping:.
- In a small bowl combine 1/3 cup ketchup, 1/4 cup plum sauce, and salt and pepper. Using the back of a spoon or pastry brush, "paint" the sauce on top of the meatloaf.
- Bake the meatloaf for 1 hour and 15 minutes, or until it is cooked through. Cool 10 minutes before serving. Slice and enjoy!

- In a large bowl, pour milk over bread crumbs; let stand for 10 minutes. Add the egg, Worcestershire sauce, onion, salt, pepper and cloves. Crumble beef, pork and veal over mixture and mix well (mixture will be soft). Shape into 1-in. balls. , In a large skillet, brown meatballs in oil in batches. Drain on paper towels. Place in a greased 13-in. x 9-in. baking dish. , In a small bowl, dissolve bouillon in water. Stir flour into pan drippings until blended; add the bouillon mixture, jam and chili sauce. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Pour over meatballs. , Cover and bake at 350° for 30-45 minutes or until meat is no longer pink and sauce is bubbly.

- 1 Preheat oven to 180°C. Place chopped carrot and capsicum in a food processor. Blend until very finely chopped.
