POLENTA WITH ITALIAN VEGETABLES

Polenta with Italian Vegetables image

Steps:

  • Beat cornmeal and cold water in 2-quart saucepan with wire whisk. Stir in boiling water and salt. Cook over medium-high heat, stirring constantly, until mixture thickens and boils; reduce heat. Cover and simmer 10 minutes, stirring occasionally. Stir in cheese until smooth; keep polenta warm.
  • Heat oil in 10-inch nonstick skillet over medium-high heat. Cook zucchini, bell pepper, onion and garlic in oil about 5 minutes, stirring occasionally, until vegetables are crisp-tender. Stir in basil and artichoke hearts. Serve vegetable mixture over polenta.

1 cup whole-grain yellow cornmeal
3/4 cup cold water

2/3 cup shredded Swiss cheese
2 teaspoons canola or soybean oil
4 medium zucchini or yellow summer squash, sliced (about 4 cups)
1 medium red bell pepper, chopped (1 cup)
1 small onion, chopped (1/4 cup)
1 clove garlic, finely chopped
1/4 cup chopped fresh or 1 tablespoon dried basil leaves
1 can (about 14 ounces) artichoke hearts, drained

Polenta With Vegetable Tomato Sauce image

Steps:

  • 1. Cut zucchini in half, then cut in half again. Slice in diagonal pieces. Add to a large bowl. Dice plum tomatoes. Add to zucchini to the bowl. Add sliced mushrooms. Add 1/2 the sliced green onions saving 1/2 for topping. Set aside.
  • 2. Remove the wrapper from the polenta tube and slice into 1/4 inch slices.
  • 3. Add your favorite marinara or tomato sauce to a large saucepan, heating to medium, but do not boil.
  • 4. In a large skillet, heat olive oil to medium-high. Add polenta slices to skillet, not overcrowding. Saute on both sides till lightly browned. Set the first batch aside on a warmed plate and place it in 200-degree oven to keep warm.
  • 5. Add all the vegetables to tomato sauce, turn the heat down to medium-low. Stir occasionally. Add salt, pepper, and Italian Seasoning. You want to heat the vegetables, not cook them. Taste for the possible addition of more salt and pepper or Italian seasoning and be sure they are heated through.
  • 6. Finish sauteing the polenta. Remove the heated plate of polenta from the oven and add this batch to it.
  • 7. Depending on how many polenta slices you have, measure out on 4 plates. Top with a large spoonful of vegetable mixture. Top that with the remaining green onions and the chopped cilantro measured out for 4 plates. Sprinkle Parmesan cheese over the plate. We like this with a salad and crusty bread for accompaniment.

1 tube polenta, refrigerated or on shelf with pasta, Italian seasoned
3 medium zucchini
3 plum tomatoes
1 jar(s) your favorite tomato Italian sauce
1 c sliced mushrooms
1 c chopped green onions - divided
3 Tbsp chopped cilantro
1-2 Tbsp olive oil, extra virgin
3 Tbsp Parmesan cheese
1 tsp salt and pepper, or less for your taste
1 Tbsp Italian seasoning

Rustic Vegetable and Polenta Soup image

Steps:

  • In a large heavy saucepan, heat the olive oil over medium-high heat. Add the carrots, onions, 1 tablespoon salt and 1 teaspoon pepper. Cook, stirring frequently, until the onion begins to brown, about 6 minutes.
  • Add the parsley, thyme, garlic, tomatoes and zucchini, and cook for 3 minutes. Add the chicken broth and bring to a boil. Slowly stir in the polenta and cook until the soup thickens and the vegetables are tender, about 8 minutes.
  • Stir in the butter and season with salt and pepper.
  • Ladle into soup bowls and serve.

3 tablespoons extra-virgin olive oil
2 medium carrots, peeled and diced into 1/2-inch pieces
1 medium onion, chopped
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh flat-leaf parsley

  • Combine the peppers, eggplant, tomatoes, zucchini, onion, olive oil and ½ teaspoon salt on a large rimmed baking sheet. Roast until beginning to soften and turn brown, 20-25 minutes. Remove the pan from the oven and stir in the garlic, chili, thyme and balsamic vinegar.
  • Meanwhile, bring 4 cups of water to a boil in a heavy-duty sauce pan or small Dutch oven. Stir in 1 teaspoon salt. Gradually sprinkle the polenta into the pan while whisking at the same time. Turn the heat to a very low simmer, cover and continue to cook the polenta for 25 - 30 minutes, until it's thick, fluffy and begins to pull away from the sides of the pan. Stir occasionally so it doesn’t stick to the bottom of the pan. When it's done remove from the heat and stir in the cheese, butter and additional salt to taste if needed.
  • Serve the warm polenta in bowls with the roasted vegetables and their juices over the top, sprinkle with additional cheese if you like.

  • Bring one gallon water to boil in a large pot with 2 Tbsp. salt. Taste the water to adjust to taste. Whisking constantly, gradually add polenta. Reduce heat to medium-low to a simmer. Stir often until polenta is tender and creamy, 40-45 minutes.
  • Prepare the sauce starting with the béchamel: in a saucepan melt 2 Tbsp. butter with 2 Tbsp. all-purpose flour. Add the milk and fontina and whisk continuously until melted over medium-low heat. Remove from heat, season with salt, pepper and nutmeg. Add the egg yolk and mix. Keep warm over a bain-marie filled with hot water (the sauce may be prepared one day in advance and gently reheated before serving).
  • Clean the onions. Heat 2 Tbsp. butter and 2 Tbsp. sugar in a saucepan over medium-low heat, add the onions and let them caramelize. Season with salt and add 3-4 Tbsp. vinegar. Let it evaporate and add 1 glass water. Reduce the heat to low, cover and cook for 15-18 minutes.
  • Add the chestnuts and cook for another 4-5 minutes, covered; add more water if necessary. Season with pepper and salt.
